GARAM MASALA DEVILED EGGS
Curried deviled eggs with extra spark for a more authentic Indian flavor. Garam masala is an Indian spice mixture available in many supermarkets and at Indian markets. You can also make your own such as with recipe #82644. This can be made 4 hours ahead. Cover and refrigerate.

Steps:
- Shell eggs, then cut in half lengthwise.
- Transfer yolks to small bowl and mash with fork. Mix in mayonnaise. Stir in next 4 ingredients. Season with salt and pepper.
- Spoon yolk mixture into whites. Top generously with chopped radishes.

This is a quick Garam Masala (Indian spice) mix. Garam Masala is better when made with whole spices that have been roasted and ground, but this is a quick and easy substitute that's pretty good.

Steps:
- Toast the whole spices in a small pan until they are aromatic and have turned a shade or two darker. Don't be tempted to skip this stage, as it really enhances the flavours.
- Tip into a spice grinder (or use a pestle and mortar), then add the ready-ground spices and dried herbs if required, and crush to a fine powder. Store in a sealed jar for up to six months.

- Combine the coriander seeds, cumin seeds, cardamom seeds, peppercorns, fennel seeds, mustard seeds, cloves, and red chile peppers in a small skillet over medium-low heat. Toast until fragrant, about 2 minutes.
- Grind the toasted spices in a clean coffee grinder or spice mill to a fine powder. Spoon in the turmeric, and process to combine. Use immediately, or store in a sealed jar for up to 1 month.

- Peel and cut the boiled eggs in half lengthwise. Remove the yolks and place them in a deep bowl.
- In a small non-stick pan, heat oil and saute onions till translucent and tender. Be careful not to brown them.
- Add in spices and tomatoes and saute for a few minutes till the tomatoes start to pulp and blend well with the spices. Season with salt.
- Once the spice mix is slightly cooled, add it into the bowl with the egg yolks and mix well till smooth.

- Saute the chopped onions in butter until dark brown. Add the minced garlic and cook 2 minutes. Add masala spice and cook 1 minute. Remove from heat and puree in a food processor.
- Hard boil eggs - Place eggs in salted cold water. Bring to a boil and boil 1 minute. Remove from heat and let sit in the hot water for 10-12 minutes. Place in an ice bath for 5 minutes untill cooled. Peel.
- When the mixture is smooth, place in a piping bag and pipe into the egg whites. Sprinkle with smoked paprika and serve.
