Fruit Mojitos are the *fancy-human* version of this classic cocktail (that take less than 5 minutes to whip together).

Steps:
- Muddle: Add mint leaves to the glass and gently muddle to release oils*. Add sugar, rum, and fruit, muddling again to roughly break down the fruit.
- Serve: Add ice then top with club soda, optionally squeezing in the juice of half a lime (if it suits the fruit you're using).

Steps:
- Add raspberries, lemon juice, sugar or simple syrup and mint leaves to a tall glass. Muddle to combine. If you want it without seeds, you can strain it.
- Add ice, rum and soda. Stir with a spoon to combine.
- Garnish with mint leaves and more raspberries.
- Add chopped pineapple, lemon juice, sugar or simple syrup and mint leaves to a tall glass. Muddle to combine.
- Add ice, rum and soda. Stir with a spoon to combine.Optional: add a few ounces of pineapple juice, for a more pronounced tropical flavor.
- Garnish with mint leaves and lime or lemon wedges.
- Preheat oven to 350F.
- In a small baking dish combine blackberries, sugar and 2 tablespoon lemon juice. Stir to combine. Roast in the preheated oven for 10-15 minutes. Remove from oven and let cool to room temperature.
- Add roasted blackberries, lemon juice and mint leaves to a tall glass. Muddle to combine. If you want it without seeds, you can strain it.
- Add ice, rum and soda. Stir with a spoon to combine.
- Garnish with mint leaves and more fresh blackberries.
- Fill a tall glass 1/3 with the blended watermelon, use a mesh strainer when pouring it into the glass. Add mint leaves and lemon juice, muddle to combine. Add ice and fill the glass 1/3 more with blended watermelon juice. Add rum and soda and stir to combine.
- Garnish with mint leaves and watermelon wedge.

MANGO-PASSIONFRUIT MOJITOS
A tasty riff on the mojito, this gorgeous cocktail adds tropical flavors to the traditional rum-based drink. - In each of 4 sturdy glasses, muddle 5 mint leaves until they start to break down, a few seconds. In a blender, purée mango, passion-fruit juice, simple syrup, lime juice, and 1/2 cup water. Stir in both rums.
- Fill glasses with ice; top with cocktail. Garnish each glass with passion-fruit seeds (if using) and a mint sprig. Sprinkle ice cubes with a pinch of sea salt; serve.
