FRESH FRUIT SNO-CONES



Fresh Fruit Sno-Cones image

Yield Makes about 10 servings

Number Of Ingredients 6

1 lb fresh strawberries (about 1 quart), hulled and halved
6 oz fresh raspberries (about 1/2 pint)
1/2 cup sugar
7 1/2 cups lightly packed shaved ice
Garnish: fresh berries
an ice shaver, preferably manual

Steps:

  • Coarsely mash strawberries, raspberries, and sugar in a bowl with a potato masher. Let berries stand, loosely covered, at room temperature, stirring occasionally, 1 hour.
  • Drain berry mixture in a fine sieve set over a bowl, pressing lightly on berries. Reserve crushed berries for another use.
  • For each serving, spoon 2 1/2 tablespoons syrup over 3/4 cup lightly packed shaved ice. Serve immediately.

Make these easy fruit scones in just 15 minutes. They're perfect for an elegant afternoon tea or a sweet weekend treat. Serve with jam and clotted cream

350g self-raising flour, plus more for dusting
¼ tsp salt
1 tsp baking powder
85g butter, cut into cubes
3 tbsp caster sugar
175ml milk
1 tsp vanilla extract
squeeze of lemon juice
100g sultanas
beaten egg to glaze
jam and clotted cream, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the flour into a large bowl with the salt and baking powder, then mix. Add the butter, then rub in with your fingers until the mix looks like fine crumbs. Stir in the sugar.
  • Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla and lemon juice, then set aside for a moment. Put a baking sheet in the oven.
  • Make a well in the dry mix, then add the liquid and sultanas and combine it quickly with a cutlery knife - it will seem pretty wet at first. Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it's a little smoother. Pat into a round about 4cm deep.
  • Take a 5cm cutter (smooth-edged cutters tend to cut more cleanly, giving a better rise) and dip it into some flour. Plunge into the dough, then repeat until you have four scones. You may need to press what's left of the dough back into a round to cut out another four.
  • Brush the tops with beaten egg, then carefully place onto the hot baking tray.
  • Bake for 10 mins until risen and golden on the top. Eat just warm or cold on the day of baking, generously topped with jam and clotted cream. If freezing, freeze once cool. Defrost, then put in a low oven (about 160C/140C fan/gas 3) for a few mins to refresh.

2 very ripe large mangoes, 4 very ripe bananas, or 8 very ripe kiwis, peeled, cut into 3/4-inch pieces, and frozen on a parchment-lined baking sheet
Pinch of kosher salt
2 tablespoons agave nectar (if using mango or kiwi)
2 tablespoons fresh lime juice (if using mango)
6 ounces high-quality white chocolate, such as Valrhona
8 sugar cones
Chocolate and rainbow sprinkles and nonpareils, and finely chopped nuts, such as pistachios, for decorating
White-Chocolate Magic Shell(optional)

Steps:

  • Pulse frozen fruit and salt in a food processor until smooth. Add agave and lime juice (if using mango) or just agave (if using kiwi); pulse until thoroughly combined. Transfer to a freezer-safe container, cover surface, and freeze until firm, at least 2 hours and up to 1 week.
  • Melt chocolate in a heatproof bowl set over (not in) a pot of boiling water; let cool slightly. Dip tops of cones in melted chocolate and sprinkle with candies, nuts, or a combination. Freeze until set, at least 5 minutes and up to 1 day.
  • Temper purees in refrigerator until slightly softened, about 15 minutes. Scoop into cones, spoon magic shell over top, and serve immediately.

3/4 cup cut-up strawberry, hulled
3 cups fresh fruit, cut into chunks (Apples, bananas, cherries, plums, seedless red grapes, peaches, etc.)
6 giant waffle ice cream cones
1/2 teaspoon ascorbic acid (optional)
1/4 cup coconut, toasted

Steps:

  • Place the cut-up strawberries in blender container; cover and blend until smooth.
  • Place the 3 cups of assorted fruit in a bowl, toss with asorbic acid to prevent darkening if desired.
  • Spoon fruit into cones and drizzle with strawberry puree, sprinkle with toasted coconut.
  • Enjoy!
