Who needs meat? This unique twist on classic chicken-fried steak gives vegetarians an indulgent main course that will make even meat-eaters a little jealous.

4 tablespoons unsalted butter
1/3 cup all-purpose flour
2 1/2 cups milk
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives
1 small head cauliflower (about 2 pounds)

2 tablespoons ground white pepper
4 teaspoons baking powder
1 1/4 cup milk
2 large eggs
Vegetable oil, for frying

Steps:

  • For the gravy: Melt the butter, in a medium saucepan, over medium heat. Sprinkle in the flour, and cook, whisking, until the flour is smooth and a deep golden brown, about 7 minutes. Gradually whisk in the milk and simmer until the mixture thickens, whisking to remove any lumps, 4 to 6 minutes. Season with 2 teaspoons salt and 1 teaspoon pepper. Remove from the heat, cover to keep warm. Reheat before serving, adding water by the tablespoon to thin it, as desired. Stir in the chives right before serving.
  • For the cauliflower: Preheat the oven to 250 degrees F. Trim the base of the core from the cauliflower and then cut the head into 1-inch-thick slices. Cut any florets that fall off into 1-inch pieces. Sprinkle 1/4 teaspoon each salt and pepper over both sides of each cauliflower slice. Set aside.
  • Whisk together the flour, white pepper, baking powder and 2 teaspoons salt in a shallow bowl. Pour in 3 tablespoons of the milk and use your fingers to work it in, making a shaggy flour mixture. Whisk together the eggs and the remaining milk in another shallow bowl. One at a time, dredge each cauliflower steak, and the 1-inch pieces, in the flour mixture, dip in the egg mixture, and then return to the flour mixture, pressing firmly to coat. Transfer the breaded steaks to a rack on a rimmed baking sheet.
  • Set another rack on a rimmed baking sheet. Heat about 1-inch of oil in a cast-iron skillet or Dutch oven over high heat until a deep-fry thermometer registers 350 degrees F. Fry the steaks, one at a time, with some of the smaller pieces until golden brown, turning once, about 5 minutes (return the oil to 350 degrees F between each steak). Transfer the finished cauliflower steaks to the rack on the baking sheet, season lightly with salt and keep warm in the oven while you continue frying the remaining cauliflower in batches.
  • Serve hot with the warm gravy.

1 head of cauliflower, stem removed, head cut into florets
2 tablespoons vegetable oil
1 tablespoon toasted sesame oil
3 green onions, sliced thin
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1 tablespoon chili paste, plus more if desired
1/2 cup shredded carrots
1 cup packed baby spinach
1/4 cup low-sodium soy sauce
2 tablespoons butter
4 eggs
Sriracha (if desired)
2 tablespoons toasted sesame seeds

Steps:

  • In batches, pulse the cauliflower in a food processor until rice-size crumbs form. Transfer to a bowl and set aside.
  • Put a large skillet over medium heat and add the vegetable oil and sesame oil. Add two-thirds of the green onions, the garlic, ginger and chili paste. Cook, stirring constantly, until fragrant, 2 to 3 minutes. Raise the heat to medium high and add the carrots and spinach; continue to cook, stirring, until the spinach has wilted, 1 to 2 minutes.
  • Continuing to stir constantly, add the cauliflower rice. Cook until the cauliflower is tender, 3 to 4 minutes. Pour in the soy sauce and stir, scraping the bottom of the skillet, until the liquid has evaporated, 2 to 3 minutes longer.
  • Meanwhile, melt the butter in a second skillet over medium heat. Crack in the eggs; as they cook, spoon hot butter over the whites of the eggs so that the whites set without flipping. Towards the end of cooking, carefully spoon hot butter over the yolks and cook until the eggs reach the desired doneness.
  • Remove the pan with the cauliflower from the heat, drizzle with sriracha, and sprinkle with the toasted sesame seeds and reserved green onions. Divide between 4 plates and top each serving with an egg.

