PW'S BREAKFAST BURRITOS

1 pound breakfast sausage
10 eggs
1/4 cup half-and-half
1 teaspoon seasoned salt, such as Lawry's
Ground black pepper
12 flour tortillas
Breakfast Potatoes, recipe follows
Grated Monterey Jack cheese
Jarred jalapenos
Hot sauce
12 russet potatoes
Canola oil, for frying
Butter, for frying
1 large onion, cut into fine dice
1 green pepper, cut into fine dice
1 red pepper, cut into fine dice
1 yellow pepper, cut into fine dice
Salt and ground black pepper

Steps:

  • Begin by browning the breakfast sausage in a skillet over medium heat. Drain off the grease and reduce the heat to low.
  • Crack the eggs into a bowl. Add the half-and-half, seasoned salt and some pepper, and whisk to beat the eggs lightly.
  • With the heat still on low, pour the egg mixture over the sausage mixture. Now, with a spoon or spatula, very gently stir the mixture. Continue lightly cooking over low heat until the eggs are set. Now taste and adjust the seasoning, adding more seasoned salt or pepper if desired.
  • To assemble, warm the stack of tortillas on a paper towel in the microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, and top with a spoonful of Breakfast Potatoes. Tuck in the sides and roll the tortilla until closed. Wrap in foil sheets and keep warm until ready to serve.
  • For cheesy and spicy variations, add grated Monterey Jack, jarred jalapenos, hot sauce or all three.
  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a baking sheet and bake until fork tender, about 45 minutes.
  • Place the hot potatoes on a cutting board and dice them into 1-inch pieces.
  • Heat a skillet over medium-low to medium heat. Next, put a tablespoon of canola oil in the skillet. Add in some butter and the onions and saute until they start to turn brown. Next, throw in the cooked diced potatoes and the peppers. Salt and pepper the potatoes, then stir them around, slightly pressing/packing them in the skillet. Cook without stirring for 5 to 7 minutes. You want to make sure the pan is hot enough to crisp the potatoes. Add more butter to the pan as necessary for moisture.
  • After several minutes, use a spatula to flip the potatoes over and cook on the other side for another 5 to 7 minutes.

12 slices bacon, chopped
1 onion, chopped
1 pound loose breakfast sausage
10 slices ham, chopped
12 large eggs, whisked
2 cups grated pepper jack cheese
1/2 cup store-bought salsa verde
Two 4-ounce cans diced green chiles
Kosher salt and freshly ground black pepper
Twelve 8-inch flour tortillas

Steps:

  • In a large cast-iron skillet over medium-high heat, add the bacon and onion. Cook until the bacon is crisp and the onion is softened, 6 to 8 minutes. Remove to a paper towel-lined plate. Add the sausage to the same skillet and, using the back of a wooden spoon, break it up into small bits. Cook until golden brown, 5 to 7 minutes. Add the bacon and onion back to the skillet, along with the ham. Pour in the whisked eggs and use a rubber spatula to scramble the eggs and meat. Cook until the eggs are set, about 5 minutes, then add the cheese, salsa verde and chiles and stir everything together. Season with salt and pepper.
  • Divide the scramble among the 12 tortillas. Roll up the tortillas, leaving the ends open. Wrap each burrito in foil. Serve immediately.
  • To make ahead: Refrigerate the burritos after assembling; reheat the next day at 350 degrees F for 35 minutes in a pan covered with foil.

4 large whole-wheat tortillas
One 10-ounce package fully cooked breakfast sausage links (I like Jimmy Dean's turkey sausage)
6 large eggs (or substitute 6 large egg whites)
1/4 cup chives, finely chopped
3 tablespoons whole milk or heavy cream
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons salted butter
4 ounces sharp Cheddar cheese, grated
1/2 cup Pineapple Avocado Salsa, recipe follows
4 lime wedges
Hot sauce, optional
2/3 cup grape tomatoes, chopped (10 to 12)
3/4 cup finely chopped pineapple
3 medium avocados, diced
1/2 finely chopped sweet onion, such as Vidalia
1/8 cup finely chopped fresh cilantro
1 tablespoon lime juice
1 teaspoon crushed red pepper flakes
1/4 teaspoon garlic salt
Black pepper

