Frosted Brownies With Walnuts image

A healthier, gluten free brownie with fudgy, Greek yogurt frosting.

1 package brownie mix (I used Bob's Red Mill 21 oz. Gluten Free Brownie Mix)
3/4 cup melted coconut oil
1 large egg
2 teaspoons vanilla bean paste (or vanilla extract)
3/4 cup warm water
6 ounces semi-sweet (good quality chocolate)
1 cup lowfat Greek yogurt (room temperature)
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350°F.
  • Prepare the brownie mix according to package instructions except use melted coconut oil instead of melted butter. Mix together by hand in a large bowl until completely incorporated and smooth, but don't over mix. Pour batter into a greased 13x9 baking pan. Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean. Let cool completely.
  • Melt chocolate in a glass or metal bowl set over a pot of simmering hot water. Gradually blend in yogurt and it's ready to spread. Frost brownies, then sprinkle with walnuts. Serve immediately or store covered in the refrigerator for up to a week.

Steps:

  • In a small saucepan over low heat, melt the butter and chocolate chips, stirring until smooth. Cool. Add pecans; stir until well-coated. In a large bowl, combine the eggs, sugar, flour and vanilla. Fold in chocolate mixture. , Fill paper-lined muffin cups two-thirds full. Bake at 325° for 35-38 minutes or until a toothpick inserted in the center comes out clean. Remove from pans to wire racks to cool.

1/2 cup . unsalted butter, melted
1/4 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup coarsely chopped walnuts, lightly toasted
2 (1 ounce) unsweetened chocolate squares, coarsely chopped
3 tablespoons unsalted butter, cut into pieces
1 1/2 cups powdered sugar, sifted, divided
1 -2 tablespoon milk
1/2 teaspoon vanilla extract
salt, a pinch

Steps:

  • Preheat oven to 350°.
  • Position oven rack in lower third of the oven.
  • Spray the bottom only of an 8-inch square baking pan with nonstick cooking spray.
  • In a bowl, mix the brownie mix, melted butter, buttermilk, eggs, and extracts with a wooden spoon until just blended and all dry ingredients are moistened; stir in the walnuts.
  • Spread batter into prepared pan.
  • Bake 40-44 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean (do not overbake).
  • Transfer to a wire rack and cool completely.
  • Frosting--in a double boiler, melt the chopped chocolate with the butter; cook and stir until melted and smooth.
  • Remove from heat and cool 10 minutes.
  • In a bowl, mix the melted chocolate, 1/2 cup powdered sugar, 1 tablespoon milk, vanilla, and a pinch of salt with an electric mixer set on medium until blended.
  • Add the remaining powdered sugar, 1/2 cup at a time, beating on medium until blended and smooth.
  • Add a few more drops milk if necessary, to make the frosting spreading consistency.
  • Spread frosting over cooled brownies.
  • Cut into squares.

Steps:

  • BROWNIE LOAF DIRECTIONS:.
  • Preheat oven to 325 degrees (glass) or 350 degrees (metal).
  • Cream butter, sugars and vanilla.
  • Add eggs one at a time, beating until mixture is light and fluffy.
  • Combine dry ingredients; add to creamed mixture in thirds, alternating with yogurt.
  • Stir in chopped walnuts.
  • Pour into greased and floured 9 x 5 x 3 loaf pan. Bake at 325 degrees (glass) or at 350 degrees (metal) for 65-75 minutes, or until cake springs back when lightly touched ~ top may be cracked.
  • Cool in pan 10 minutes. Invert onto wire rack and cool completely. Frost with cocoa fudge frosting.
  • COCOA FUDGE FROSTING DIRECTIONS:.
  • Melt butter. Combine butter with cocoa, sugar, milk and vanilla; beat until smooth and creamy, adding additional powdered sugar if necessary for spreading consistency.
  • Frost cooled brownie loaf and garnish top with coarsely chopped walnuts.
