COTTAGE CHEESE APPLE PANCAKES
This recipe is from Moosewood Restaurant Cooks at Home. These pancakes are high in protein and very delicious. Keep the pancakes small, around 4 inches, because they are difficult to flip if they are any bigger.

Steps:
- Peel, core, and grate the apple into a mixing bowl.
- Thoroughly mix in the cottage cheese, eggs, cinnamon, nutmeg, maple syrup, and salt.
- Sprinkle in the flour and baking powder and stir well.
- Butter or oil a heavy griddle and place it on medium low heat.
- For each pancake, ladle 1/4 cup of the batter onto the skillet.
- When bubbles form on the tops and the bottoms are browned, flip the pancakes over and brown them on the other side.
- Serve topped with maple syrup or sour cream and fruit.

- Spray frying pan with non-stick cooking spray.
- Peel an apple and remove the core.
- Cut the apple into large chunks and place into heated frying pan.
- Cover for 5 minutes or until apple is cooked through and starting to brown on the edges.

- Pour over cooked apple and cover for another 5 minutes, or until it looks like a puffy pancake.

- To make cinnamon sugar: In a small bowl, mix together the 1/2 cup sugar and ground cinnamon; set aside.
- In a mixing bowl, add the cottage cheese, egg yolks, butter, and vanilla; stir to blend.
- Add in the apple, flour, sugar, and salt; stir to combine.
- In another bowl, beat the egg whites until soft peaks form.
- Fold the egg whites into the batter just until blended.
- Heat a large non-stick skillet or griddle.
- Brush skillet with a thin layer of vegetable oil or spray with non-stick cooking spray.
- Pour 1/4 cup batter onto skillet.
- Lower heat to medium-low.
- Cook until the tops are covered with small bubbles.
- Turn and lightly brown the other side.
- Repeat with the rest of the batter.
- Sprinkle warm pancakes with cinnamon sugar and serve with warmed apple sauce.

- In a large bowl, mix 1 ¼ cup of flour, 4 egg yolks, 3 grated apples, 1 cup of cottage cheese, 1 Tbsp honey, ¼ tsp cinnamon and a pinch of salt, stir until blended.
- In a separate, clean bowl, beat egg whites 1.5 minutes on high speed until foamy and soft peaks form. Fold the egg whites carefully into in the rest of the mix with a spatula.
- Add 2-3 Tbsp oil to a large nonstick skillet and preheat it to a med/high. Drop a tablespoon-full of the batter onto the hot oiled skillet and press it down slightly. Saute for 3-4 minutes per side until golden on each side.

- Add oats, egg whites, cottage cheese, applesauce, baking powder and cinnamon into a blender and process until the batter is relatively smooth with a thick consistency. Stir in diced apples.
- Once hot, scoop out about a quarter cup of batter at a time and pour onto pan. You should be able to make about 8 small pancakes.
- Cook until little bubbles form and the edges of the pancakes are solid enough to put a spatula underneath. Flip the pancakes and cook for one to two additional minutes.
