Marshmallow creme is what makes this easy fudge so incredibly airy (hint: the recipe is inspired by the popular recipe on the back of the label). Chopped toasted walnuts, or any of your favorite nuts, add welcome crunch. Share the rich, delightful squares with all your friends and family.

1 cup walnuts
Nonstick cooking spray, for the foil
1 pound bittersweet chocolate, chopped
One 14-ounce can sweetened condensed milk
One 7.5-ounce jar marshmallow creme
2 tablespoons unsalted butter, at room temperature

Steps:

  • Toast the walnuts in a medium saute pan over medium heat, tossing frequently, until darkened and fragrant, about 5 minutes. Transfer to a cutting board to cool, then roughly chop.
  • Line an 8-inch square cake pan with foil, leaving a 2-inch overhang on 2 sides. Coat lightly with cooking spray.
  • Combine the chocolate and condensed milk in a large saucepan over medium-low heat. Cook, stirring frequently, until the chocolate is melted and the mixture is thick and smooth, 2 to 3 minutes. Remove from the heat. Add the marshmallow creme and butter and stir until completely combined and no streaks remain. Stir in the walnuts until evenly dispersed.
  • Transfer the mixture to the prepared cake pan. Smooth with a rubber spatula into an even layer. Refrigerate until firm, 2 to 3 hours.
  • Use the foil overhang to remove the fudge from the pan. Cut into small squares. The fudge can be refrigerated in an airtight container up to 5 days.

This is a recipe that my Mom always makes for special occasions when she is limited for time. It can be made way ahead and stored in the freezer. A great dessert to have on hand for summertime entertaining. Everyone loves it!

Number Of Ingredients 8

1 gallon vanilla ice cream or 1 gallon vanilla frozen yogurt (softened)
1 box vanilla wafer cookie
pecans or walnuts, chopped (any amount you wish to add)
1 cup chocolate chips
1/2 cup butter
2 cups powdered sugar
1 1/2 cups evaporated milk
1 teaspoon vanilla extract

Steps:

  • Fudge sauce: Melt chocolate chips and butter in saucepan.
  • Add sugar and milk.
  • Bring to a boil and cook till thick and smooth around 5-7 minutes.
  • Stir constantly.
  • Remove from heat and add vanilla extract.
  • Line a 9X13 pan (bottom and sides) with whole vanilla wafers.
  • Dip half of softened ice cream onto cookies, smoothing it flat layer.
  • Add half of fudge sauce and sprinkle with some of the nuts.
  • Add the rest of the ice cream over the fudge sauce and smooth again for the next layer.
  • Add remaining fudge sauce and and top with remaining nuts.
  • Freeze for at least 2 hours.
  • This can be made in advance and stored in the freezer for company.

3 cups semi-sweet chocolate chips (18 oz.)
2 cups butter (one pound diced)
2 1/4 cups granulated sugar
1 cup boiling water
9 large eggs
whipping cream, for garnish.
cocoa powder, for dusting pan

Steps:

  • Preheat your oven to 250 degrees.
  • Lightly grease a 9 inch spring form pan with some butter.
  • Dust pan with cocoa powder.
  • Set aside.
  • In a large saucepot mix the chocolate chips, butter pieces, sugar, and boiling water.
  • Over med.
  • heat stir, and cook until melted and nice and smooth.
  • Remove from the heat.
  • Whisk in the eggs one at a time, until blended.
  • Pour into prepared springform pan.
  • Place pan on top of a baking sheet and place in preheated oven.
  • Bake for 2 hours.
  • Turn off oven.
  • With oven door open let cool in oven for 40 minutes.
  • Remove and cool completely on a wire rack.
  • Top will crack and cake will flatten possibly, but thats okay-- Remove from sides of pan, and turn cake top side down on plastic wrap.
  • Remove bottom of pan.
  • Cover with plastic and freeze on a baking tray overnite (12 hours or more) To serve slice in thin slices and garnish with whipped cream, fresh berries, and dusting of cocoa powder-- Serve frozen--.

Unsweetened baking cocoa
1 cup granulated sugar
1 cup butter or margarine, softened
2 tablespoons raspberry liqueur or raspberry syrup
6 eggs
1 bag (6 oz) semisweet chocolate chips (1 cup), melted, cooled
1/2 cup plus 1 tablespoon Gold Medal™ all-purpose flour
2 packages (12 oz each) frozen raspberries in syrup, thawed
1/2 cup butter or margarine, softened
2 tablespoons powdered sugar
4 oz white chocolate baking bars (from 6-oz package), melted, cooled
1/8 teaspoon vanilla
2 oz white chocolate baking bars (from 6-oz package), melted, cooled
Hot fudge sauce or topping, if desired

Steps:

  • Heat oven to 400°F. Grease bottoms and sides of two 8-inch round cake pans; sprinkle with cocoa. In small bowl, beat granulated sugar and 1 cup butter with electric mixer on medium speed until smooth. Beat in liqueur, eggs and melted semisweet chocolate. Stir in flour. Pour into pans.
  • Bake about 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling rack. Cool completely.
  • Place raspberries in blender or food processor. Cover and blend on high speed, stopping blender occasionally to scrape sides, until almost smooth; strain.
  • To make filling, in small bowl, beat 1/2 cup butter and the powdered sugar with electric mixer on medium speed until light and fluffy. Beat in 4 ounces white chocolate and the vanilla until smooth.
  • Place 1 cake layer on serving plate; spread with filling. Make about 1/4-inch deep ring in filling 1 inch from edge of cake, using tip of spoon. Make another 1/4-inch-deep ring 1 inch inside outer ring. Fill each ring with about 5 tablespoons raspberry puree. Place second cake layer on filling. Drizzle melted white chocolate over top of cake.
  • Refrigerate uncovered about 10 minutes or until white chocolate is set. Cover with plastic wrap and refrigerate at least 3 hours until filling is firm. Serve with remaining raspberry puree and fudge sauce. Store in refrigerator.

  • Combine 1 1/2 cups sugar, 6 Tbsp. butter, and 1/3 cup milk in heavy 1 1/2 quart saucepan.
  • Bring to full rolling boil, stirring constantly.
  • Continue boiling 4 minutes over medium heat, stirring constantly.
  • Remove from heat; stir in chocolate pieces until melted.
  • Add 1 cup (1/2 jar) marshmallow cream and 1/2 tsp. vanilla; beat until blended.
  • Pour into greased 13 X 9 pan.
  • Repeat with remaining ingredients substituting peanut butter for chocolate pieces.
  • Spread over chocolate layer, cool at room temperature. Makes 3 lbs.
