Categories     main dish     seafood

Time 20m

Yield 6 servings

Number Of Ingredients 12

2 tbsp. Butter
1 1/2 lb. Peeled And Deveined Raw Shrimp (I Used U10, But Any Size Is Fine)
1 whole Medium Onion, Finely Diced
4 cloves Garlic, Minced
1 tbsp. Curry Powder
1 can (13 1/2 Oz. Size) Coconut Milk (I Used "A Taste Of Thai" Brand)
2 tbsp. Honey, More To Taste
1/4 tsp. Kosher Salt (more To Taste)
1 whole Lime, Juiced
Hot Sauce, Optional
12 whole Basil Leaves, Chopped, Plus More For Garnish
2 c. Basmati Rice, Cooked According To Package Directions

Steps:

  • Heat the butter in a large skillet (I used non-stick) over medium-high heat. Add the shrimp and cook for 2 to 3 minutes, turning them over halfway through, until fully cooked. Remove to a plate and set aside. Add the onion and garlic to the skillet and stir to cook for 2 minutes. Sprinkle the curry powder over the onions and continue cooking the onions, stirring, for another couple of minutes. Reduce the heat to medium-low and pour in the coconut milk, stirring to combine. Add honey, salt, and lime juice, and allow the sauce to heat up until bubbling gently. Add shrimp into the sauce, tossing to coat, and allow it to simmer for 2 to 3 minutes or until slightly thickened. Taste the sauce and add more salt, lime juice, or honey depending on your taste. Stir in the basil. (Add hot sauce if you want a little kick.)Serve shrimp and sauce over a bed of cooked basmati rice, garnishing with more basil. Delicious!

Large shrimp are coated in a light coconut breading and fried until golden. Then served with your choice of sweet chili or sweet and sour sauce.

Provided by Food Network

Time 30m

Yield 6 servings

Number Of Ingredients 9

Vegetable oil, for frying
2 large eggs, lightly beaten
1 1/2 cups all-purpose flour
3/4 cup cornstarch
Pinch cayenne
Kosher salt and freshly ground black pepper
1 1/2 cups shredded sweetened coconut
1 1/2 pounds large shrimp (about 30), peeled and deveined, tails removed
Sweet chili or sweet and sour sauce, for dipping

Steps:

  • Heat about 2-inches of oil in a heavy-bottomed pot or large Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F.
  • Meanwhile, put the eggs in one shallow dish. Whisk the flour, cornstarch, cayenne, 2 teaspoons salt and 1 teaspoon pepper together in a medium bowl. Transfer half the flour mixture to a third bowl and stir in the coconut.
  • Working in batches, dredge the shrimp in the flour mixture, shake off any excess, dip in the eggs, and then roll in the coconut mixture, pressing to coat thoroughly. Fry until golden, 2 to 3 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer the shrimp to paper towels to drain. Serve with sweet chili or sweet and sour sauce on the side for dipping.

These air-fryer coconut shrimp are the perfect combination of savory and sweet. Serve with a sweet chile sauce, for dipping.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 8

Nonstick cooking spray
1 pound large shrimp (16/20 count), peeled and deveined, tails on
Kosher salt and freshly ground black pepper
1 cup sweetened shredded coconut
1/2 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs
Sweet chile sauce, for dipping

Steps:

  • Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple of paper towels, then season with a pinch of salt and a few grinds of pepper.
  • Pulse the coconut and panko in a food processor until finely chopped and uniform in size. Transfer to a shallow bowl.
  • Whisk the flour with 3/4 teaspoon salt and few grinds pepper in another shallow bowl or a baking dish. Whisk the eggs with a pinch salt in a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten egg. Dredge in the coconut-panko mixture, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and continue until all the shrimp are coated.
  • Preheat the air fryer to 385 degrees. Working in batches, place some of the shrimp in the fryer basket in a single layer, then spray lightly with more nonstick cooking spray. Cook until the shrimp are golden brown and cooked through, flipping halfway through, about 10 minutes.
