VELVET CHICKEN BREAST WITH MUSTARD SAUCE
Cooking chicken breasts can be tricky, especially the "skinless-boneless" kind. No matter if they are pan-fried or grilled, they are apt to be dry if left to cook even a minute too long. This recipe borrows a Chinese technique called velveting that guarantees a moist chicken breast. A simple marinade made with egg white and cornstarch is the solution. Usually the chicken is cut into strips or cubes, but small chicken breasts or cutlets can be prepared the same way for Western-style dishes. Here, an assertive mustard sauce pairs nicely with the tender meat. Serve with boiled potatoes and crisp watercress, or stir-fried spinach.

- Trim chicken breasts to a uniform size, shape and thickness; they should be about 1/2 inch thick. (If using larger breasts, slice them into 1/2-inch-thick cutlets.) Season generously on both sides with salt and pepper.
- Velvet the chicken: In a medium-size mixing bowl, whisk egg whites until frothy, then whisk in cornstarch until lump-free. Add chicken breasts and coat well with cornstarch mixture, then cover and marinate for 30 minutes. (Chicken may also be marinated several hours ahead and refrigerated.)
- Meanwhile in a small mixing bowl, stir together Dijon mustard, whole-grain mustard, dried mustard, horseradish and crème fraîche. Set aside.
- Put butter or oil in a skillet over medium heat. Lay chicken breasts in the pan and sauté very lightly for 30 seconds a side without browning. Remove breasts and blot on paper towels. Discard remaining oil and wipe pan.
- Return skillet to stove and add mustard and crème fraîche mixture and chicken broth. Whisk together to make a thin sauce and bring to a gentle simmer. Add breasts and simmer for 1 minute, then turn breasts over, cover pan and simmer for 2 minutes. Turn off heat and leave covered for 1 or 2 minutes more, until meat is firm to the touch.
- Transfer breasts to a warm platter. Bring sauce to a boil, add chopped thyme and reduce until slightly thickened. Spoon sauce over breasts, sprinkle with chives and serve.

When you feel like some home-style comfort, there's nothing better than the creamy warmth of a rich sauce. This dish is great served with boiled, pan-fried potatoes and a simple green salad.

- Remove the chicken from the fridge about 1 hour before cooking and season liberally with sea salt. Meanwhile, warm the oven to around 70C. Place a heavy-based frying pan large enough to fit 4 chicken breasts over a medium-high heat until hot. Brush the chicken with extra virgin olive oil and put in the pan, skin side down. Cook for 5 minutes until the skin is crisp, then turn over and cook for a further 4 minutes. Put on a plate and rest in the warm oven. To make the sauce, pour the vermouth in the same pan and scrape well. Add a good pinch of sea salt and the cream and cook for 2 minutes at a rapid boil. Turn the heat down to medium, slowly add the butter and whisk to incorporate. Remove frying pan from heat, add the parsley and horseradish, then season with freshly ground pepper and a squeeze of fresh lemon juice. Place one chicken breast on each plate and pour a generous amount of sauce over each. Serve immediately. HOT TIPS You can also make the sauce with roast chicken - just deglaze the roasting pan with the vermouth, then follow the rest of the recipe. I like to serve boiled potatoes that have been pan fried with this dish, along with a simple green salad or boiled beans. SOMETHING TO DRINK Marsanne Marsanne is a textural white wine, predominately grown in the south of France. This 2012 Paul Mas ($8) has flavours of white peach and stone fruit, with hints of honeysuckle that will provide balance and sweetness to the peppery horseradish. - Bring a large pot of salted water to boil. Add the beans and cook 3 to 4 minutes, remove and cool in a bath of ice water.
- Prepare the Green Chile-Horseradish Sauce and the Buttermilk Fried Chicken. As chicken cooks, heat 2 tablespoons butter in a large saute pan, add the green beans and season with salt and pepper. Keep warm.
- To serve, spoon 1/4 cup Green Chile-Horseradish Sauce onto each plate. Top each plate with 1/8 of green beans and 1/8 of cutlets. Garnish each plate with srirachi sauce.
- FOR THE CHICKEN: Soak the cutlets in the buttermilk for 2 hours. On a plate or in a shallow bowl, combine the flour, pepper and salt. Heat oil to 350 degrees.
- Remove the chicken from the buttermilk and dredge in the flour. Fry until golden brown and crispy on the outside, about 5-10 minutes (depending on size of cutlets). Drain on paper towels.
- FOR THE SAUCE: In a saucepan over medium heat, melt 1 tablespoon butter and add chiles, horseradish and pickle relish. Cook 3 minutes and add heavy cream. Turn heat to medium high, cook 3 minutes, then puree in a food processor or blender (be very careful with hot liquids in the blender, as they can overflow suddently). Strain the mixture and return to the saucepan over medium heat. Add the remaining butter and cook, stirring occasionally, until sauce is reduced to about 2 cups (it should be fairly thin). Keep warm.

- Preheat oven to 425°F.
- In a small bowl whisk together mustard and mayonnaise until combined well.
- Pat chicken dry and season with salt and pepper. Heat oil in a 10-inch non-stick skillet over moderately high heat until hot but not smoking and brown chicken, about 5 minutes on each side. Transfer chicken to a shallow baking dish and pour off all but about 2 teaspoons oil from skillet.
- Add scallion to skillet and cook over moderate heat, stirring, until softened. Stir in garlic and cook 30 seconds.

- Start cooking rice according to package directions and allow to cook while preparing chicken dish.
- Combine olive oil, white wine, horseradish sauce, and dijon on stove over medium heat.
- Add onion slices and capers. Cover and cook for 5 minutes or until onion is starting to get tender.
- Add chicken to wine/onion sauce and cook covered over medium heat for 5-7 minutes.
- Add salt/pepper to taste and feta cheese to chicken mixture and stir over low heat until cheese is melted and chicken is cooked through.

CREAMY HORSERADISH CHICKEN BREAST
A very Quick easy recipe to throw together and it tastes great. I usually serve the chicken breast over spinach, but as I have only just got back into town and all the shops were closed for Easter Monday, I had to use what I had on hand. It worked out well as I had some carrots and broccoli I wanted to use up, so I served them as the vegetable and served the chicken over rice. The cooking time is a little longer if you choose to serve over rice.

Steps:
- Heat oil in a pan, add chicken breasts brown on both sides and cook until almost cooked through, leave over low heat to finish cooking while you make the sauce, turn the breasts occasionally.
- Heat a small amount of oil in a saucepan. Add onion and garlic cook until onion is soft and garlic has browned slightly (do not burn).

- The first step to make chicken in white sauce recipe is to prepare the chicken pieces to be used. Place another pan on the fire and pour the milk to warm it up but without allowing it to boil. Then add the flour to the melted butter, mix both ingredients with a spoon for a few seconds and slowly add the hot milk so to not create lumps. Continue stirring for about two minutes, add salt and pepper to taste and add a pinch of nutmeg.
- When you see the sauce begins to thicken you only have to add the chicken breasts to coat them well and leave these to simmer for at least 5 or 10 minutes. In case you observe that the sauce is too thin, you can add a pinch of flour and stir well to get the right consistency and texture.
