CAPPUCCINO PIE
This rich and indulgent no bake dessert recipe, frozen Cappuccino Pie, is the ultimate summer treat! It's an easy pie recipe that's always a crowd pleaser!

- For Chocolate Cookie Crust: Place cookies in food processor and blend until fine cookie crumbs are formed. Add melted butter, and pulse food processor 3-4 additional times. Spray a 9-inch deep dish pie plate with baking spray and press the cookie crumb mixture into the bottom and up the sides of the pie plate. Place pie plate in freezer to chill for 10-15 minutes.
- For Cappuccino Pie: Chill a large metal or glass bowl and wire whisk in the freezer for 15 minutes.
- Meanwhile, in a large bowl, whisk together milk, coffee, pudding mix and ½ cup heavy cream. Set aside.
- Add remaining 1½ cups heavy cream, powdered sugar and vanilla to chilled bowl. Using a large hand-held whisk or an electric mixer, whip cream until it begins to thicken. Continue to whip cream until soft peaks begin to form. Use caution and do not over mix.
- Fold half of the whipped cream mixture into the pudding mixture, being careful not to over mix. Pour pie filling into prepared pie crust and store remaining whipped cream in refrigerator until ready to serve.
- Place pie in freezer and freeze for 4-6 hours, or until frozen. When ready to serve, remove pie from freezer and let sit at room temperature for 15 minutes.
- Meanwhile, place 8-10 chocolate sandwich cookies in food processor and blend until large cookie crumbs are formed.
- Right before slicing, spread remaining whipped cream on top of pie and top with large cookie pieces. Slice and serve immediately.

This recipe came from an estate sale, purchased in Azle, TX in 1984. Very easy and delicious. Posted for Summer '09 Comfort Cafe. Cook time is chill time.

- Beat the cream cheese with an electric mixer on medium speed until fluffy. Add condensed milk and 4 tablespoons of the chocolate syrup. Beat on low speed until well blended.
- In a separate bowl, dissolve the coffee powder in the hot water, then stir into cream cheese mixture. Fold in the whipped topping, and pour this mixture into the crust.
- Cover and freeze overnight. Before serving let stand in the refrigerator for 30 minutes, then drizzle with the remaining chocolate syrup.

- Preheat oven to 350°F.
- TO PREPARE THE CRUST: Combine first 3 ingredients, and toss with a fork until moist. Press into bottom and up sides of a 9-inch pie plate coated with cooking spray. Bake at 350F for 8 minutes. Cool on a wire rack. Place crust in freezer.
- TO PREPARE FILLING: Place a large bowl in freezer. Combine coffee granules and boiling water in a small bowl; stir until coffee dissolves. Add 3 tablespoons fudge toppng; stir well. Set asside.
- Spoon ice cream into chilled bowl, and stir in fudge topping mixture. Spoon ice cream mixture into chilled crust; freeze 30 minutes. Cover with plastic wrap; freeze 4 hours or until set. Place pie in refrigerator 20 minutes before serving to soften. Serve pie with 9-tablespoons fudge topping, and garnish with coffee beans, if desired.

A co-worker brought this in for my birthday and I had to get the recipe from him because it was delicious! I'm not a coffee drinker so the amount of coffee flavor was perfect for me, but you may want to add more...so feel free to do so! Cooking time is freezing time.

- Arrange graham crackers in the bottom of a 13 x 9 pan, breaking crackers to fit if necessary.
- Beat cream cheese in a large bowl with an electric mixer on low speed until smooth.
- Beat in 1 cup of the milk.
- Add remaining milk, pudding mixes, instant coffee and cinnamon.
- Beat 1 to 2 minutes or until well blended (mixture will be thick).
- Gently stir in 2 cups of whipped topping.
