GARLIC BREAD TUNA MELTS

Steps:
- Preheat broiler. In a microwave, melt butter with garlic. Place rolls on a baking sheet, cut side up; brush with butter mixture. Broil 2-3 in. from heat until lightly browned, 2-3 minutes., In a small bowl, mix tuna, mayonnaise and 1 teaspoon dill. Layer roll bottoms with tuna mixture and cheese. Broil until cheese is melted, 1-2 minutes longer. Top with tomato; sprinkle with remaining dill. Replace tops; serve immediately.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a mixing bowl, combine sweet onion, drained tuna, mozzarella, and mayonnaise. Mix thoroughly.
- Spread tuna mixture on slices of French bread to form a sandwich. Place sandwiches on a cookie sheet.
- Bake in a preheated oven for 10 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, combine tuna, minced onion, and black pepper. Divide mixture onto 4 halves of English Muffins. Arrange 3 slices jalapenos on each muffin half. Top each with a slice of Cheddar cheese. Place on baking sheet.
- Bake in oven for 10 minutes, or until cheese begins to bubble.

ULTIMATE TUNA MELTS
Steps:
- In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.
TUNA MELT ON FRENCH BREAD
This is a very simple sandwich that I love. My mom would make this for the family for lunch or dinner. All of us kids loved it. It is now one of my fiance's favorite meals that he request for his birthday which is great because it is so easy to make. I hope you will try this and enjoy it as much as I do!

- Preheat oven to 350 degrees. Mix together tuna, mayo, sour cream, and garlic powder. Spread the mixture over the french bread that has been cut in half. Put swiss cheese over tuna (enough to cover) and put the top of the loaf over tuna and cheese. Wrap foil around the sandwich and bake for 30 minutes. Cut into individual sandwiches and enjoy!

Steps:
- Make the tuna mixture: In a medium bowl, break up the tuna using a fork; mix in the red pepper, onion, mayonnaise, olive oil, paprika, a few drops of lemon juice, salt, and pepper; adjust amount of mayonnaise to reach a nice thick consistency.
- Make the sandwiches: lay out 4 slices of bread; top each with ¼ of the cheese; top with the tuna mixture, then with the remaining bread.
- Brush the outside of the sandwiches lightly with olive oil.
- Heat a heavy nonstick skillet over med-high heat; add in sandwiches (do this in batches).
- Weight them down with the bottom of a heavy frying pan, not to press them but to hold the tops on and keep them flat while the cheese melts.
- Decrease heat to medium; cook on the first side until the bread is crisp and golden; then turn over and repeat.
- Lift the weighting pan every so often to check on the cheese-when it melts, you can tell because a little bit will ooze out and when the bread is gold and crisp, remove sandwich from the pan.
- *If the bread is getting too dark before the cheese melts, decrease the heat.
