Planning a special Thanksgiving celebration? We can't think of a more novel way to start the table talk-or serve the veggies-than with this incredible edible Mr. Turkey centerpiece! Subscriber Anita Johnson of Morrison, Colorado says, "Half the fun is putting this gobbler together. He's a traditional tasty guest at our Thanksgiving table now, but the first time I made him, folks found him simply too cute to eat!"

7 radishes
13 kale leaves, divided
1 medium head cabbage
1 medium carrot, peeled
Toothpicks
2 raisins
2 pimiento strips (1-1/4 inches long)
1 small head red cabbage
12 cherry tomatoes
18 pimiento-stuffed olives
2 cans (6 ounces each) pitted ripe olives, drained

Steps:

  • Trim both ends of each radish. With a sharp knife, cut the radishes to make roses. Place in a bowl of ice water; refrigerate until radishes open, about 30 minutes., Line a serving platter with six kale leaves. Cut the bottom off the medium cabbage so it sits flat; place on platter for turkey body., From the carrot, cut a 3-1/2-in. piece and a 1-1/2-in. piece. (Discard remaining carrot or save for another use.) Make a diagonal cut at one end of each carrot piece. , Make a V-shaped cut at the other end of the small piece to create a beak. Using toothpicks, attach the diagonal end of the larger carrot piece to turkey body for neck., For head, attach the diagonal end of the smaller carrot piece to neck. Using toothpicks, attach raisins for eyes and pimiento strips for the wattle., for tail, attach the remaining kale leaves on the back. remove eight leaves from the red cabbage and attach in front of the kale leaves. (Save the remaining cabbage for another use.) Attach the cherry tomatoes in front of the cabbage leaves., Attach stuffed olives for wings. Cover remaining body with ripe olives. Arrange radish roses on plate.

1 bosc pear (head)
1 cantaloupes (body) or 1 honeydew melon (body)
2 lbs cubed cheddar cheese (beak and tail feathers)
1 -2 red bell peppers (snood, feet and side feathers) or 1 -2 yellow bell pepper (snood, feet and side feathers)
2 raisins (eyes)
1 lb seedless grapes (tail feathers)
bamboo skewer
toothpick

Steps:

  • Stabilize the melon body by cutting a shallow slice off the rind to form a flat base and place on serving dish or platter.
  • Using a section of bamboo skewer, attach a Bosc pear (head) upside-down to the upper front of the melon.
  • Cut a cheese triangle beak and red pepper snood. Attach both, along with raisin eyes, to the pear head with sections of toothpick.
  • Cut red pepper feet and set them in place. For tail feathers, skewer cheese cubes and red grapes, then insert the skewers around the back of the melon. Pin pepper side feathers in place with toothpicks.

TURKEY at Thanksgiving is a timeless tradition. But you can give your holiday meal a novel twist with these birds of a different feather. The holiday treats are cute, sweet and made from all kinds of goodies youngsters love to nibble on. "The kids and I had a ball making these tasty turkeys for Thanksgiving one year," shares Sue Gronholz of Beaver Dam, Wisconsin. "They loved forming the turkey bodies from the gooey cereal mixture and twisting the sandwich cookies apart. "But using chocolate frosting to "glue" on the candy corn was their favorite part." This recipe makes a big batch of tempting turkeys, so there are plenty for snacking and sharing. These festive fall treats also would make fun favors at each place setting on your Thanksgiving table-if your family doesn't gobble them up first!

1/4 cup butter, cubed
4 cups miniature marshmallows
6 cups crisp rice cereal
28 chocolate sandwich cookies
1-1/2 cups chocolate frosting
1 package (11 ounces) candy corn
28 malted milk balls
White candy coating, optional

Steps:

  • In a large saucepan, melt butter. Add marshmallows; stir over low heat until melted. Stir in cereal. Cool for 10 minutes. With buttered hands, form cereal mixture into 1-1/2-in. balls. Twist apart sandwich cookies. If desired, remove filling and save for another use. Spread frosting over each cookie half., Place 28 cookie halves under cereal balls to form the base for each turkey. Place 5 pieces of candy corn in a fan pattern on remaining cookie halves; press each half onto a cereal ball to form the tail. Attach remaining candy corn with frosting to form turkey wings. For head, attach malted milk ball with frosting; cut white tip off additional candy and attach to head with frosting to form beak. If desired, place melted white candy coating in a piping bag fitted with a #1 round tip; pipe onto head to form eyes. Allow to stand until frosting has set. Store, tightly covered at room temperature.

2 1/2 cups turkey gravy
3 cups cooked turkey, chunks
1 1/2 cups frozen peas
1 1/2 cups sliced mushrooms
2/3 cup sun-dried tomato, chopped
1/4 cup water
2 tablespoons chopped parsley, divided
1 teaspoon poultry seasoning, divided
2 1/4 cups buttermilk reduced-fat baking mix
1/4-1/2 teaspoon black pepper
3/4 cup low-fat milk, plus
2 tablespoons low-fat milk

Steps:

  • Preheat oven to 450°F
  • In a 3-quart saucepan combine gravy, turkey, peas, mushrooms, chopped dried tomato, water, 1 tablespoon of the parsley and 1/2 teaspoon of the poultry seasoning. Stir occasionally over medium low heat until mixture comes to a boil.
  • Meanwhile, in bowl combine the baking mix, the remaining parsley and poultry seasoning, the pepper and milk. Mix just to blend thoroughly.
  • Pour turkey mixture into shallow 2-quart casserole or 9-inch square baking dish. Top it with baking mix mixture, dropping with tablespoon in six equal mounds. Place on baking sheet and bake about 20 minutes until turkey mixture is bubbly and topping is golden brown. Enjoy!
  • Makes 6 servings.
