CRISPY ITALIAN FRIED POTATOES AND PEPPERS

Crispy Italian Fried Potatoes and Peppers image

A simple but special side dish of crispy browned potatoes and flavorful peppers.

Provided by Lisa

Categories     Side Dish

Time 45m

Number Of Ingredients 4

1/2 to 3/4 cup canola oil (or enough oil to come up to about 1/4 inch in your skillet)
5 large Idaho russet potatoes
4 long Italian green peppers (also called Italian frying peppers or Cubanelle peppers) ribs and seeds removed, cut into 1-inch by 2-inch pieces.
Kosher salt or Sea Salt, to taste (My favorite is Malden sea salt)

Steps:

  • Fill a large bowl halfway with cold water. Peel the potatoes and place them in the water as you go, to prevent discoloration.
  • Slice the potatoes thinly (1/8-1/4 inch thick) and place slices in the bowl of water, as you go. I recommend using a mandolin or a food processor with the slicing blade attachment. Or you can slice them by hand with a sharp knife.
  • Lay an absorbent dish towel on the counter and have another one or two handy. Drain the sliced potato in a mesh strainer and dump them onto a towel. Pat and blot them dry. They will brown better if you get them nice and dry.
  • Heat oil in a large skillet (preferably cast iron) over high heat, until hot but not smoking. Add the potato slices and immediately toss them until they're all coated with oil. Let the potatoes cook, undisturbed, for 3-5 minutes, or until the bottom pieces look brown around the edges. Mound the peppers on top and add a pinch or two of salt. Flip the potatoes over with a spatula, so some raw potatoes and peppers are on the bottom of the skillet. Leave them undisturbed for another 3-5 minutes, until they are nice and brown on the bottom. Continue to brown and toss potatoes for 5-10 minutes longer, until about half of them are crisp and brown and the rest are soft and creamy.
  • Serve hot. Season, to taste, with salt.

COUNTRY FRIED POTATOES WITH HATCH CHILES

Country Fried Potatoes with Hatch Chiles image

Spice up your life and kick up your breakfast potatoes a notch by adding Hatch chiles. I used fresh-frozen charred Hatch chiles, but you can use canned if fresh are not in season.

Categories     Side Dish     Potato Side Dish Recipes

Time 40m

Yield 2

Number Of Ingredients 6

2 Hatch chile peppers
2 tablespoons vegetable oil
1 large russet potato
½ medium onion, sliced
1 pinch seasoned salt (such as LAWRY'S®), or to taste
freshly cracked black pepper to taste

Steps:

  • Place Hatch chiles directly on the grates of a gas stove over medium heat. Cook, flipping with tongs occasionally, until blackened and charred, about 5 minutes. Place in a sealed plastic bag and allow to cool, 7 to 8 minutes. Peel off charred skins, remove seeds, and slice chiles.
  • Slice potato using a mandoline.
  • Heat oil in a large skillet over medium-high heat until shimmering. Add potato slices and fry undisturbed until starting to brown and soften, 8 to 12 minutes. Add onion slices and chiles. Season with seasoned salt and black pepper. Stir to combine. Cook until onions are translucent and potatoes are fully softened and browned on the second side, 5 to 8 minutes.

PAPAS FRITOS CON CHILIES (FRIED POTATOES WITH CHILIES)

Papas Fritos Con Chilies (Fried Potatoes With Chilies) image

This is a great potato patty, even with left over potatoes if they are fried (grate them). Most often made using left over mashed potatoes. It is not a hot dish using green mild chilies (can zip it up if you want with hot jalapeno). You can speed this recipe up with store bought mashed potatoes.

Time 30m

Yield 8 10 PIES, 4 serving(s)

Number Of Ingredients 9

2 cups mashed potatoes
1 teaspoon onion powder
1 whole fresh jalapeno, diced (optional)
1 (4 ounce) can diced green chilies (small can)
1 whole egg, beaten
1/2 cup flour
1 teaspoon salt and pepper
1/4 cup mixed peppers, red, bell, yelllow (optional) or 1/4 cup jalapeno pepper (optional)
1/4-1/2 cup oil

Steps:

  • Put left over potatoes in a bowl; season with salt and pepper, onion powder, and green chili to taste.
  • Add egg and flour; stir and mix (you don't want a wet patty).
  • Shape into patties (you can even dip in flour again for better crust).
  • Drop in hot oil; brown one side, turn and take out.
  • Serve with favorite salsa and eggs.
  • Great breakfast-this is good eats.

FRIED POTATOES WITH CHILE SAUCE

Fried Potatoes With Chile Sauce image

From the Border Cookbook, posted for ZWT 3, Mexico. Prep time does not include time needed to bake/boil potatoes. Make sure your dry chiles are mild - this is very spicy if you use the hot kind (I know this from personal experience!) As Kittencal said in her review, the sauce benefits from a day's chilling and flavor-blending time. (Note: When I made it with the really hot chiles, I added some tomato paste and a bit of sugar to the mix, which turned out fine.)

1 medium onion, chopped
3 garlic cloves, minced
1 cup red chili sauce (recipe included)
4 ounces grated asadero cheese (or monterey jack)
sour cream
green onion
cilantro
3 tablespoons vegetable oil
3 tablespoons fine textured dried breadcrumbs
2 garlic cloves, minced
1 1/2 teaspoons oregano
1/2 cup ground dried mild red chili peppers

  • Chile sauce:.
  • in a large heavy saucepan, warm the oil over medium heat. sprinkle in the breadcrumbs and brown briefly.

  • stir in the water slowly to avoid lumps and add the vinegar and salt.
  • bring the sauce to a boil, then reduce the heat to a simmer.

  • place the potatoes under the broiler just long enough for the cheese to melt.
  • serve immediately, topped with sour cream, green onions or cilantro if you wish.

Potatoes and Peppers image

This dish is a classic: Easy, filling, and very tasty! I served it as a side with grilled shrimp and corn on the cob and it was a huge hit. Would also be good at breakfast instead of hash browns.
