These green beans were the side dish my grandmother served most often because we all love them. They are done but not mushy like canned beans.

1 ½ pounds fresh green beans, trimmed and snapped
garlic powder to taste
onion powder to taste
salt and pepper to taste
3 tablespoons olive oil

Steps:

  • In a stainless steel pot over medium-high heat, combine green beans, garlic powder, onion powder, salt and pepper. Cook, covered, until the beans begin to sweat. Remove lid and stir occasionally until beans are tender.
  • When the beans and spices have begun to 'burn' on the bottom of the pan, which will lend a grilled flavor, stir in the olive oil and turn off heat. Cover, and let stand a few minutes. Scrape the bottom of the pan to incorporate the 'burnt' spices. Beans should have a dark, caramel color, but not black.

1-1/2 cups cut fresh green beans
1 teaspoon minced fresh parsley

Steps:

  • In a large nonstick skillet or wok, stir-fry garlic in butter for 1 minute. Add the beans; stir-fry 3 minutes longer. Stir in the parsley, basil, salt, oregano and cayenne; stir-fry for 2-3 minutes or until beans are crisp-tender.

1/2 cup all-purpose flour
2 tablespoons whole milk
2 large eggs
1 cup store-bought fried onions, chopped into finer pieces
1 cup panko breadcrumbs
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 pound green beans, trimmed

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet tray with parchment paper.
  • Set up a dredging station: Place the flour in a medium bowl. Whisk together the milk and eggs in a second medium bowl. Stir together the onion pieces, panko, salt and pepper in a third medium bowl.
  • Dip the green beans first into the flour to coat, shaking off any excess flour, then dip the beans in the egg mixture to coat. Finally, dip the beans into the panko-onion mixture and place the green beans on the prepared sheet tray, about 1/4-inch apart.
  • Bake the green beans, turning them over halfway through baking, until they are golden and crispy, 12 to 15 minutes. Transfer to a platter and serve immediately.

2 tsp Lemon juice

Steps:

  • Heat olive oil in a large skillet over medium heat.
  • Add green beans. Season with salt and pepper. Saute for 4-5 minutes, until bright green and crisp tender. Remove to a plate and cover with foil to keep warm.
  • Reduce heat to low. Add the butter to the pan and heat until melted.
  • Add the sliced almonds. Cook for 2-4 minutes, until the almonds are golden.
  • Add the garlic. Saute for 1-2 minutes, until fragrant. Stir in the lemon juice.
  • Return the green beans to the pan and toss to coat in garlic lemon butter. Cook for 1-2 more minutes, until hot.
