2 -3 cloves garlic
4 -5 potatoes, depending on size,peel &,slice thin
salt

2 cups grated muenster cheese
4 cups cream

Steps:

  • Preheat oven to 375 degrees.
  • Spray a 13 x 9 pan with oil.
  • Peel and cut garlic cloves in half or thirds.
  • Rub sides and bottom of dish with cut side of garlic cloves.
  • Leave garlic pieces in bottom of pan.
  • Layer half of potatoes in bottom of pan.
  • Salt and pepper.
  • Sprinkle with half the cheese.
  • Pour half the cream over potatoes.
  • Repeat layer.
  • Bake for 60 to 75 minutes until potatoes are done.
  • Push potatoes down into cream during the first 30 minutes of baking.
  • If top gets too brown cover with foil.

8 tablespoons unsalted butter, wrapper reserved
5 large Spanish onions, sliced about 1/4 inch thick
Kosher salt and freshly ground black pepper
About 3/4 cup beef stock
2 tablespoons sherry
2 teaspoons Dijon mustard
3 pounds Yukon gold potatoes
Kosher salt and freshly ground black pepper
1 pound Gruyere, shredded
8 ounces mozzarella, shredded
1 1/4 cups heavy cream
1 1/4 cups beef stock
One 4 1/2-ounce bag premade croutons, lightly crushed
One 3 1/2-ounce bag French fried onions

Steps:

  • For the caramelized onions: In a large saucepan over medium-high heat, melt the butter. Once melted and bubbling, add a large handful of the onions and cook until translucent, 1 to 2 minutes. Repeat until all the onions have been added. Season with a pinch of salt and black pepper. Reduce the heat to low and cook, stirring occasionally, until the onions turn medium brown, about 30 minutes. If the onions start to get too dark, add 1 to 2 tablespoons of beef stock as necessary. Add the sherry to deglaze the pan. Add the mustard and stir to coat. Season with salt and pepper. Remove from the heat and set aside.
  • For the potato gratin: Preheat the oven to 400 degrees F.
  • Using a mandoline or a sharp knife, cut the potatoes into thin slices. Do your best to keep the potatoes in a stack--this will make it easier to layer them in the pan. Set the potatoes aside.
  • Use the reserved butter wrapper to lightly grease the bottom and sides of a large (12-inch) cast-iron skillet. Discard the wrapper.
  • Arrange a thin shingled layer of potatoes in concentric circles around the skillet. Season the potatoes with salt and pepper, then arrange an even layer of caramelized onions on top of the potatoes. Season with salt and pepper.
  • In a medium bowl, combine the Gruyere and mozzarella and reserve half for later use. Sprinkle on a layer of the remaining cheese mixture over the onions. Repeat the layers until all the ingredients (not including the reserved cheese) have been used. Press down firmly on the layers to flatten.
  • In a large bowl or measuring cup, combine the heavy cream and beef stock and pour over the gratin. Cover the skillet with foil and place on a sheet pan. Bake the potatoes, covered, until the top and edges have begun to brown and the potatoes are tender, 1 hour 15 to 1 hour 30 minutes. You can test by inserting a knife into the potatoes; if it goes in and comes out without resistance, then the potatoes are done.
  • Remove the skillet from the oven, remove the foil and turn the broiler on high. Combine the croutons and French fried onions. Cover the gratin with a layer of the crouton mixture followed by the remaining cheese. Broil until golden brown and bubbly, 5 to 8 minutes. Serve and enjoy!

6 tablespoon(s) unsaltd butter or more
2 tablespoon(s) olive oil or more
6 - medium-size potatoes, peeled, and cut into 1/4 inch thick slices
- salt and black pepper to taste
1 1/2 cup(s) medium-thick cream sauce ( see below )
2 tablespoon(s) tomato puree
2 - medium-size ripe, frim tomatoes, peeled, seeded, and chopped, drain in a sieve for 1/2 hour.
1/4 cup(s) fine bread crumbs
1/4 cup(s) grated asiago or parmesan cheese
CREAM SAUCE
3 tablespoon(s) unsaltd butter
3 tablespoon(s) flour
1 cup(s) milk
1/2 cup(s) cream
1/4 teaspoon(s) nutmeg
- salt and pepper to taste

Steps:

  • In a large frying pan , heat 2 tablespoons butter and 1 tablespoon olive oil. Fry the potatoes, one layer at a time, until tender and golden brown on both sides. Add more butter and oil as needed. Drain on paper towels.
  • Arrange the potatoes in two or three layers in a large, shallow baking dish and sprinkle each layer with salt and pepper.
  • Combine the cream sauce with the tomato puree and the drained tomatoes, and spoon over the top layer of potatoes. Sprinkle with bread crumbs, then with cheese. Dot with butter. Bake in a preheated 400 degree oven for 25 minutes or until the top is golden brown.
  • CREAM SAUCE-In a saucepan over medium heat, melt the butter. Stir in the flour and cook , stirring into a smooth paste. Gradually add the milk and cook, stirring, until the sauce thickens. Add the cream, salt, pepper and nutmeg, and cook into a medium-thick sauce.

