EASY ONE-BOWL CRANBERRY ORANGE LOAF



Easy One-Bowl Cranberry Orange Loaf image

This easy cranberry orange loaf mixes up in just one bowl, with no mixer needed. No need to soften the butter, either! Makes one 9x5-inch loaf.

2 cups all purpose flour
1 cup white granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/4 cup butter (cold, salted or unsalted)
Zest of 1 large orange
3/4 cup freshly squeezed orange juice (from 1 large orange, plus water, as needed *See Note 1 below)
1 large egg (well beaten before adding *See Note 2 below)
1 - 1 1/2 cup raw cranberries (whole or chopped, fresh or frozen)
1 cup icing/confectioners' sugar
1 Tablespoon freshly squeezed orange juice (or water, if you don't have any more oranges)
1/4 teaspoon orange zest (optional)

Steps:

  • Preheat oven to 350F (regular bake setting/not fan assisted), with rack in the centre of the oven. Grease a 9x5-inch loaf pan and set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Cut the butter into 4 pieces and add to the dry ingredients. Using your fingertips, rub the cold butter into the flour mixture, breaking it up as you go, until you have an evenly crumbly mixture resembling corn meal.
  • Remove the zest from the orange and set aside for now. In a 2-cup measuring cup, add the juice from the orange. Add enough water to the measuring cup to fill up to the 3/4 cup mark. add the orange zest and the well beaten egg to the measuring cup and stir to combine. Pour the orange juice mixture all at once into the dry ingredients. Using a wooden spoon, mix together just enough to dampen all the flour. Gently stir in the cranberries. (I like to dust frozen cranberries with a tiny bit of flour before adding to the dough).
  • Spoon the batter into a greased 9x5-inch loaf pan and bake in preheated oven for about 1 hour, or until a tester inserted in the centre comes out clean. (Starting with frozen cranberries may need a few extra minutes of baking. Also note that darker pans will bake more quickly. So watch closely near the end of baking, but don't be afraid to bake a little longer, if needed).
  • Allow the loaf to cool in the pan for 10 minutes, then run a knife around the side of the pan and turn out/remove from pan and allow to cool completely on a wire rack to cool completely.
  • Once cooled completely, prepare glaze by stirring together the glaze ingredients until smooth. Place a piece of waxed paper or paper towel under the cooling rack to catch drips, then spoon the glaze over the cooled loaf, spooning it onto the top and letting it run down the side. Allow to stand until the glaze sets (about 30 minutes) before slicing.

This delicious cranberry quick bread combines tart cranberries with lovely lemon. Lightly sweet and moist loaf, with a tangy lemon glaze.

Number Of Ingredients 11

1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp fine salt (reduce to 1/4 tsp if using salted butter)
6 Tbsp unsalted butter (at room temperature)
1 cup white granulated sugar
Zest of 1 lemon (about 1 Tbsp)
2 large eggs (1 at a time, at room temperature)
1/2 cup milk (whole milk (3%) recommended)
1 cup fresh cranberries (*see Note 1 for using frozen or dried cranberries)
1/2 cup icing/confectioners' sugar
2-3 Tbsp lemon juice

Steps:

  • Preheat oven to 325F (regular bake/not fan assisted). Grease an 8x4 or 4x10 loaf pan and line the bottom and long sides with a sheet of parchment paper that extends over the sides by an inch or so (for easy removal). Set aside.
  • In a medium bowl, whisk together the flour, baking powder and salt. Set aside about 2 tsp of flour to dust the cranberries later.
  • In a large bowl with an electric mixer or the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar at medium-low speed, until lightened in colour, about 1-2 minutes. Mix in the lemon zest.
  • Add the eggs, one at a time, mixing well after each addition and scraping down the bowl as needed.
  • Add the flour mixture, alternately with the milk, mixing until well combined.
  • Toss the cranberries with the reserved 2 tsp of flour, then gently fold the cranberries into the batter. Pour the batter into the prepared loaf pan. Smooth top of batter.
  • Bake in a preheated 325F for 50-60 minutes, or until lightly golden in colour and a tester comes out clean. (mine took 55 min in light coloured 4x10 loaf pan.
  • Remove from oven and allow to cool in pan for 5 minutes, before lifting onto a wire rack using the parchment paper (allow to cool 10 minutes if not using parchment). Peel off parchment and allow to cool completely before drizzling the glaze over-top.
  • To prepare the glaze, combine the icing sugar and lemon juice, adding enough lemon juice until you have a glaze that is just thin enough to pour off a spoon. Drizzle over cooled cake, then let stand 20-30 minutes to allow the glaze to set before slicing.

