Lemon Yogurt Fruit Salad with a creamy honey lemon yogurt dressing with fresh lemon juice. Fresh pineapple, strawberries, blueberries, kiwi, and canned mandarin oranges.

2 cups chopped strawberries
2 cups chopped fresh pineapple
2 cups blueberries
4 kiwis (skin peeled & chopped)
1 can (15 oz) mandarin oranges (drained well)
1 container (6 oz) lemon yogurt
1 tablespoon honey
juice of 1/2 a lemon (about 1 tablespoon lemon juice)

Steps:

  • Add the strawberries, pineapple, blueberries, kiwi, and mandarin oranges into a large mixing bowl (or the bowl you're serving it in).
  • In a small bowl mix together the yogrt, lemon juice, and honey. Stir together well and pour over the fruit. Gently stir it all together and serve right away.
  • * If you are not serving this fruit salad right away then keep the fruit and yogurt dressing in separate bowls and mix together right before serving it.

1 tablespoon honey

2 tablespoons sugar
3 tablespoons limoncello liqueur
1 banana, sliced

Steps:

  • For the lemon yogurt topping, whisk together the yogurt, lemon curd, honey, and vanilla and set aside at room temperature.
  • For the fruit salad, carefully toss together the strawberries, raspberries, blueberries, sugar, and limoncello. Allow them to stand at room temperature for about 5 minutes to let the berries macerate with the sugar and liqueur. Gently fold the banana into the mixture.
  • Serve bowls of fruit with a dollop of lemon yogurt on top. Top each with a sprig of fresh mint.

2 medium kiwifruit, peeled, sliced and halved
2 medium ripe pears, peeled and chopped
2 medium Red Delicious apples, chopped
2 medium navel oranges, peeled and sectioned
2 cups seedless red grapes, halved
1 medium pink grapefruit, peeled and sectioned
CITRUS YOGURT SAUCE:
1 cup plain yogurt
2 tablespoons brown sugar
2 tablespoons sour cream
1 teaspoon grated orange zest
1/2 teaspoon vanilla extract

  • For syrup, in a large saucepan combine the first five ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Cool. Stir in triple sec if desired. , In a large bowl, combine the kiwi, pears, apples, oranges, grapes and grapefruit; add syrup and gently toss. Cover and refrigerate overnight. In a small bowl, combine sauce ingredients. Cover and refrigerate overnight. Serve fruit salad with a slotted spoon; drizzle with yogurt sauce.

So simple, healthy and delicious.. Made it for my daughter after the birth of her first child. After leaving the hospital she was looking for healthy foods. Thought about what fruit to get her and decided to just get it all and make a fruit salad. Looked for recipes and found many had unnecessary high calorie fluff. To my surprise she loved what I came up with. I have made several since that time. Her favorite part is the crispness of the apple next to the soft banana. I've made up several of these and the great thing is you can easily increase or decrease the number of servings by adding or reducing amount of fruits you prefer. I purchase more of the seasonal items to keep cost reasonable.

1 banana

1 cup green seedless grape

3 navel oranges
1/2 cup dried cranberries
2 tablespoons honey
1/4 teaspoon ground cinnamon
1 16- or 17.6-ounce container Greek yogurt
2/3 cup minced crystallized ginger
1/4 cup golden brown sugar
Additional dried cranberries

Steps:

  • Break grapefruit and tangerines into sections. Cut grapefruit sections into thirds; cut tangerine sections in half. Transfer grapefruit, tangerines, and all juices to deep serving bowl. Using small sharp knife, cut all peel and white pith from oranges. Slice oranges into 1/4-inch-thick rounds, then cut slices into quarters. Add oranges and all juices to same bowl.
