Steps:
- Gather all the ingredients.
- Cut the cucumber lengthwise into quarters. Remove the seeds and then again cut in half lengthwise into thin strips. You will have 8 strips.
- Cut an avocado in half lengthwise around the pit and twist the two halves until they separate. Use a spoon to remove the pit. Alternatively, you can remove the pit with your knife, but you must take great care not to use too much force or you could cut your hand. First, hold the avocado half in your palm; it's best to hold it with a folded kitchen towel to protect your hand. Next, very gently tap the heel of your knife into the pit with just enough pressure that the knife embeds in the pit. Then, twist the knife and the pit will come out smoothly. Repeat with the remaining avocado.
- Remove the skin and thinly slice the avocado halves crosswise.
- Gently press the avocado slices with your fingers so the individual slices begin to slide and separate. Keep pressing gently and evenly with the side of the knife until the length of the sliced avocado half is about the length of a sushi roll (or a sheet of nori seaweed.) If you don't serve the sushi roll right away, I recommend squeezing lemon over the avocado to prevent discoloration. Repeat with the other avocado halves.
- Line the bamboo mat with plastic wrap and place half of the nori sheet on top, shiny side down. Dip your hands in the tezu (vinegar water) and spread ½ cup sushi rice over the nori sheet.
- Flip over the nori sheet with the rice on it. Place two pieces of the shrimp tempura, two cucumber strips, and some tobiko at the bottom end of the nori sheet closest to you.
- From the bottom end, start rolling the nori sheet over the filling tightly and firmly with the bamboo mat until the bottom edge reaches the nori sheet. Lift the bamboo mat and roll over the remaining nori.
- Place the bamboo mat over the top and tightly squeeze the roll.
- Remove the bamboo mat and plastic wrap from the sushi roll. Using the side of the knife, lift the avocado slices from one half and place them on top of the roll. If you'd like to use unagi, alternate avocado and unagi slices and layer them to cover the top and sides of the roll.
- Replace the plastic wrap over the roll and put the bamboo mat over the top. Tightly squeeze the roll through the bamboo mat until the avocado slices wrap around the roll. Be gentle so you don't break the avocado slices. Remove the mat.
- Cut the roll through the plastic wrap into 8 pieces with the knife. Clean your knife with a wet towel after each cut. If the roll gets messy while cutting, tightly squeeze the sushi roll again with the bamboo mat. Remove the plastic wrap on top of the sushi and transfer the sushi pieces to a serving plate. Repeat to make the remaining rolls.
- Put some tobiko on each piece of sushi and drizzle spicy mayo and sprinkle black sesame seeds on top. If you'd like, place some unagi sauce on the plate so you can dip the sushi. Enjoy!

- Use "Sushi Rice" only, also knows as "Kagayaki" or"Koshihikari" rice.
- Put rice in a bowl and fill with water you will notice the water is cloudy. Drain water out and repeat the process until the water is clear.
- Bring 1 cup of rice and 1 cup of water to a boil.
- Reduce to a simmer and cover.
- Cook about 15minutes. Just until all the water is adsorbed, could be more or less time. Stir occasionally to prevent sticking.
- Remove the rice from the heat and let sit, still covered, for 10min.
- Spread rice on a flat surface. You want it to spread out as much as possible to cool quickly.
- Sprinkle on 1 Tbs of SEASONED Rice Vinegar.
- If you have just "Rice Vinegar" combine 1Tbs Vinegar with 1Tbs Sugar and 1tsp Salt and it is the same thing. Put mixture over heat in a sauce pan or in the microwave to dissolve sugar and salt.
- Work vinegar through rice by pushing around with a spoon, also start fanning your rice. You want the rice to cool as quickly as possible.
- The rice should have a sheen all over, if it does not add a little more vinegar.
- Wet your hands and form the rice into a ball, it should stick together and still pull apart into individual pieces.
- Place a piece of plastic wrap on your bamboo mat and put Nori on top of it with the rough side up.
- Spread out 3/4 to 1 cup of cooked rice per sheet of Nori (seaweed paper). Use wet hands and spread around the whole sheet leaving a 1 inch border on the bottom.
- Turn the sheet over so the rice is facing the plastic wrap and the nori with nothing on it is facing up. Make sure the 1inch rice free border is on the bottom.
- 1/3 of the way up from the bottom smear a line of cream cheese.
- Cut shrimp in half and place on top of the cream cheese.
- Cut Cucumber into small strips and lay beside the shrimp.
- Fold the bottom of the sheet over the rice and continue rolling into a log.
- Cut with a wet serrated blade.

- Heat oil in large skillet over medium heat. Mix together the potatoes, white part of the scallions, and bacon. Season with salt and pepper and add to the hot oil. Cook until potatoes are golden brown. Remove from skillet with a slotted spoon and place in a large bowl.
- Mix the sour cream, half of the chopped tomatoes and the Taco seasoning together. Add most of it to the cooked potato mixture reserving only 2 tablespoons for a dipping sauce- place that in a small bowl. Garnish dipping sauce with a few reserved scallion greens.
- Lay the slices of chicken vertically out on a cutting board. Take a spoonful of potato mixture and place near the bottom third of a slice of chicken. Roll up like a sushi/jellyroll and squeeze together . Continue until all are done. Go back to the rolls and slice each in half. Secure with a toothpick and top each with a sundried tomato garnish.
- To serve : place on a sushi dish and add reserved dipping taco sour cream.Serves 4.

