5 pounds beef sirloin tip roast, cut into 1-inch cubes
1-1/2 teaspoons salt
1/2 teaspoon pepper
3 tablespoons olive oil
2 large sweet onions, chopped
3 medium carrots, sliced
5 tablespoons butter, divided
6 garlic cloves, minced
2 pounds assorted fresh mushrooms, such as portobello, shiitake and/or oyster), sliced
4 large Yukon Gold potatoes, cubed
1 carton (32 ounces) beef broth
1 cup dry red wine or additional beef broth
1 tablespoon minced fresh basil or 1 teaspoon dried basil
3 tablespoons all-purpose flour
1 cup heavy whipping cream
2/3 cup crumbled blue cheese

Steps:

  • Sprinkle beef with salt and pepper. In a stockpot, brown the beef in oil in batches. Remove and keep warm. , In the same pan, saute onions and carrots in 2 tablespoons butter for 4 minutes. Add garlic; cook 2 minutes longer. Stir in mushrooms, potatoes, broth, wine, basil and beef. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 hours. Uncover; simmer 20-30 minutes longer or until beef is tender. , In a small saucepan, melt remaining butter. Stir in flour until smooth; gradually add cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir into stew; heat through. Sprinkle with cheese.

1 1/2 teaspoons salt
3/4 teaspoon freshly ground black pepper
3 portobello mushrooms, stems trimmed
3 tablespoons olive oil
1/2 cup mayonnaise
2 teaspoons fresh lemon juice
1/2 teaspoon minced garlic
4 (4-inch) square or round ciabatta or foccacia squares, halved horizontally
2 cups fresh arugula

Steps:

  • Combine the ground chuck, salt, and pepper in a medium bowl. Shape the mixture into 4 (1/2-inch-thick) patties.
  • Lightly drizzle both sides of the mushrooms with the oil. Sprinkle with salt and pepper.
  • Mix the mayonnaise, lemon juice, and garlic in a small bowl to blend. (The patties, mushrooms, and garlic mayonnaise can be prepared up to this point 1 day ahead. Cover them separately and refrigerate.)
  • Prepare the barbecue (medium-high heat). Grill the burgers until cooked to desired doneness, about 4 minutes per side for medium-rare. Grill the mushrooms until just tender, about 5 minutes per side. Grill the focaccia squares cut side down, until lightly toasted, about 2 minutes.
  • Spread the garlic mayonnaise over the roll bottoms. Cut the mushrooms into strips and arrange the mushroom strips over the mayonnaise. Place the burgers atop the mushrooms. Spread garlic mayonnaise on the cut side of the tops and arrange a handful of arugula on each. Cover the burger with the roll tops and serve.

1 teaspoon salt
2 cloves garlic, finely chopped
8 oz small whole fresh mushrooms
1/2 cup sun-dried tomatoes in oil, drained, chopped
1/2 cup reduced-fat Italian dressing

Steps:

  • Spray 12-inch nonstick skillet with cooking spray. If beef roast comes in netting or is tied, do not remove. Sprinkle beef with salt and garlic. Place beef in skillet; cook over medium-high heat 5 to 6 minutes, turning occasionally, until brown on all sides.
  • Spray 4- to 5-quart slow cooker with cooking spray. Place mushrooms in cooker. Place beef on mushrooms. Spread tomatoes over beef. Pour dressing over mixture in cooker.
  • Cover; cook on Low heat setting 9 to 11 hours.
  • Remove beef from cooker; place on cutting board. Remove netting or strings; slice beef. Serve mushrooms and juices with beef.

1 teaspoon dry steak seasoning, preferably McCormick's Montreal
3/4 teaspoon salt
1/4 teaspoon pepper
10 ounces mushrooms, quartered
1 large red onion, cut into 1-inch-thick wedges (1-1/2 cups)
1 tablespoon olive oil

Steps:

  • Prehet oven to 450 degrees.
  • Cut garlic cloves into thin (about 1/8-inch thick) slices.
  • With small sharp knife, cut 1-inch-deep slit into meat. Do not remove knife. Angle knife slightly to open slit; slide in garlic slice. Repeat, inserting garlic all over beef.
  • Combine steak seasoning, 1/2 t. salt and pepper; rub over beef. Place on rack in roastin gpan; roast 20 minutes.
  • Toss mushrooms and onion with oil and remaining salt; add to pan. Reduce heat to 300 degrees. Roast until thermometer inserted into thickest part registers 140 degrees for medium-rare, 20-30 minutes. Let stand 15 minutes. Serve with vegetables.

1/2 cup fresh parsley leaves
8 garlic cloves
1/4 cup extra virgin olive oil
2 lbs beef tenderloin or 2 lbs sirloin beef, well trimmed, cut into bite sized pieces
coarse salt and pepper
20 large mushroom caps
1 cup dry sherry

Steps:

  • Place parsley and peeled garlic in food processor and chop.
  • Heat a large, heavy skillet over high heat.
  • To the hot skillet, add about 2 tablespoons extra-virgin olive oil.
  • Add meat and sear the pieces on all sides to brown it evenly.
  • Add half of the garlic and parsley mixture to the pan and stir to distribute evenly.
  • Season meat with salt and pepper.
  • Add 1/2 cup sherry and stir to deglaze the pan.
  • Transfer to a serving dish and cover with loose foil to keep warm. Return pan to heat.
  • Repeat the same process with the mushrooms: add extra-virgin olive oil to the pan.
  • Add mushrooms, cook 3 or 4 minutes to char edges and soften, add parsley and garlic, then salt and pepper, then sherry.

3/4 cup dry white wine or nonalcoholic wine

  • In 10-inch skillet, melt 1 tablespoon of the butter over medium-high heat. Sprinkle beef steaks with salt and pepper. Cook beef in butter 6 to 8 minutes, turning once, until deep brown.