1/3 cup sugar
1 package (1/4 ounce) quick-rise yeast
1/2 teaspoon salt
3 to 3-1/2 cups all-purpose flour
1/2 cup water
1/2 cup 2% milk
1/3 cup butter, cubed
FILLING:
1 cup chopped fresh or frozen cranberries
1/4 cup packed brown sugar
1/4 cup water
1 tablespoon butter
1 tablespoon lemon juice
1/2 cup chopped walnuts, optional
TOPPING:
2 tablespoons all-purpose flour
2 tablespoons sugar
2 tablespoons cold butter, divided
GLAZE (optional):
1/2 cup confectioners' sugar
2 teaspoons 2% milk

Steps:

  • In a large bowl, mix sugar, yeast, salt and 1 cup flour. In a small saucepan, heat water, milk and butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, in a small saucepan, combine cranberries, brown sugar and water. Cook over medium heat until cranberries are soft, about 15 minutes. Remove from heat; stir in butter, lemon juice and, if desired, walnuts. Cool., Punch down dough. Turn onto a lightly floured surface; roll into a 20x10-in. rectangle. Spread filling to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Transfer to a greased 9x5-in. loaf pan, arranging in a slight zigzag fashion to fit., For topping, in a small bowl, combine flour and sugar; cut in 1 tablespoon butter until crumbly. Melt remaining butter; brush over dough. Sprinkle with crumb mixture. Cover with a towel; let rise in a warm place until doubled, about 40 minutes. Preheat oven to 350°., Bake until golden brown and dough is cooked through, 40-45 minutes. Carefully remove from pan to a wire rack to cool. If desired, combine glaze ingredients; drizzle over bread.

3/4 cup dried sweetened cranberries (3 oz)
1/3 cup sour cherry jam or 1/3 cup preserves
1 1/2 tablespoons granulated sugar
1/8 teaspoon almond extract
2 cups all-purpose white flour, plus
2 tablespoons all-purpose white flour
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
2/3 cup unsalted butter, slightly softened
1 large egg
2 1/4 teaspoons vanilla extract
1/2 teaspoon almond extract

Steps:

  • In a food processor, process the cranberries, jam or preserves, and sugar until coarsely pureed.
  • Transfer the mixture to a small, heavy saucepan.
  • Cook over medium high heat, stirring occasionally, until it just comes to a boil, immediately remove from the heat.
  • Let stand until cooled slightly. Stir in the almond extract.
  • Cover and refrigerate for at least 1 hour, or until well chilled, or freeze for 30 minutes, to speed chilling.(the filling may be refrigerated for up to 4 days, return to room temperature before using.
  • DOUGH:.
  • In a medium bowl, thoroughly stir together the flour, baking powder and salt; set aside. In a large bowl, with an electric mixer on medium speed, beat together the sugar and butter until well blended and smooth. Add the egg, vanilla and almond extract and beat till well blended. Beat or stir in flour mixture just until evenly incorporated. Let the dough stand for 10 minutes, or until firmed up slightly.
  • Line a 4 1/2"x8 1/2" loaf pan with aluminum foil, letting the foil overhang the long sides by about 3", this will keep the plastic wrap surrounding the dough from sticking to the pan. On top of the foil, line the pan with two long sheets of plastic wrap laid crosswise, overlapping the middle and overhanging the longer sides by almost 4". Divide the dough into 4 portions. Working on a large sheet of wax paper, roughly pat each portion into the shape of the loaf pan. Pat one dough portion firmly into the pan bottom, forming a smooth, even layer. Using a rubber spatula, spread one third of the filling over the dough in the pan, the filling may seem stiff, but spread it as evenly as possible. Repeat the layers, using all four dough portions and all the fruit filling. Fold the plastic wrap over the dough. Freeze until the loaf is cold and very firm, at least 1 1/2 hours and preferably longer.The dough can then be transferred to a plastic bag and frozen for up to one month.
  • Preheat the oven to 350*. Greaze several baking sheets or use nonstick spray.
  • Carefully peel the plastic wrap from the loaf. .using a large, sharp knife, trim off and discard the excess dough so the sides of the loaf are straight up and down, rather than flared; wipe the knife clean between cuts (if the loaf is too hard to cut easily, let stand for a few minutes, don't let it thaw too much, or it will be more difficult to slice cleanly. Carefully cut the loaf crosswise into thirds, forming three 2 3/4x4" blocks. Working with one block at a time, keep others refrigerated, cut each third into 1/4" slices to produce 2 3/4" long ribbons, wipe the knife clean between cuts. Using a spatula, carefully transfer the slices to the baking sheets, placing them cut side up about 2" apart. Bake the cookies, one sheet at a time in the upper third of the oven, reversing sheets halfway through baking from front to back to ensure even browning for 9-14 minutes or just until slightly darker at the edges. Using a spatula, immediately transfer the cookies to wire racks to cool completely. Store in an airtight container for up to 1 week or freeze for up to one month.