ELEVEN-LAYER POTATO GRATIN

4 medium Idaho potatoes, peeled and thinly sliced (1/8-inch-thick) on a mandoline, soaked in cold water, drained well and patted dry
2 cups heavy cream
Kosher salt and freshly ground black pepper
Caramelized Shallots, recipe follows
Fried Sage Leaves, recipe follows
6 tablespoons unsalted butter, cut into pieces
9 large shallots, sliced into 1/4-inch-thick slices
Pinch of sugar
Kosher salt and freshly ground black pepper
1 cup canola oil
10 fresh sage leaves
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • In a 10-by-10-by-2-inch casserole, arrange some of the potatoes in an even layer, drizzle with 3 tablespoons of the cream and season with salt and pepper. Repeat with the remaining potatoes, cream and salt and pepper to form 11 layers. Press down on the layers to totally submerge them in the cream.
  • Cover and bake for 30 minutes; remove the cover and continue baking until the cream has been absorbed, the potatoes are cooked through and the top is browned, 30 to 45 minutes longer. Evenly distribute the Caramelized Shallots and Fried Sage Leaves over the top.
  • Melt the butter in a large saute pan over medium heat. Add the shallots and sugar and slowly cook, stirring occasionally, until golden brown and caramelized, about 40 minutes; season with salt and pepper.
  • Heat the oil in a small saucepan over medium heat until it begins to simmer. Add the sage leaves in batches and fry for a few seconds until crisp. Remove with a slotted spoon to a plate lined with paper towels and season with salt.
  • Cover and refrigerate the flavored oil to save for sauteing fish, chicken or pork chops.

1 1/2 pounds Idaho potatoes, peeled and cut into 1/4-inch-thick slices
1/2 cup grated Gruyere

1/2 teaspoon ground black pepper
1/8 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
  • Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
  • In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

3 cups heavy cream
1 cup whole milk
1/4 cup all-purpose flour

Steps:

  • Preheat the oven to 400 degrees F. Butter a large baking dish with the butter.
  • Slice the potatoes into sticks, and then cut the sticks to create a dice.
  • Combine the cream and milk in a bowl. Add the flour, salt and some pepper. Whisk it together well so that the flour is incorporated into the milk/cream mixture. Add the diced potatoes to the prepared baking dish and pour the creamy mixture all over the top.
  • Cover the dish with foil and bake for 20 to 30 minutes. Remove the foil and bake 15 to 20 minutes more. Just before serving, sprinkle on the grated cheese and return it to the oven until the cheese is melted and bubbly, 3 to 5 minutes. Sprinkle on the green onions and serve it hot. SOUTHERN FRIED POTATO GRATIN

It's easy to love potato gratin-who doesn't love potatoes, butter, and cheese? But chef Edward Lee's recipe one-ups the festive side dish with a genius twist: ham salt. (Yes, ham salt.)

1/2 pound country ham or prosciutto ends, frozen solid, chunks, not slices
2 pounds red potatoes
4 tablespoons unsalted butter, melted
4 tablespoons rendered bacon fat, From about 8 slices bacon
1 1/2 cups grated Gruyère, divided, half for layering the potatoes, half for garnish
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 200 degrees F. Line a sheet pan with parchment paper. Grip frozen ham end with a paper towel and use the Microplane to finely grate ham over parchment paper. (As much as you can, avoid the fatty parts.) Yields 6 or 7 tablespoons. Bake 1 hour.
  • After baking, the ham salt will be completely dried out, crispy, and reduced by half. Rub between your fingers to break up any clumps. Transfer ¾ to a bowl to layer potatoes and ¼ for garnish and set aside. (Ham salt can be stored in an airtight container at room temperature.)
  • Preheat oven to 400 degrees F. Peel potatoes, then slice ⅛-inch thick on a mandoline.
  • Spread 2 tablespoons bacon fat across the bottom of the cast-iron skillet; cover with a layer of potato slices, slightly overlapping. Season lightly with salt, pepper, and a sprinkle of ham salt. Drizzle about 2 tablespoons of melted butter over the potatoes, then dust with Gruyère. Add another layer of the potatoes and repeat seasoning with salt, pepper, ham salt, butter, and cheese. Continue until the potatoes, butter, Gruyère, and ham salt are used up, about 4 layers, lightly tamping down each layer as you go. When done, drizzle 2 tablespoons bacon fat over the top.
  • Set the skillet over medium heat. When the potatoes start sizzling (after about 2 minutes), remove from heat and cover the skillet lightly with aluminum foil. Bake 30 minutes, then remove foil and bake another 15-20 minutes, or until a knife can be inserted without resistance.
  • Run a metal spatula around the edges of the skillet to release the potatoes. Give the skillet a jiggle to make sure the bottom is free. Place a plate over the skillet and invert to transfer. Garnish with remaining Gruyère and ham salt. Serve warm.
