Steps:
- Preheat oven to 350 degrees F. Grease a 9 inch square baking pan.
- To make crust: In a large bowl, cream shortening, white sugar and brown sugar. Separate egg and beat in yolk and vanilla, stirring until well blended. Slowly add in the flour and blend well. Mixture will be stiff.
- Press dough evenly into baking pan. Bake for 18 to 20 minutes, or until top is golden brown.
- Melt the chocolate in a double boiler over low heat. Spread the melted chocolate over warm crust. Sprinkle top with almonds. Let cool on wire rack before cutting.

- Preheat oven to 350 degrees F (175 degrees C).
- Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add egg yolk (reserve egg white), almond paste, and flavoring; beat until well blended. Stir in flour.
- Spread mixture in a 13 x 9 x 2 inch baking pan. Beat egg white (at room temperature) until foamy; brush over entire surface of dough, and sprinkle with almonds. Bake for 35 minutes or until lightly browned. Cool thoroughly, and cut into 2 inch squares. Store in airtight containers.

- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, cream butter and sugar. Add egg and almond extract; mix until fluffy. Stir in flour, baking powder and salt; mix well.
- Divide dough into 4 pieces, and roll each one into a log about 12 inches long. Place 2 logs per cookie sheet 4 to 5 inches apart. Flatten each roll by hand until it is about 3 inches wide. Brush flattened roll with milk and sprinkle with sliced almonds.
- Bake in preheated oven 12 to 15 minutes or until edges are slightly browned. While the cookies are still warm, cut them crosswise at a diagonal, into slices about 1 inch wide. When cool, drizzle with almond icing.
- Almond icing: In a small bowl, stir together powdered sugar, almond extract, and milk until smooth. Drizzle over the cookies.

I make these every Christmas for the cookie tray that I always have well stocked for our family's annual Christmas party. This is such a simple recipe with a few common ingredients that most people always have on hand in their kitchen pantry. And it produces such a wonderful bar cookie with a delectible almond taste. It's the perfect treat for any cookie exchange or potluck gathering.

- Beat together the eggs and sugar until lemon-colored. Add the butter, flour, and almond extract; mix well.
- Spread the batter in an even layer on a buttered 13x9-inch baking pan. Sprinkle the top of the batter with sliced amonds if you wish; otherwise leave the top as is.
- Bake at 325° for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Remove pan from the oven and dust the top with a light sprinkling of confectioner's sugar, if you wish. Leave cookies in the pan to cool completely.
- When cooled, cut into bars. (I usually cut 9 vertical rows and 4 horizontal rows, to get 36 bar cookies.).

Steps:
- Set oven to 350 degrees.
- Grease an 11x16 inch jelly roll pan.
- In an electric mixer cream the butter and sugar until light.
- Add the egg yolk and vanilla.
- With the mixer set on its lowest speed, beat in the flour.
- Pat the batter into the prepared pan, pressing it into the corners.
- Beat the white until frothy.
- Spread the white on the batter and sprinkle it with almonds.
- Transfer the pan to the hot oven and bake the mixture for 15 to 18 minutes or until it is golden brown.
- Cut into 48 pieces (diamonds, squares).
- Transfer to a wire rack to cool completely.
- Store in an airtight container.

- Mix the 2 sticks of butter, 2 cups of flour, and 1/2 cup of sugar.
- Pat in a 9 by 13 pan. Bake at 350 degrees for 15 minutes.
- Beat the cream cheese, 2 eggs, 1/2 cup sugar, and 1 t. almond extract until creamy.
- Pour over crust.
- Bake at 350 degrees for 15 minutes.
- Cool.
- Mix together 3 cups powdered sugar, 1 stick of butter, 3 T. milk, and 1-2 t. almond extract.
- Beat with mixer.

I have been baking these cookies for about 15 years now; I get so many requests for them during the holidays I can hardly keep up with the demand! I like to make the rolls bigger than the recommended 12x3-inch; this way I get bigger cookies, but you can do whatever you like. Make sure to use plenty of almonds to top them off.

- Preheat the oven to 350 degrees F.
- In medium bowl combine flour, baking powder and salt. In a mixer beat together the butter and sugar until fluffy. Add egg and almond extract and beat well. Slowly add flour mixture and beat until combined, scraping down the sides of the bowl as necessary. Turn the dough onto a clean work surface, and, with a sharp knife, divide the dough into 4 even pieces. Roll each piece into a 12 by 3-inch roll (or whatever size you like).
- Place 2 rolls on an ungreased cookie sheet, 4 inches apart. Repeat with remaining rolls. Brush rolls with milk and sprinkle with almonds. - For the glaze:
- In a small bowl, mix the sugar and milk until smooth. Drizzle over almond cookies. Let sit until glaze is set, about 15 minutes.

- Preheat oven to 325°.
- Stir together flour, baking powder and salt.
- In a large bowl beat margarine or butter till softened.
- Add sugar and beat till fluffy.
- Add egg and the 1/2 teaspoon of almond extract and beat well.
- Add the flour mixture and beat till well mixed.
- Divide the dough into fourths, form each portion into a 12 inch roll.
- Place 2 of the rolls 4 to 5-inches apart on an ungreased cookie sheet.
- Flatten each roll till it is about 3 inches wide.
- Repeat with the remaining rolls.
- Brush each flattened roll with milk and sprinkle about 2 tablespoons of almonds each.
- Bake in a 325° oven for 12-14 minutes or till edges are lightly brown.
- While still warm, cut crosswise on the diagonal into 1 inch strips.
- Cool completely on a wire rack.

- In the large bowl of an electric mixer, combine the flour, sugar, egg, and butter. Mix at low speed until mixture is crumbly. Press mixture into a 13 x 9 inch pan, working it up the sides of the pan about 1/2 inch. Bake 20 minutes until pale golden.

- Preheat oven to 350 degrees. Butter an 8-inch square baking dish. In a bowl, whisk together flour, cinnamon, salt, and baking powder.
- In a mixing bowl, cream butter and sugars on high speed until light and fluffy; beat in egg yolk. Reduce speed to low; gradually mix in flour mixture. Stir in almonds.
- In a small bowl, whisk jam to loosen. (Stirring the jam with a fork or a whisk will enable it to spread smoothly over the dough.) Gently press half of dough into bottom of prepared dish. - Ingrediants... You are going to need: 4 Cups Almonds (get them in bulk at Sam's or BJ's, it's way cheaper than the grocery store) 1 Egg (Separated, you only need the white)
- Preheat and Prep Your Egg. Pre-Heat your oven to 250. Separate the egg white from the yolk. You have to crack the egg and kinda slosh the yolk from shell to shell until all the white falls into your bowl.
- Prep the Almonds. Pour the frothy egg white over the almonds and mix them thoroughly. You want to make sure that each almond is slathered in the egg white.
- Bake. Pour the coated almonds out on an ungreased cookie sheet and spread evenly. Put in the oven and bake for an hour. About halfway through, take them out and stir them up.
