This is a very good cake for Christmas. Do not double this recipe. You don't need to age this cake.

¾ cup butter
1 cup white sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon almond extract
3 cups golden raisins
½ cup red candied cherries
1 cup candied mixed fruit peel
1 (15 ounce) can crushed pineapple with juice

Steps:

  • Line an angel food pan with parchment paper and brush with melted butter.
  • Cream butter or margarine, and then beat in sugar. Beat in eggs one at a time, beating well after each addition. Stir in extract. Mix in flour, baking powder, and salt. Stir in raisins, cherries, pineapple, and mixed peel. Cover bowl and let sit at room temperature, 8 hours to overnight.
  • Bake at 300 degrees F (150 degrees C) for 2 1/2 hours with a pan of hot water placed on the lowest rack of your oven during baking. Brush warm cake with some melted butter.

1 prepared angel food cake (approx 8-inch diameter)
1 (8 ounce) carton frozen whipped topping, thawed
1 (20 ounce) can pineapple tidbits, drained
1 (15 ounce) can sliced pears, drained
1 pint strawberry, sliced
4 kiwi fruits, peeled, halved and thinly sliced
1 cup fresh blueberries

Steps:

  • In a mixing bowl, beat milk and pudding mix on low speed for 2 minutes; set aside.
  • Split cake horizontally into thirds.
  • Place one layer in a 5 quart trifle or serving bowl that is 9 inches in diameter (see note in heading about measuring).
  • Top with a third of the pudding, third of the whipped topping and a third of the fruit.
  • Repeat layers two times.
  • Cover and chill for at least 3 hours before serving.

1/3 cup raisins
1 (14 ounce) can crushed pineapple, with juice
1/2 cup chopped maraschino cherry
2 large eggs, beaten

1/2 teaspoon salt
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 300F; line an 8-inch square cake pan with foil and set aside.
  • Put sugar, butter and fruits (with juice from tinned pineapple) in a saucepan over medium to medium-low heat; note that all currants or all raisins can be used instead of both; stir often until the butter melts, then remove from heat.
  • Note that you could also do that in a microwave oven.
  • Beat eggs with a whisk until frothy in a small bowl; slowly whisk eggs into fruit mixture.
  • Combine all dry ingredients together then add all at once to wet mixture; stir well.

1 (15 ounce) can crushed pineapple
4 ounces butter
12 ounces raisins
1 cup sugar
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
1 pinch salt
1 cup self raising flour
1 cup plain flour
2 beaten eggs

Steps:

  • Put in pan crushed pineapple and juice, butter, raisins, sugar, spice, bicarbonate soda and pinch of salt.
  • Boil for 10 minutes, watch that it does not boil over with the bicarbonate of soda in it!
  • Cool and then add the beaten eggs and flours.
  • Put into an 8x8-inch tin that has been lined with baking paper.
  • Bake at 350°F for approximately 1 hour.
