Beet Salad with Goat Cheese image

This is a delicious and easy salad which takes little time and is a great meatless main course. It uses beets, goat cheese, candied walnuts and baby greens. For a main dish salad, add chicken. Feel free to include more of your favorite vegetables too.

Time 40m

Yield 6

Number Of Ingredients 8

4 medium beets - scrubbed, trimmed and cut in half
⅓ cup chopped walnuts
3 tablespoons maple syrup
1 (10 ounce) package mixed baby salad greens
½ cup frozen orange juice concentrate
¼ cup balsamic vinegar
½ cup extra-virgin olive oil
2 ounces goat cheese

Steps:

  • Place beets into a saucepan, and fill with enough water to cover. Bring to a boil, then cook for 20 to 30 minutes, until tender. Drain and cool, then cut in to cubes.
  • While the beets are cooking, place the walnuts in a skillet over medium-low heat. Heat until warm and starting to toast, then stir in the maple syrup. Cook and stir until evenly coated, then remove from the heat and set aside to cool.
  • In a small bowl, whisk together the orange juice concentrate, balsamic vinegar and olive oil to make the dressing.
  • Place a large helping of baby greens onto each of four salad plates, divide candied walnuts equally and sprinkle over the greens. Place equal amounts of beets over the greens, and top with dabs of goat cheese. Drizzle each plate with some of the dressing.

FRIED GOAT CHEESE AND ROASTED BEET SALAD

Fried Goat Cheese and Roasted Beet Salad image

Even if you think you don't like beets, try them roasted. They are perfect in this salad with warm, creamy, walnut-crusted fried goat cheese

Provided by Meme

Categories     Salad

Time 1h15m

Number Of Ingredients 10

3 beets ({any color} 2 inch, washed & scrubbed)
4 oz goat cheese
1/3 cup walnuts (chopped fine)
1 TBSP olive oil
3 TBSP balsamic vinegar
1 tsp Dijon mustard
1/4 tsp kosher salt
1/4 tsp black pepper
1/4 tsp dried oregano
1 large head romaine or green leaf lettuce (washed & chopped)

Steps:

  • Preheat oven to 400°F
  • Wrap beets in foil, place on a baking sheet, and transfer to oven. Bake for 50 minutes to 1 hour, until beets are tender {a fork or knife should easily go through beet}.
  • Carefully unwrap beets, and let cool. When they are cool enough to handle, rub off skins with a paper towel, your bare hands, or use a small knife to take the skins off. Be careful because beets will stain most everything they touch.
  • Slice beets and set them aside.
  • Heat a non-stick skillet over medium heat. Put the walnuts in a shallow bowl or plate.
  • Slice the goat cheese into medallions {you want about 8-12 slices}, using your fingers to help the cheese slices hold together {you may have to mash them together a little bit to keep them from crumbling}.
  • Press the goat cheese slices into the walnuts. Coat both sides of the goat cheese slices with walnuts. Place in the skillet and cook until browned on eat side, about 3 minutes per side.
  • Meanwhile, whisk together balsamic vinegar, Dijon, salt, ground pepper, and oregano. Whisk in oil. Toss dressing with chopped lettuce.
  • Serve dressed lettuce on four plate and top with reserved sliced beets and fried goat cheese. Enjoy!

Time 1h10m

Yield 6 servings

Number Of Ingredients 13

2 pounds beets, peeled and cut into wedges
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 tablespoon finely chopped fresh rosemary
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup seasoned breadcrumbs
Three 4-ounce goat cheese logs, cut into 12 slices
1 tablespoon Dijon mustard
Pinch sugar
12 cups mixed greens

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the beets on a baking sheet. In a bowl, whisk together the olive oil, vinegar, rosemary and some salt and pepper. Reserve one-quarter of the dressing for the salad and pour the rest over the beets. Roast until the beets are tender, 45 to 50 minutes.
  • While the beets are cooking, heat 1/4 inch of vegetable oil in a large skillet over medium heat.
  • Put the flour, eggs and breadcrumbs in separate shallow bowls. Coat the goat cheese slices first in the flour, then in the egg, then in the breadcrumbs. Fry the slices until golden brown, 1 to 2 minutes per side. Drain on a paper towel-lined plate.
  • Whisk the mustard and sugar into the reserved dressing, then pour over the greens in a large bowl and toss to coat. Divide the greens among 6 plates, add the beets on top and place 2 fried goat cheese slices on top.

ROASTED BEET AND GOAT CHEESE SALAD

Roasted Beet and Goat Cheese Salad image

I really like the combination of the beets and goat cheese in this salad. If your in a rush, canned or jarred "un-pickled" sliced beets work well here too, if you don't have time to roast fresh ones. Also, this salad works well with your favorite bottled vinaigrette, if you'd rather not make it from scratch. Cook time is beet roasting time.

Number Of Ingredients 11

5 medium beets
1 drizzle olive oil
salt and ground black pepper to taste
2 eggs, beaten
½ cup all-purpose flour
½ cup dry bread crumbs
1 (4 ounce) log goat cheese, cut into small medallions

  • Scrub the beets, trim off the tops but leave a 1-inch stub and most of the root tails. This will keep the beets from bleeding the good juices. Place the beets in an oven-proof dish and drizzle with olive oil. Roast in center of the oven until tender when pierced with a fork. About 45-60 minutes depending on their size. When cool enough to handle, remove the top stubs, roots and skins. Transfer the beets to the refrigerator and chill.
  • Place the goat cheese log in the freezer for 15-20 minutes to firm up, do not freeze it. Remove from the freezer and slice the goat cheese log into 8 discs with a thin sharp knife, rinsing the knife after each slice. Unflavored dental floss is also a great tool for slicing the cheese. If any of the slices crumble just press them back into the round.
  • Set up a 3-bowl dredging system with the flour, egg whites and bread crumbs. Working with one disc at a time, coat with flour, then dip into the egg white, then into the bowl of bread crumbs, pressing them firmly to the cheese. Place the disc of cheese on a parchment-lined plate and continue until all the cheese discs have been coated.
