- To make the pastry cream, in a small saucepan, heat the milk and scraped out vanilla bean over medium-high heat, until just scalded. (Temperature reached should be just below the boiling point.) Combine eggs yolks and sugar in a small bowl and beat together. Slowly stir in the flour, then add 1/4 hot milk mixture in order to temper eggs and raise their temperature without curdling or scrambling them. Pour egg mixture into remaining hot milk and return to heat, stirring constantly. Bring mixture just to a boil, then remove from heat, cover with plastic wrap. Note: make sure to place plastic wrap directly on the surface to avoid a film from forming. Refrigerate until completely chilled. For the crust: pulse flour, sugar, lemon zest and salt in a food processor until combined. Then add cold butter and pulse until butter breaks down into pea-sized crumbs. Slowly drizzle in ice water with the food processor running until dough begins to come together. Then add in 2 eggs. Mix until fully incorporated. Set up 2, large pieces of plastic wrap and turn dough out. Divide in half, roll each half into a ball, then flatten each into a disc. Tightly wrap each in plastic wrap and refrigerate for at least 1 hour. Preheat oven to 350º F. Remove 1 dough disc from fridge and roll out on a lightly floured surface to 1/4-inch thickness. Carefully transfer to a lightly greased, 9-inch, tart tin/springform pan. Press the dough into the bottom and sides of the pan, then trim off excess overhang. Prick the bottom all over with a fork, cover with aluminum foil and place beans (or other form of weight) on top of the foil. Bake for 20 minutes, then remove foil and bake for another 15-20, or until golden. Remove and let cool completely. Combine berries in a large bowl and muddle slightly. Mix together so juices combine and set aside. Once crust is completely cool, spoon pastry cream evenly along the inside of pie shell and top with mixed berries. Garnish with a liberal dusting of powdered sugar and serve chilled or at room temperature.
LOW CARB CHEESECAKE WITH ALMOND CRUST
I've been searching for a low carb cheesecake since I've given up sugar and so, using ideas from different recipes, I came up with this one. I made it with raspberry jello and then I pureed a 1/2 pint of raspberries with some Splenda (add to your taste) and a tsp. of gelatin. Then I spread it on the cheesecake before chilling.

- Almond Crust:.
- Preheat oven to 350°F.
- Mix the almond flour, butter and sugar substitute in a bowl. Spray 8x8 square pan (or pie plate) with cooking spray, and press this mixture evenly into the pan.
- Place this crust in a preheated oven and bake for 12-15 minutes, or until lightly golden browned and slightly pulling away from the sides of the pan. Remove the crust from the oven, and let it cool while you make the filling.
- Cheesecake Filling:.
- Dissolve the Jello in the boiling water, stirring for 2-3 minutes. Set aside to cool and slightly thickened (20-30 minutes).
- Beat the cream cheese until smooth. Gradually add the Jello to the cream cheese, and mix really well. Add Cool Whip 1/2 cup at a time until well blended. Add the sugar substitute until blended. Spread the mixture in the pan or pie plate and chill for a couple of hours.
- This recipe is very versatile. Use different jello flavour or add more or less sugar substitute or use juice instead of water or fold fresh or canned fruit into the cheesecake filling.

- For the crust: Preheat oven to 350 degrees F.
- Tightly wrap the outside of a 9-inch diameter springform pan with 2 3/4-inch-high sides with 3 layers of heavy-duty foil. Finely grind the almonds, cracker crumbs, and sugar in a food processor. Add the butter and process until moist crumbs form. Press the almond mixture onto the bottom of the prepared pan (not on the sides of the pan). Bake the crust until it is set and beginning to brown, about 12 minutes. Cool. Decrease the oven temperature to 325 degrees F.
- For the filling: Using an electric mixer, beat the cream cheese, mascarpone cheese, and sugar in a large bowl until smooth, occasionally scraping down the sides of the bowl with a rubber spatula. Beat in the lemon juice and vanilla. Add the eggs, 1 at a time, beating just until blended after each addition.
- Pour the cheese mixture over the crust in the pan. Place the springform pan in a large roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan. Bake until the center of the cheesecake moves slightly when the pan is gently shaken, about 1 hour 5 minutes (the cake will become firm when it is cold). Transfer the cake to a rack; cool for 1 hour. Refrigerate until the cheesecake is cold, at least 8 hours and up to 2 days.
- For the topping: Combine the chocolate-hazelnut spread and cream in a small bowl. Heat in the microwave until warm, stirring every 20 seconds to blend, about 1 minute.
- Cut the cake into wedges. Drizzle the chocolate sauce over the wedges and serve.

Press dough into a 10-inch tart pan with a removable bottom. Prick surface several times with a fork. Freeze 10 minutes. Bake on middle rack of oven 10-15 minutes or just until starting to turn golden brown. Cool completely. To prepare filling, beat cream cheese and ½ cup granulated sugar until fully combined. Add sour cream, vanilla, 1 tsp almond extract, eggs and salt; beat until very smooth. Pour into cooled crust. Bake 20-25 minutes or until filling is still a little jiggly on top. Turn off oven. I saw this on a local news station as an Olympic Dessert special saluting Italy, but wanted to wait until I made it before posting. Very quick and easy and extremely good with or without the Ricotta cream. Makes a colorful presentation!!!

- Preheat oven to 350 degrees.
- Lightly spray an 11 inch removable bottomed tart pan with cooking spray.
- Cream butter and sugar in a large mixing bowl.
- Add egg yolks, one at a time, and continue mixing until smooth.
- Add lemon zest and cinnamon.
- In a separate bowl, whip egg whites and salt until stiff peaks form.
- Gently fold egg whites into egg yolk mixture.
- Fold flour into mixture until just blended.
- Pour mixture into tart pan and spread evenly.
- Top with 3 cups of mix berries (reserve remaining berries for topping).
- Lightly press fruit into mixture.
- Place in oven and bake for 1 hour.
- Remove from oven and allow to cool.
- In small bowl, mix ricotta, powdered sugar, and vanilla until well blended.
- Set aside.
- In a large bowl, whip cream until soft peaks form.
- Add ricotta mixture and continue to whip until smooth.
- Dust cake with powdered sugar and top with remaining fruit.
- Serve with ricotta whipped cream.
PASSOVER LEMON CHEESECAKE WITH ALMOND CRUST
This cheesecake has a delicious nutty and crisp crust with a light but creamy citrusy filling. Recipe is from Gourmet (April 2008). Cheesecake can be made 2 days ahead and chilled, loosely covered. You can garnish with berries or julienned lemon zest. The cake needs to cool 2-3 hours before serving. If you don't have matzo cake meal, grind regular matzo meal (or even matzos) to a finer consistency in a food processor or blender.

- Make crust: Preheat oven to 350F with rack in middle. Pulse almonds, sugar, matzo cake meal, and salt in a food processor until finely ground. Bake until filling is set 1 1/2 inches from edge but center is wobbly, 45 to 50 minutes (filling will continue to set as it cools). Transfer cake in pan to a rack and immediately run a knife around edge, then remove side of pan. Cool completely, 2 to 3 hours.
