Addicting fried oyster mushrooms! Seasoned crispy outer crust with a tender meaty texture inside. Serve at as an appetizer at your party or game day event; or even as part of a main course!

1 cup spelt flour
1 cup water (more or less)
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon sea salt
1 cup spelt flour
1 teaspoon onion powder
1 teaspoon garlic powder
32 ounce vegetable oil (more or less for frying)
1 package oyster mushrooms (found in Asian stores, about a pound)
additional sea salt
dried parsley (optional)

Steps:

  • Grab your cast iron or FryDaddy Electric Deep Fryer (or whatever type of deep fryer you are using) and pour in oil. (DO NOT PLUG UP YET)
  • Take your oyster mushrooms out the package and place in a colander. Pull apart to desired size and rinse well.
  • Start making your wet batter. Place 1 cup of spelt flour in a large mixing bowl along with garlic powder, onion powder, and sea salt. Add in water and mixed. Batter should be the right consistency to coat mushrooms; not to thick and not to runny. Set aside.
  • Grab a bowl 1 cup of spelt flour, garlic powder, and onion powder and mix until fully combined. Set aside. NOTE: You could use a large Ziploc bag for this to easily add your mushrooms and shake to get an even coat of the dry batter on the mushrooms.
  • Next coat each oyster mushroom in the wet batter ONCE and place it in the the bowl and evenly coat with the dry batter ONCE. Do that for all pieces. NOTE: Using a Ziploc bag simply close the bag and shake vigorous until all mushroom are fully coated in dry batter. DO NOT GO BACK IN FORTH BETWEEN THE WET AND DRY BATTER TO PREVENT OVER BREADING IT WILL NOT TASTE WELL!
  • Plug up your Fry Daddy Electric Deep Fryer and allow oil to get hot. (Or if using a cast iron heat oil in your iron until hot). Carefully place mushrooms in oil allowing mushrooms to fry for about 2 to 3 minutes until evenly browned. With your fry basket remove done mushrooms from oil and place on plate cover with a paper towel. Sprinkle with additional sea salt and dried parsley (opt) NOTE: Make sure your oil is hot and DO NOT overcrowd your mushrooms in the deep fryer or cast iron. If you need, divide mushrooms in half to cook a handful at a time.
  • Serve with your favorite dipping sauces, on top of a salad, or along with your favorite sides for dinner!

I have fried mushrooms. I have air-fried various mushrooms. These are hands down the crispiest and most flavorful fried mushrooms I have ever had. Serve with ranch dressing if desired.

4 ounces oyster mushrooms, trimmed
1 cup buttermilk
1 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground mustard
non-stick cooking spray
2 tablespoons vegetable oil

Steps:

  • Preheat an air fryer to 390 degrees F (200 degrees C).
  • Place oyster mushrooms in a bowl and pour buttermilk on top. Toss to coat mushrooms with buttermilk and marinate for 15 minutes.
  • Meanwhile, add flour, salt, pepper, garlic powder, onion powder, paprika, and ground mustard to a large resealable zip-top bag. Seal and shake until evenly combined.
  • One at a time, take a mushroom out of the buttermilk mixture and drop in the seasoned flour. Toss to coat and transfer to a plate. Once all mushrooms are coated, repeat the breading step until all mushrooms are breaded twice and set them on another plate.
  • Spray the basket of the air fryer with nonstick cooking spray. Spread out breaded mushrooms in the basket of the air fryer in one layer, making sure not to overcrowd (you will need to do this in batches).
  • Air-fry mushrooms for 4 minutes. Liberally brush mushrooms with vegetable oil and air-fry for 4 minutes more. Using tongs, flip the mushrooms over and cook 2 minutes more. Repeat with remaining mushrooms

Simple Stir-Fried Oyster Mushrooms image

I made this up earlier when I really wanted oyster mushrooms. I don't like to cook them with too many strong flavors, since their own flavor is so delicate. I just had this over rice noodles for a snack, but you could serve it as a side dish, too, or add other veggies and protein of choice to make it a main dish. Prep/cooking time and all quantities are educated guesstimates. For vegetarians, try my mock fish sauce recipe#465234, it's what I use and it's tasty :)

3 tablespoons fish sauce (see note)
1 tablespoon rice vinegar
1/2 teaspoon sugar (more or less to taste)
2 teaspoons dark sesame oil
1 teaspoon fresh lemongrass, minced
1 teaspoon fresh ginger, minced
3 cups oyster mushrooms, roughly chopped if large
1 scallion, thinly sliced, for garnish
2 teaspoons sesame seeds, toasted, for garnish

Steps:

  • Stir together the fish sauce, rice vinegar, and sugar in a small bowl and set aside.
  • Put the sesame oil in a wok or large skillet over medium-high heat. When hot, add the lemongrass and ginger and stir-fry for about 30 seconds (it will smell heavenly). Add the mushrooms and stir-fry until slightly softened, 3 or 4 minutes. You want them still moist and not browned.
  • Add the sauce and stir-fry until absorbed, 30 seconds or so. Garnish with the scallion and sesame seeds and serve.
