Vegetable oil (enough to completely cover the bananas)
5 ripe but firm small bananas
1 cup all-purpose flour or whole wheat flour ((or GF flour, almond flour or coconut flour))
3 large eggs (beaten and mixed with 1 tsp water)
1 cup bread crumbs

Steps:

  • Heat the oil to 350ºF (180ºC) in a deep-fry machine or heavy-bottom saucepan over medium heat. While oil is heating, peel the bananas, remove the stringy parts that cling to the peeled fruit, and cut crosswise in half.
  • Place the flour, eggs, and bread crumbs each in a separate bowl. Dredge the banana halves in flour to get an even coating. Shake to remove excess flour. Next, soak the banana halves in the beaten eggs mixed with 1 tsp water. Finally, cover the banana halves in bread crumbs.
  • Fry each half until lightly golden (do NOT overcrowd the pan), about 1 to 2 minutes. Remove with a slotted spoon. Place on a plate lined with a double layer of paper towels.

One 4-ounce bar semisweet chocolate, chopped
Small pinch cayenne pepper (less than 1/16 teaspoon)
1 tablespoon unsalted butter
4 slightly underripe bananas, split lengthwise in half, then cut crosswise in half
1/4 cup light brown sugar
1/3 cup sliced almonds, toasted

Steps:

  • For the chocolate sauce: Combine the chocolate and 1/4 cup water in a heavy small saucepan. Stir over medium-low heat until the sauce is melted and smooth. Remove from the heat. Stir in small pinch cayenne pepper. Set aside.
  • For the bananas: Place the brown sugar in a pie dish or on a plate. Toss the bananas in the brown sugar until nicely coated. Melt the butter in a heavy large skillet over medium-high heat until the butter becomes golden brown. Add the bananas to the hot pan cut-side down. Turn the bananas over as soon as they are golden brown and the sugar forms a crunchy coat on the bananas, about 30 seconds per side (do not allow bananas to become soft and mushy). Divide the bananas between 2 shallow bowls or plates. Spoon the chocolate sauce over the bananas. Sprinkle with the toasted almonds, and serve immediately.
  • Cook's Notes: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
  • An alternate way to melt the chocolate is to combine the chocolate and water in a small metal bowl over a small saucepan of simmering water, and stir the chocolate mixture until melted and smooth. Remove the bowl from over the water and set aside.

oil (for deep frying, olive oil is typically used)
1 cup cornflour (also called masa harina)
1/4 cup sugar
1 tablespoon butter, melted
1 egg
1/4 teaspoon salt
2 tablespoons white rum
2 tablespoons milk
4 firm ripe bananas
1 teaspoon ground cinnamon
2 tablespoons dark brown sugar

Steps:

  • Heat oil to 375°F in a Dutch oven or deep fryer.
  • Mix corn flour and sugar in a bowl. Add butter, egg, salt, rum, and milk, stirring until it forms a thick batter.
  • Peel bananas, and cut into quarters. Mix cinnamon with brown sugar. Sprinkle half the cinnamon/ brown sugar mixture on the banana quarters.
  • Roll banana quarters in the batter, and drop carefully into the hot oil, a few at a time. Fry 2 - 3 minutes on each side, turning once, until golden brown.
  • Drain fried bananas on paper towels and dust with remaining cinnamon/brown sugar mixture.
  • Continue until all banana quarters are fried and dusted. Serve warm.

3/4 cup melted semi-sweet chocolate
12 large wonton wrappers
12 (3-inch) pieces of whole bananas
2 tablespoons butter, melted
Oil for frying
Shaker of powdered sugar
6 scoops vanilla ice cream
1 1/2 cups chocolate sauce, warm

Steps:

  • Preheat the fryer. Spread 1 tablespoon of the melted chocolate over each wonton, leaving a 1/2 inch border. Place the banana on the bottom edge of each wonton. Lightly wet the edges of each wonton with the butter. Fold in the ends toward the center about 1/4-inch. Then, beginning at the bottom, roll up the wonton securely, pressing to close. Fry until the bananas are golden, about 3 minutes, stirring constantly for overall browning. Remove and drain on paper towels. Sprinkle with the powdered sugar. To serve, place a scoop of the ice cream in the center of each shallow bowl. Lay two of the fried bananas next to each scoop of ice cream. Drizzle with the chocolate sauce.

3 medium-size bananas, peeled, cut lengthwise, and halved again crosswise
2 tablespoons flour
2 tablespoons ground cardamom
2 teaspoons ground cinnamon
2 cups milk
1/4 stick butter
1 cup coconut milk, preferably Chaokoh, a Thai brand
10 teaspoons dark brown sugar
4 teaspoons dark rum
2 tablespoons toasted fresh grated coconut
Fresh mint for garnish

Steps:

  • Mix the flour, cardamom and cinnamon. Dip bananas in milk, and dredge in the dry mixture. Cook slowly in butter about 4 minutes until they are brown on both sides.
  • Meanwhile, to prepare the sauce, combine milk, sugar, rum and coconut in a saucepan and bring to boil for 2 minutes. Spoon sauce on a plate. Place two quarters of bananas on the plate, round side up, and garnish with a sprig of mint.