- Remove crusts from bread. With a rolling pin or large soup can, completely flatten bread.
- Spread 1 tablespoon of peanut butter and 1 tablespoon of fruit spread on each slice of bread.

LOW CARB RICELESS MAKI SUSHI ROLLS
Have all the taste and texture of traditional maki sushi rolls but with way fewer carbs and no rice! This recipe utilizes vegetables in an interesting way in place of the sushi rice. I came up with this recipe as I love sushi but am cutting back on my carbohydrate intake. Sashimi was always an option, but sometimes you want more than just plain fish! Feel free to experiment with different fillings and combinations. The recipe below will provide 2 of each of the three versions of riceless sushi. However, the zucchini can be mixed with the carrots for a combo. The pureed cauliflower versions can also be kicked up with a hit of wasabi pureed in the mix. Have fun with this!

- Grate the carrots and zucchini but keep them separated. Mix the sesame oil, mirin and sesame seeds and drizzle 1/2 over the zucchini and 1/2 over the carrots. Toss until the veggies are coated. Set aside.
- Boil the cauliflower until very, very tender. Drain. Puree. Set aside.
- Place a sheet of nori on bamboo sushi roller mat or piece of plastic wrap. Place the grated carrot, zucchini, OR pureed cauliflower on about 1/2 of the nori sheet. Then lay out fillings of choice on top of the vegetables. Once filled, roll into a tube, seal edges with a bit of water and then slice each roll into 6 slices.
- Suggestions for combinations: Grated carrot w/ marinated shiitaki mushrooms, Grated zucchini and carrot w/ crab and avocado, Pureed cauliflower w/ salmon (I mix wasabi in with the cauliflower puree for extra flavour), Grated carrot w/ shrimps, zucchini, avocado and crab, Cauliflower puree w/ shiitaki mushroom and grated carrot, zucchini w/ smoked salmon and green onion.

I found this at a Japanese steakhouse. My wife would never go near raw fish but this is cooked, an absolute must try for the sushi beginner! Go easy on the wasabi though. Kids love it too as an alternative to fish sticks.

- Heat oil in a deep fryer to 350 degrees.
- Dredge grouper in tempura flour then dip in tempura batter and deep fry for 1 1/2 mins, set aside.
- Spread sushi rice out on bamboo mat about 8"x 8" square.
- (dip fingers in water to keep rice from sticking to them) Toast nori over an open flame, just til crispy, lay sheet over rice.
- Spread mayo on bottom edge of nori sheet, add grouper and onion slivers.
- Start at bottom and roll, rice should be on the outside if done right.
- (sort of like a jelly roll) Cut into 8 pieces, lay flat and sprinkle sesame seeds on top.
- Serve with japanese soy sauce, wasabi and pickled ginger.
- Enjoy!
SUPER SUSHI NORI ROLLS
Sushi is easier to make than you think! And you don't have to use fresh fish either. It's a great lunch to take to work or an attractive-looking party snack.

- Empty rice into a bowl and run water through it until the water runs clear off the rice.
- Then cover rice in water and boil, adding water continuously until it's all absorbed and you have a sticky rice.
- If you have a bit too much water at the end, when the rice is cooked, just set it in a strainer for a few minutes to drain.
- Now, leave the rice for up to an hour beforehand so it can cool properly.
- You can speed this up a bit by putting it in the fridge to cool.
- When the rice is cool, lay out a tea towel and a nori sheet on top.
- Spread rice thinly over the sheet (a knife dipped in hot water makes this easier), leaving about an inch clear at the bottom and a slightly smaller border around the rest.
- The trick is to not use too much rice, leaving room for it to expand when rolled.
- Choose your fillings (one or two for each roll) and lay out in a thin line across the sheet, about 1/3 of the way from the top.
- Then start rolling from the top.
- The tea towel will help you get it started.
- When it is rolled (the bottom inch of the nori will stick to itself, holding the roll together) take a sharp knife and slice 1 inch rounds.
- Dip in soy sauce and wasabi, topped with ginger slices and enjoy!

- Cook rice according to package instructions.
- Mix vinegar, sugar and salt.
- Cut vinegar mixture into cooked rice until well combined.
- To roll sushi you can use a bamboo sushi mat, or just use a clean towel instead, or you can even forgo the roller and just carefully roll using your hands.
- Place nori sheet on roller and spread a thin layer of the sushi rice over the nori.
- Place your filling in a center line on the nori sheet.

- Spicy Tuna Roll-- Sushi grade raw tuna, minced and mixed with a small amounts of mayonnaise, oriental style hot sauce and sesame oil and served with radish sprouts.
- California Roll-- Imitation crab meat, mayonnaise and avocado.
- Salmon& Asparagus (one of my personal creations)-- Leftover cooked salmon (grilled tastes best) with an blanched asparagus spear and a small amount of mayonnaise mixed with oriental hot sauce.
- Veggie-- Thinly julienned strips of cucumber, carrot and zucchini with avocado slices and sprouts.