Steps:

  • Preheat the oven to 250 degrees F.
  • Place the tortillas on a baking sheet and heat in the oven until warmed through and softened, about 5 minutes.
  • Meanwhile, using kitchen shears, cut the sausage links into 1/4-inch pieces. Heat a small skillet over medium-low heat until shimmering, about 2 minutes, then add the sausage and heat, stirring frequently, until warmed through, about 4 minutes. In a medium bowl, whisk the eggs. Add the chives, milk, salt, and pepper.
  • In a medium nonstick skillet over medium heat, melt the butter, then add the egg mixture, and using a rubber spatula, push the eggs toward the center of the pan until the mixture is no longer runny. Add the cheese and gently toss until cooked to desired consistency.
  • Divide the eggs evenly among the tortillas. Top with sausage and 2 tablespoons of the prepared Avocado Pineapple Salsa. Squeeze a lime wedge over the salsa, and add a dash of hot sauce if desired.
  • Starting from one end, roll the tortilla once, then fold in the sides and continue rolling until fully enclosed.
  • Combine the tomatoes, pineapple, avocados, onion, cilantro, lime juice, red pepper flakes and garlic salt in a medium bowl. Add black pepper to taste.

Having a cheesy scrambled egg-filled burrito for dinner is the antidote to a busy morning when there often just isn't time to make or enjoy one. This version has some salsa-spiked refried beans, Canadian bacon and avocado in it to add extra heft, but like any burrito, it's also easy to customize and make your own.

12 ounces seasoned curly fries
3/4 cup refried beans
3 tablespoons salsa, plus more for serving
1 tablespoon extra-virgin olive oil
4 pieces Canadian bacon, chopped
2 scallions, thinly sliced
1/4 teaspoon ancho chile powder
8 large eggs, lightly beaten
Kosher salt and freshly ground pepper
3/4 cup shredded Mexican cheese blend
4 large flour tortillas
1 avocado, sliced

Steps:

  • Preheat the oven to 450˚ F. Spread the curly fries on a large rimmed baking sheet and bake as the label directs. Meanwhile, put the beans in a medium bowl and microwave until hot, 1 to 2 minutes; stir in the salsa.
  • Heat the olive oil in a large nonstick skillet over medium heat. Add the Canadian bacon; cook until lightly browned, 2 to 3 minutes. Add the scallions and chile powder; cook just until softened, about 1 minute. Reduce the heat to medium low and pour in the eggs. Season with salt and pepper and cook, stirring, until fluffy and just slightly wet in spots, 4 to 5 minutes. Remove from the heat and add the cheese. Let stand 1 minute, then stir until the cheese is melted and the eggs are very creamy.
  • Warm the tortillas as the label directs. Spread the bean mixture over the bottom third of the tortillas. Top with the avocado slices and eggs. Roll up tightly. Serve with the fries and more salsa.

1 cup vegetable oil for frying, or as needed
⅓ cup white sugar
1 tablespoon ground cinnamon
¾ cup peach pie filling
12 (6 inch) flour tortillas

Steps:

  • Heat oil in a deep saucepan over medium heat. Mix sugar and cinnamon together in a brown paper bag.
  • Put about 1 tablespoon pie filling in the center of each tortilla and roll up like a burrito, folding both ends over.
  • Lower burritos carefully into the hot oil in batches. Fry until medium brown and crispy, turning once, 3 to 5 minutes. Transfer to a plate lined with paper towels to drain and then shake in the paper bag until coated with cinnamon-sugar mixture. Repeat with remaining burritos.

1 tsp chipotle paste
1 egg
1 tsp rapeseed oil
50g kale
7 cherry tomatoes, halved
½ small avocado, sliced
1 wholemeal tortilla wrap, warmed

Steps:

  • Whisk the chipotle paste with the egg and some seasoning in a jug. Heat the oil in a large frying pan, add the kale and tomatoes.
  • Cook until the kale is wilted and the tomatoes have softened, then push everything to the side of the pan. Pour the beaten egg into the cleared half of the pan and scramble. Layer everything into the centre of your wrap, topping with the avocado, then wrap up and eat immediately.
