Sweet shortcake fun! Skewer mini shortcakes and fruit for a new dessert.

2 1/3 cups Original Bisquick™ mix
2/3 cup milk
1/4 cup plus 1 teaspoon sugar
3 tablespoons butter or margarine, melted
15 (6-inch) bamboo skewers
4 cups assorted fresh fruit (such as strawberries, peaches or kiwifruit)
Sweetened whipped cream or frozen (thawed) whipped topping, if desired*

Steps:

  • Heat oven to 400°F. To measure Bisquick mix, lightly spoon into measuring cup; level off. In medium bowl, stir Bisquick, milk, 1/4 cup of the sugar and butter until soft dough forms. Drop by 30 rounded measuring tablespoonfuls onto ungreased cookie sheet. Sprinkle lightly with remaining sugar. Bake 5 to 7 minutes or until edges are light golden brown. Remove from cookie sheet to cooling rack. Cool completely; about 20 minutes.
  • Alternately thread 2 shortcakes and desired fruit on each skewer. Serve with sweetened whipped cream.

The caramelized sugar from the strawberries in these skewered desserts is like a sixth ingredient, and the warm fruit almost makes its own sauce. Dip the desserts into whipped cream and enjoy!

Sixteen 2-by-1-inch chunks pound cake (about 3/4 of an 8-inch loaf)
16 medium strawberries, leaves removed, hulls intact (cut any large berries in half)
1 1/2 cups plus 2 tablespoons confectioners' sugar
1 cup heavy cream
1/2 teaspoon pure vanilla extract
Vegetable oil, for oiling the grill grates

Steps:

  • Prepare a grill for medium-high heat. Toss the pound cake, strawberries and 1 1/2 cups sugar in a large bowl until the cake and berries are coated well on all sides with sugar (they can be a little lumpy and unevenly coated). Thread a piece of cake and a strawberry onto a skewer; repeat 3 times on the skewer. Repeat with the remaining skewers and ingredients. Set the skewers on a rimmed baking sheet.
  • Whisk together the cream, the remaining 2 tablespoons sugar and the vanilla in a medium bowl. Beat with a hand or stand mixer until soft peaks form. Cover and refrigerate.
  • Lightly oil the grill grates. Put the skewers on the grill, and grill, covered, until they are lightly marked, about 1 minute. Use a spatula to gently loosen them, and use tongs to flip them over. Continue to grill, covered, until the cake and strawberries are toasted with grill marks and the sugar starts to bubble and harden, 2 to 3 minutes. Serve with the whipped cream on the side.

1/2 cup apricot preserves
1 tablespoon water
1 tablespoon butter
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
3 medium nectarines, quartered
3 medium peaches, quartered
3 medium plums, quartered
1 loaf (10-3/4 ounces) frozen pound cake, thawed and cut into 1-1/2-inch cubes

Steps:

  • In a small saucepan, combine first five ingredients; cook and stir over medium heat until blended. Remove from heat., On eight metal or soaked wooden skewers, alternately thread fruit and pound cake. Place on a greased rack over medium heat. Grill, uncovered, until lightly browned and fruit is tender, brushing occasionally with apricot mixture.

32 ounces fresh strawberries
1 loaf vanilla pound cake ( (you could also use angel food cake, but the pound cake is more moist and easier to skewer))
1 cup white chocolate chips (melted)

Steps:

  • Cut the strawberries in half and the pound cake loaf into 1 inch by 1 inch squares.
  • Slide on the strawberries and cake pieces onto the skewer or popsicle stick.
  • Set on a pan or waxed paper.
  • Melt the white chocolate according to package directions and drizzle over the shish kabobs.
  • Let the white chocolate set and refrigerate until ready to serve.
