EASY SPANISH CHURROS
Steps:
- Cover and bring the mixture to a boil.
- Once the water mixture reaches a boil, slowly pour it into the flour mixture while stirring.
- Once the oil reaches 350 F or 375 F , carefully squeeze the dough into the hot oil.
- Place on a paper towel to drain.
- Cut the churros into manageable lengths.
- Serve immediately and enjoy.

CHURROS WITH DIPPING CHOCOLATE
This is a fairly traditional Spanish recipe for chocolate con churros. The churros are fritters and they are served with an intense chocolate sauce meant for dipping. This recipe is from Penelope Casas, who contributes recipes to many fine cooking publications. *You will need a pastry bag fitted with a 3/8 inch star tip* **Note - whenever deep frying, please be careful for oil splatters. If the heat of the oil gets too high, the oil could splatter and/or a churro could burst.**

Steps:
- Hot Chocolate Dipping Sauce:.
- Bring the water and sugar to a boil in a saucepan over med-high heat.
- Add the semisweet and bittersweet chocolate, cocoa and milk and lower the heat to med-low.
- Stir constantly with a wooden spoon until the chocolate is thick and smooth, about 5 minutes.
- Reserve.
- Churros:.
- Bring the water, oil and salt to a boil in a saucepan over med-high heat.
- Add the flour all at once and stir vigorously with a wooden spoon until a smooth ball forms.
- Lower the heat and cook, flattening and turning the dough for 2 minutes.
- Cool and transfer to a pastry bag fitted with a 3/8 inch star tip (the fluted edge is essential).
- Pour the oil to a depth of at least 1 inch in a skillet (or use a deep fryer) and heat on high until the oil quickly browns a cube of test bread.
- Squeeze 5 inch lengths of dough through the pastry tube into the oil - as many as will comfortably fit.
- Reduce the heat to med-high and fry until the churros puff and have barely begun to turn golden, about 20 seconds. *Do not overcook - the churros should be crunchy outside and soft within.*.
- Drain on paper towels. (If needed, you can keep them warm briefly in a 200 degee F. oven until ready to serve.).
- Dredge the churros in the sugar and arrange 4 on each plate.
- To serve, reheat the chocolate over very low heat and divide into 6 espresso or small cups placed off center on 6 dessert plates.
- Dip away!

- In a large saucepan, bring the water, milk, oil and salt to a boil. Add flour all at once and stir until a smooth ball forms. Transfer to a large bowl; let stand for 5 minutes. , Beat on medium-high speed for 1 minute or until the dough softens. Add egg and lemon zest; beat for 1-2 minutes. Set aside to cool. , In a deep cast-iron or heavy skillet, heat 1 in. oil to 375°. Insert a large star tip in a pastry bag; fill with dough. On a baking sheet, pipe dough into 4-in. strips. , Transfer strips to skillet and fry until golden brown on both sides. Drain on paper towels. Combine the sugar and cinnamon; sprinkle over churros. Serve warm.

- boil milk, water and salt in a large saucepan and when it starts to rise, add the flour, beating briskly all the time, so it doesn't form into lumps or sticks to pan.
- remove from fire, add egg white, and mix to a smooth paste.
- cool.
- fill a piping bag with the mixture, and pipe the mixture into very very hot oil, forming a wheel shape, until browned.
- to serve, place a bowl of sugar and dip the churros into it.

Steps:
- Bring the water, butter and milk to a boil. Add the flour and baking powder, stirring rapidly until a soft ball is formed and dough pulls away from the sides of the pan.
- With an electric mixer, beat in the eggs one at a time and then add the banana.
- Allow to cool for a few minutes and pipe into 2 - 4 inch tubes with a pastry bag filled with a star tip.
- Fry in 350°F oil until golden brown.
- Combine the cinnamon and sugar or if you would like more of a pronounced banana flavor use plain granulated sugar.
- While the churros are still warm, dust with cinnamon sugar.

AIR FRYER CHURROS
Who doesn't love churros? They're a delicious cinnamon-sugar treat, and making them in an air fryer takes them from a guilty treat into a sweet treat. After over 7 experiments, I do NOT recommend using a parchment paper liner. I do NOT recommend adding the cinnamon sugar to the dough.

Steps:
- Melt butter in a saucepan over medium-high heat. Pour in milk and add salt. Lower heat to medium and bring to a boil, continuously stirring with a wooden spoon. Quickly add flour all at once. Keep stirring until the dough comes together.
- Remove from heat and let cool for 5 to 7 minutes. Mix in eggs with the wooden spoon until pastry comes together. Spoon dough into a pastry bag fitted with a large star tip. Pipe dough into strips straight into the air fryer basket.
- Air fry churros at 340 degrees F (175 degrees C) for 5 minutes.
- Meanwhile combine sugar and cinnamon in a small bowl and pour onto a shallow plate.
- Remove fried churros from air fryer and roll in the cinnamon-sugar mixture.
