Steps:
- Heat oven to 350°F. In large bowl, combine cake mix, sour cream, 3 tablespoons cherry juice, almond and egg; stir until well blended. Fold in chopped cherries. Drop by teaspoonfuls onto ungreased cookie sheet. Bake for 10 minutes or until edges are light brown. Let cool completely before you add frosting. In small bowl, combine all frosting ingredients, except maraschino cherries, adding enough milk for spreading consistency. Frost cooled cookies. Top with cherry piece
COCONUT CHERRY DROPS
My momma has been making these since I was little at Christmas time. They were MY favorite, therefore, Santa got them every year also! I now make them every year for me and my husband. I hope you enjoy them.

Steps:
- 1. Preheat oven to 350 degrees.
- 2. With mixer, cream together butter, sugar, almond extract,and egg .
- 3. Add, mixing on low, flour, baking powder, salt, until just combined.
- 4. With a spoon or spatula, fold in coconut nuts and cherries.
- 5. Drop by teaspoon-ful onto cookie sheets. These will not spread out and flatten. Bake 10 - 15 minutes. Until bottom barely starts to brown.
JAM DROPS
Lovely soft biscuits (cookies) ideal for morning or afternoon tea. I find berry jam (jelly in US) gives the best flavour, eg raspberry, blackberry, fruits of the forest, etc, although you could use other flavours or probably even marmalade, etc. It's up to you whether you use smooth jam or a chunky conserve - I just use whatever I've got (these are a great way to use up all the almost-empty jars at the back of your pantry!) I usually make a mixed batch, half 1 flavour jam & half another, for variety. NB Aussie recipe - 1 cup = 250ml

Steps:
- Cream butter and sugar.
- Add eggs and beat well.
- Add sifted dry ingredients and mix well. (The dough will be quite sticky).
- Place teaspoonfuls approx 4cm apart onto a baking sheet either greased or lined with baking paper.
- Make an indentation in the top of each biscuit (I use 2 teaspoons to "dig" a little hole) and fill with your choice of jam.
- Bake at 180deg C for 15 mins or until lightly golden.
- Cool on wire rack and enjoy!
CHOCOLATE CHERRY DROP COOKIES
These cookies are very soft and tasty. They're more of a Christmas cookie, but can be served all year 'round.

- Preheat oven to 350°F.
- In a large bowl, stir together hot cocoa mix and water.
- Add the flour, cocoa powder, cinnamon, and salt.
- In a separate bowl, add butter, sugar and egg.
- Combine thoroughly, and add this mixture to the dry ingredients.
- Beat on high until thoroughly combined.
- Drop by heaping teaspoonfuls onto a lightly greased cookie sheet about 2-inch apart.
- Press a cherry into each cookie.
- Bake in oven for 12-14 minutes.
- Cookies may seem soft when taken out, but they will firm up as they cool.

So simple and easy to make, this is an ideal cookie to gift to older folks who have difficulty chewing. This was mom's favorite cookie to make and my DH's favorite to eat!! A 10 oz. jar of Maraschino Cherries should be enough for the entire batch of cookies.

- Preheat oven to 350 degrees.
- In large bowl, combine all ingredients EXCEPT cherries; stir until well blended.
- Fold in cherries.
- Drop by teaspoonfuls 2 inches apart onto ungreased cookie sheets.
- Bake at 350 degrees for 8 to 12 minutes or until edges are light golden brown.
- Cool for 1 minute; remove from cookie sheets.
- Cool completely.

CHERRY FROSTING
Frosts a 13 X 9- inch cake or fills and frosts (two) 8- or 9-inch cake layers or 24 cupcakes. Adjust to consistency you like by adding more liquid or more powdered sugar. If your powdered sugar is lumpy you might want to sift it before whipping it. If you use milk instead of the cherry juice you might want to add a few drops of red food coloring.

- Place a rack in center of oven.
- Preheat oven to 325°F.
- Set aside an ungreased tube pan.
- Dump angel food cake mix in large mixing bowl.
- Drain juice from maraschino cherries, reserving 1 tbsp for frosting.
- To remaining maraschino cherry juice, add enough water to equal 1 1/4 cups liquid.
- Pour this liquid along with almond and vanilla extract into dry cake mix in bowl.
- Beat with electric mixer on low for 1 minute and stop and scrape down sides of bowl with rubber spatula. Increase speed to medium and beat for 1 minute more.Scraping down sides of bowl if necessary. Batter should look well blended.
- Pour batter into pan.smoothing top with rubber spatula.
- Place pan in oven on rack and bake till deeply browned and top springs back when lightly touched with fingers, about 38-42 minutes.
- Remove from oven and immediately invert onto a glass bottle neck upside down to cool for 1 hour.
- Remove from bottle and run a long knife around sides of cake.
- Invert onto cooling rack and then invert onto serving platter.
- Prepare cherry fluff frosting.
- Place reserved cherry juice, sugar, and egg white into a medium size saucepan.
- Cook over low heat, beating continuously with electic mixer on high speed, till soft peaks forms (2-3 minutes).
- Remove pan from heat and add marshmallow cream and beat with electric mixer on high till stiff peaks form.about 2 minutes. Fold in chopped cherries, is using.
- Spread frosting over top and halfway down sides of angel food cake and serve immediately.
- We usually don't have any leftovers, so I am not sure how well this stores.
