HAMBURGER & CABBAGE
Don't be fooled by the simplicity of this dish. As it cooks, the flavors blend to create something that's not at all simple -- the cabbage undergoes a subtle transformation when it melds with the ground beef. Even better the next day. This is comfort food. It's not soup, but we eat it out of bowl like soup, pairing it...

- 1. In a large pot, brown the ground beef with the garlic and onion. Don't drain the fat (if you use high-fat ground beef, you may want to remove part of the grease, but some is needed for flavor-this is still a very low-calorie dish).
- 2. Chop the cabbage coarsely (large chop) and add on top of the ground beef. Add salt and pepper. Cover kettle. Push cabbage down if necessary. It will cook down quickly. Reduce heat to low. Cook until the cabbage is tender...about 45 minutes.
- 3. Stir hamburger and cabbage together, and serve in bowls.
- 4. Variation: When the cabbage is tender crisp, stir in a large can of chopped tomatoes with the juice (and maybe a dash of cayenne pepper and ¼ -½ tsp. of turmeric, if we're in the mood for a little heat.). Add a can of Ro-Tel tomatoes or ½-1 cup of chunky salsa, if desired. Continue cooking until the cabbage is done and the tomatoes are hot. Stir everything together and serve in bowls. This variation will be more like soup, although it still won't have a lot of liquid. Sometimes we add some brown Minute Rice right at the end, too. If you do this, you need to increase the liquid somehow: add some tomato juice or water or chicken broth. As you can see, this is a very forgiving recipe that will let you adjust it to your "taste of the day" or the taste of the people you're serving it to.
CABBAGE AND HAMBURGER SKILLET
Quick and delicious cabbage and hamburger one dish meal. This is probably my favorite fast meal to cook. My mother used to make it as I was growing up and it's one of my fathers favorite meals and mine also. Now my wife counts it as one of her favorites and asks for it often. Our 3 year old also devours it...one of a very small number of meals that he really enjoys. It was the first meal I learned to cook while in college. It gave an easy "taste of home". It's a quick and easy healthy meal for the family. You don't really need any side dishes but I serve it with corn from time to time.

- Brown the ground beef dry in a large non stick pan.
- While the beef is cooking remove the stem from the cabbage and quarter it. You can leave it quartered if wanted, I do from time to time but I like it better when I slice the cabbage. I usually take the quarters and slice it into relatively thin 1/2" strips. It cooks quicker that way.
- After the beef has been browned add the cabbage, can of stewed tomatoes and the soy sauce. Cover and simmer for 30 minutes or until the cabbage is done. Don't add any water as the cabbage will release plenty as it cooks. Enjoy!

ST. PATRICK'S DAY FRIED CABBAGE
This classic St. Patrick's Day side dish isn't truly fried, but still cooks in plenty of butter and bacon drippings. A dash of Worcestershire adds an extra savory note.

- Place the butter and the bacon in a large Dutch oven or pot with a lid over medium-high heat. Cook, stirring occasionally, until bacon is lightly browned and crisp, 7 to 8 minutes (lower the heat if the bacon begins to get too dark). Using a slotted spoon, remove the bacon to a paper-towel-lined plate and reserve (do not wipe out pot).
- Add the onion, garlic, and 1/2 teaspoon salt to the pot, stirring frequently with a wooden spoon and scraping up any browned bits from the bottom of the pan. Cook until the onion is very soft, about 8 minutes.
- With the heat at medium-high, add the cabbage, 1 teaspoon salt, and 1/4 teaspoon black pepper. Stir until the cabbage starts to soften, 5 minutes. Reduce heat to medium-low or low and cook, covered, until the cabbage is very tender, with a little bit of texture remaining in the thicker rib pieces, 12 to 15 minutes, stirring occasionally to make sure the bottom isn¿t getting too dark.
- Uncover the pot and increase heat to high. Add the Worcestershire sauce and stir for about a minute. There should be almost no liquid in the pot. Add more salt and pepper, if necessary, transfer to a serving bowl and top with the reserved bacon bits.
FRIED CABBAGE WITH BACON
This is delicious! From my friend Miranda's kitchen--just can't get enough! Perfect to serve over rice. It's really good leftover, too! Can be prepared without mushrooms and onions.