3 to 4 cups buttermilk, for soaking
Canola oil, for frying
4 cups fine cornmeal
1 cup all-purpose flour
2 tablespoons cornstarch
2 tablespoons spicy paprika
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 1/2 teaspoons smoked paprika
1 1/2 cups Louisiana-style hot sauce
8 tablespoons (1 stick) unsalted butter, melted
2 cups crumbled blue cheese (about 8 ounces)
1 1/2 cups mayonnaise
1 cup sour cream
1/4 cup heavy cream
1/4 cup chopped fresh parsley
2 tablespoons minced garlic
2 tablespoons spicy paprika
2 tablespoons Worcestershire sauce
Kosher salt and freshly ground black pepper

Steps:

  • For the fried cauliflower: Bring 4 quarts of water to a boil in a large pot and salt generously. Fill a large bowl with ice water. Cook the cauliflower in the boiling water until al dente (check the texture), about 5 minutes once the water returns to a boil. Remove the cauliflower from the pot with a slotted spoon and transfer to the ice water bath to stop the cooking. Once the cauliflower has cooled, drain thoroughly. Once dry, transfer the cauliflower to a container and pour the buttermilk over the top. Refrigerate for 2 to 4 hours.
  • For the blue cheese fondue: Combine the blue cheese, mayonnaise, sour cream, heavy cream, parsley, garlic, paprika and Worcestershire sauce in a bowl. Whisk to combine and season to taste.
  • To fry the cauliflower: Pour enough oil into a deep, heavy pot to come 6 inches up the sides. Heat the oil until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Meanwhile, combine the cornmeal, flour, cornstarch, spicy paprika, granulated garlic and onion, smoked paprika and 2 teaspoons salt in a shallow bowl.
  • In batches, remove the cauliflower from the buttermilk, dredge in the cornmeal mixture and fry until golden brown, 3 to 4 minutes. Remove the fried cauliflower from the oil with a slotted spoon and drain on paper towels.
  • Combine the hot sauce and melted butter in a large bowl. Toss the fried cauliflower in the Buffalo sauce to coat. Serve with the blue cheese fondue.

2 eggs, beaten
1 tablespoon milk
1/4 teaspoon salt

• 2 tsp salt
• ¼ tsp smoked paprika
• ¼ tsp curry powder
• ½ tsp chilli powder
• 1 litre canola oil, for frying
• 1 head cauliflower, cut into florets
• 2 tsp finely shredded curly parsley
• black pepper, to serve
• lemon wedges, to serve

Steps:

  • Combine the salt, paprika, curry powder and chilli powder and stir to combine. Heat the oil in a wok or large pan to about 180°C. Add half the cauliflower florets and fry until lightly browned, about 3 minutes. Drain and repeat for the remaining florets. While the cauliflower is still hot, sprinkle generously with the salt-and-spice mix, reserving any unused mix for a future batch. This recipe for Crispy Pan Fried Cauliflower Florets is a family favorite, and one of the best ways to eat cauliflower! These bite-sized florets make a great snack or side dish.

1 small cauliflower
2 eggs
1/4 cup milk ((any kind, I used 1%))
1 cup all purpose flour
1/2 teaspoon salt
1/2 teaspoon ground pepper
optional: pinch of powdered cayenne pepper or chipotle pepper
1/4 - 1/2 cup olive oil

Steps:

  • Boil or steam the whole cauliflower (do not separate it into florets yet) to your desired doneness - I prefer mine fork-tender and boil it for 7-10 minutes. Rinse in cold water and allow to cool. Separate the cauliflower into florets, cut the larger florets in half.
  • Prepare 2 small containers for the batter. In one, whisk together the eggs and milk. In the other, mix together the flour, salt, and black pepper. If you want, add some spice with a pinch of cayenne or chipotle powder.
  • Dip each cauliflower floret into the egg mixture (really mix it around in there), and then dip it into the flour mixture, making sure to coat each side in a light layer of flour. Set aside until ready to fry.
  • Pan fry the battered cauliflower in batches: heat about 2-4 tablespoons of olive oil in a large skillet, and make sure the oil thinly coats the bottom of the skillet. You might need more or less oil, depending on the size of the skillet. Place the cauliflower pieces flat-side down into the hot oil (if there is a flat side), and fry without disturbing them for about 3 minutes, or until the underside is a nice golden brown. I was able to get 8-10 pieces in a large skillet at a time without crowding the cauliflower.
  • Use tongs to gently flip each cauliflower piece, and cook until the other side is nicely browned. The cauliflower florets are obviously not flat on each side, so try to cook each floret on at least three sides. The heat of the skillet will cook all the delicious batter that is inside the cauliflower floret.
  • Set the cooked cauliflower florets on a paper towel while you finish cooking. Serve warm, and dip into a Greek Yogurt Sauce (see notes)

As a new vegan and a real picky eater I was struggling a little with the diet change. I heard cauliflower was a great substitute for chicken so I decided to make some fried chicken (or cauliflower) and boy was this delicious! My mother who is not vegan said "it was amazing and it didn't even taste like cauliflower!". Although this is not what I would consider a healthy recipe, it really gives that comfort food satisfaction.

