FROZEN CUSTARD

Steps:
- Using a paring knife, split the vanilla bean in half. Use the back of the knife to gently scrape the caviar out of the bean and into a large saucepan. Add the vanilla bean, half-and-half and sugar and heat over low heat, stirring occasionally, until the sugar has completely dissolved. Remove from the heat and set aside.
- Whisk the egg yolks in a mixing bowl until pale yellow and slightly thick, 2 to 3 minutes. Temper the yolks by slowly drizzling a ladle of the hot half-and-half mixture into the bowl, whisking the whole time. Repeat with a second ladle of the hot half-and-half mixture, again whisking the whole time.
- Pour the tempered yolks back into the saucepan with the remaining half-and-half mixture and cook over low heat, stirring gently with a wooden spoon, until it's thick enough to coat the back of the spoon, 3 to 4 minutes.
- Set a fine-mesh strainer over a clean bowl. Pour the custard through the strainer into the bowl. Add the heavy cream to the strained mixture and stir everything together. Refrigerate until chilled, about 2 hours.
- Pour the chilled mix into an ice cream maker and freeze according to the manufacturer's directions. Transfer to a freezer-safe container and place in the freezer until frozen firm, at least 6 hours (but overnight is best for nice scoopable ice cream). Serve on its own or with warm apple crisp.
FROZEN CUSTARD FRUIT DRINK
I grew up drinking Fruit Drinks from Frozen Custard in my home town. I found the recipe in my Mother in laws recipe box. This does taste very similar to the original recipe. Serve chilled over crushed ice to taste like their drink. Makes a gallon and 1/2.

- Let the frozen concentrates set on the counter for 1/2 hour before mixing.
- Mix all ingredients in a big bowl.
- Chill and serve over crushed ice.
- Enjoy.
- Makes a Gallon and 1/2 of drink.

FROZEN LEMONADE OR FRUIT JUICE SLUSHIES
An icy treat for hot weather! Kids will love this and parents will to. Things don't taste as sweet when cold so people who like sweeter lemonade will want extra sweetener while those who prefer a tarter drink will not. Adults may enjoy the optional rum or whiskey. Any excess may be frozen in popsicle molds. Variation: Try frozen juice concentrates instead of the lemonade concentrate. I like grapefruit, my kids like grape. Try orange slushies for a summer brunch.

- Load blender with ice cubes to the 4 1/2 cup mark.
- Add lemonade concentrate and optional sweetener if used.
- Fill blender with cold water to the 5 cup mark.
- Blend on whatever speed your blender recommends for crushing ice until smooth and slushy.
- Divide into serving glasses (it will have a texture resembling soft-serve ice cream), and garnish with lemon slices. A spoon may be necessary.
- A shot of rum or whiskey may be poured overtop an individual serving or, if only adults are partaking, rum or whiskey can be added to the blender before the water.

SHAKE, SMOOTHIE... FROZEN FRUIT DRINK
This is something we have all the time. We freeze the fruit in advance so its always on hand. Mmmmm! You can use just regular milk, or the coconut milk. It's not as creamy though. We use whatever fruit we feel like. If your blender can't handle the thickness, use your food processor. NOTE: ALL AMOUNTS ARE GUESSES! Use what looks right.

- Put coconut milk in blender, add fruit. Pulse.
- As fruit blends, it will most likely become too thick for your blender to handle, and that's when you add enough milk to keep it going.
- When everything is smooth, add your choice of sweetener. Enjoy your 'fruit ice cream'!