- Brown ground beef and drain.
- Sauté mushrooms, onion, and garlic in vegetable oil.
- Cook bacon in large fry pan, remove from pan and allow to cool.
- Place cabbage in fry pan with bacon grease, stir until cabbage is coated with bacon grease. Cook slightly, salt and pepper to taste.
- Combine ground beef and sauté mixture into the cabbage pan. Cook until cabbage is slightly crisp.
- Crumble bacon and add to mixture, stir.
- Serve over rice if desired. Salt and pepper to taste.

- Blanch the cabbage leaves in boiling water for 3 minutes, then transfer directly to a large bowl of ice water.
- Remove the tough stem, finely dice and set aside.
- In a medium bowl, combine the ground pork, ground beef, diced cabbage stems, onion, egg, salt, and pepper, and mix until well-combined. Divide into four equal parts.
- Fold the mozzarella slices in half and roll them up.
- Form each portion of meat into a patty. Add a roll of cheese to each patty and form the meat around the cheese so it is completely encased.
- Put a meat patty on a cabbage leaf, fold in front and right side, and roll up.
- Fold the left side inwards towards the meat filling to seal. Repeat with the remaining meat and cabbage.
- Heat a bit of oil in a medium pan over medium heat. Add thecabbage rolls and fry for 3 minutes, until browned on one side.
- Turn cabbage rolls over and add the water, bullion, and butter.
- Once the water is boiling, add the canned tomatoes. Cover and cook for 15 minutes.
- Season with salt and pepper.
- Sprinkle with Parmesan cheese and parsley, then serve.

BIEROCKS GERMAN HAMBURGER AND CABBAGE FILLED BUNS
Both grandmothers used to make these and it seemed that they could never make enough of them. They are great fresh from the oven and on the rare occurrence that there were leftovers, we enjoyed them cold. The same was said when we served them at the restaurant! Enjoy.

- 1. FILLING: In a large frying pan, cook the cabbage and onion together until the cabbage is completely softened and golden. ** This process can be hastened by adding a half-cup of water (or so) and covering the pan, but eventually cook all the liquid off before proceeding.
- 2. Season with salt and pepper.
- 3. In a separate pan, brown the hamburger and drain. ** Season with salt and pepper.
- 4. Mix the cabbage/onion with the hamburger thoroughly. ** You may complete this part of the recipe in advance, refrigerating until needed, or just before you are ready to assemble the rolls.
- 5. DOUGH: In a large mixing bowl combine 2 cups of the flour and the yeast.
- 6. In a saucepan heat milk, sugar, butter and salt just till warm (115-120 degrees F) and butter is almost melted; stir constantly.
- 7. Add to flour mixture; add eggs.
- 8. Beat at low speed for 1/2 minute, then three minutes at high speed.
- 9. Stir in as much remaining flour as you can mix in with a spoon.
- 10. Turn out onto a floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
- 11. Shape into a ball, and place in a greased bowl; turn once. Cover and let rise in a warm place till double (about 1 hour). Punch down and cover; let rest 10 minutes.
- 12. ASSEMBLY: Roll out the dough into a large rectangle, and a thickness of about 1/4 inch.
- 13. Cut into squares of 3 inches by 3 or 4 inches by 4.
- 14. By the spoonful, place some filling mixture into the center of each square, apportioning all of the mixture among the squares.
- 15. For each, bring the two opposite corner ends of the dough square up to meet one another, then do the same with remaining ends and pinch them (all 4) together with your fingers.
- 16. You will see that you now have open slits along the diagnals; pinch these together as well, making a seam of each. ** Water on your fingertips will facilitate them staying"glued" together.
- 17. The end product should be a square with a seam running from each corner to the center where all four are joined.
- 18. Set the squares on a baking sheet (if you had trouble keeping the seams closed, you can flip them over so that the seams are against the baking sheet, thereby keeping all the filling in place and making a nicer presentation).
- 19. Let raise 30 minutes. ** Bake in a pre-heated oven at 375 °F for 30 minutes or until golden brown. When removing from the oven brush each bun with melted butter.

My mother was a country cook, plain and simple. But as I have traveled and worked and experienced foods from around the world, I look back and realize that many of the dishes she prepared, while simple, were perfect for that moment. Sometimes we have to put emotion and love in a dish to make it extra-special. The dish I am going to give you today is one like that. Simple and easy, yet full of love and goodness.