1 1/2 cups unbleached white flour
8 tablespoons smoked paprika
6 tablespoons garlic powder
8 tablespoons cajun seasoning
3 tablespoons salt
water
2 cups vegetable oil
1 tablespoon coconut oil
1 head cauliflower

Steps:

  • First let's rinse the cauliflower make sure its nice and clean and then you can turn the oven on to 355ºf and just let that pre heat.
  • Then you can take that cauliflower to the cutting board and peel away all the green stems cratiling the cauliflower. After its all peeled you can break apart the head of the cauliflower Or you can cut it to keep the stems a little longer.
  • After the cauliflower is separated you can get the baking sheet and lay down some parchment paper. Once that's done all you need to do is put the cauliflower pieces on to the baking sheet and add 1 tablespooms of coconut oil over the cauliflower. Vegitable oil works just as well. Once the preheat is done you can stick them In the oven for around 15- 20 minute. They should not be Browning all over but it usually does have a few crispy edges on some.
  • Now while that's in the oven you can make your batter. First put the flour in the bowl. You'll need a larger bowl for this. Make sure all the clumps are broken up and then you can add the seasoning. Now when it comes to the seasoning the measurements you dont have to be exact. If you like spiciness you could add a little more Cajun and the same goes for the rest. Once all the seasoning is added just mix it all together.
  • Okay so now take a little bit of your mix about 1/4 cup and put it in a separate bowl. Once that's done just add a little water at a time till it's a creamy consistency. You'll know it's perfect if it's thick enough to stick to the fork or wisk but cant be picked up in clumps.
  • If your cauliflower is done you can take that out and prepare the oil but if not then I recommend waiting until the cauliflower is done to heat your oil. I heated my oil in a pot but if you have a deep fryer that will work too. Once the cauliflower is done you can heat the oil on medium heat and begin rolling the cauliflower in the creamy mix and then into the dry mix. I recommend not coating a lot at a time unless you plan on cooking them all at once. When the cauliflower is in the oil I let them cook for a minute some for two minutes depending on size. If you feel they aren't cooked long enough I recommend an extra minute to avoid a gooey inside.
  • After they are cooked then you are all done! Let them sit on a paper towel for a few minutes to get rid of excess oil! Hope you enjoy!

1 medium head cauliflower (about 1 3/4 pounds), stems discarded, cut into 1-inch florets
1 tablespoon plus 2 teaspoons peanut oil, plus additional for oiling the pan
2 large eggs, well-beaten
4 ounces fresh shiitake mushrooms, stems discarded, sliced into 1/4-inch pieces
6 scallions, thinly sliced, 1 tablespoon reserved
1/4 cup coarsely grated carrot (from about 1 carrot)
1 large garlic clove, minced
1 1/2-inch piece ginger, peeled and minced
2 tablespoons soy sauce
2 teaspoons toasted sesame oil

1/2 cup frozen peas, defrosted in a strainer at room temperature and rinsed

Steps:

  • Preheat the oven to 425 degrees F. In 2 batches, break up the florets into a food processor and pulse until the mixture resembles couscous, 10 to 12 seconds. Spread the cauliflower out on a foil-lined, lightly oiled baking sheet and roast, stirring halfway through, until the cauliflower begins to soften and is golden in spots, about 15 minutes. Allow to cool 10 minutes, then transfer to a bowl.
  • Heat 2 teaspoons peanut oil in a well-seasoned wok or large nonstick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs and swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool and cut into 1/2-inch pieces.
  • Meanwhile, wipe out the pan with a paper towel and heat the remaining tablespoon peanut oil over high heat. Add the mushrooms, scallions and carrots and cook, stirring, 1 1/2 minutes.
