Steps:
- Preheat oven to 350F/180C. Line 2 baking sheets with parchment paper. Set aside.
- In a medium bowl, sift together flour, baking soda, and salt. Set aside.
- In a mixer bowl fitted with the paddle attachment, beat butter, granulated sugar, and powdered sugar on medium-low speed for 4 minutes. Beat in egg and vanilla extract just until combined. Add flour mixture and beat just until combined. Mix in sprinkles. Do not overmix.
- Shape dough into balls, the size of 1.5 tablespoons each (I use this ice cream scoop for that), and place on the cookie sheets, spacing them 2-inches apart. Bake for 11-12 minutes until cookies just begin to brown at the edges, but the center is still soft (you don't want to overbake them). Allow cookies to cool on baking sheet for 5-10 minutes, then gently transfer to a wire rack to cool completely.
- Store cookies at room temperature in an airtight container for up to 3 days. Cookies can also be frozen for up to 2 months.
CHEWY GOOEY BROWNIE COOKIES
My mommy's group had a cookie bake-off for the holidays last Christmas then exchanged recipes. I thought these cookies were really really yummy and needed to input it (finally--6 mos later) before I lost the recipe! Hope you enjoy.

CHEWY BROWNIE COOKIES
This came from a Crisco package and is super yummy! These cookies taste just like a brownie with chips in them. I love them with white chocolate chips or a mix of white and milk chocolate. I have even just made these with no chips and frosted them.

Steps:
- Melt the butter and 1/2 cup of chocolate chips in the microwave for 2 minutes. When it is done, stir the melted butter and and chocolate until they are one mixture.
- Add the egg but be sure to stir it right away( or else the egg may cook. I also suggest using a fork.).Stir in the sugar.
- Add the baking soda, baking powder, salt, and flour and stir it all.
- Fold in the chocolate chips.
- Preheat the oven (I used a toaster oven since our big oven is broken so you may have to change the cooking settings) to 350 degrees. Oil/spray the cookie sheet. Roll the dough into about 1 inch diameter balls and place them atleast 2 inches apart because these cookies expand as they bake.
- Bake them about 5-6 minutes (i used a toaster oven so it may vary for your oven). Then take them out and let them cool on a cooling rack or on a plate (doesnt matter - i did both since my cooling rack is small).
- Enjoy!

- Grease and line a square 8 inch baking tin with parchment paper, ensuring two sides of the paper overhang. Put the butter and chocolate in a heatproof bowl and place on top of a medium saucepan that is filled with a small amount of water. You need to ensure the bottom of the bowl will not touch the water below. Place the saucepan on the stove on a medium heat and stir while the chocolate and butter melt. Once the mixture is lovely and smooth, remove the bowl from the heat and leave to cool slightly.
- Preheat the oven to 320 F (160 C). Next, add the sugar and vanilla to the chocolate mixture and beat with an electric mixer until combined. Add the eggs, one at a time and beat again. Sift in the flour and stir until the mixture is smooth. Pour the brownie batter into your prepared tin and place in the oven. Bake the brownie for approximately 35-40 minutes. The brownie should have a nice cracked top and no longer wobble in the middle. Leave to cool completely.
- To make the cookie dough, add the softened butter and sugars to a large mixing bowl and beat with an electric mixer until pale and creamy. Add the vanilla and beat again. Sift in the flour and add the milk and stir until a soft cookie dough forms. Add in your chocolate chips and sprinkles and stir through. Then place the cookie dough on top of your brownie and spread it out as evenly as possible.
- Finally, melt your chocolate in the microwave, stirring in-between 20 second bursts, until just melted and pour oven the top. Add extra sprinkles. Pop into the fridge for 15 minutes to set, then cut and serve.
