BOURBON FRIED APPLES
This is a slightly healthier spin on traditional fried apples. The skin is left on, and the reduced butter and sugar are offset with flavor-boosting bourbon, raisins, cinnamon, and lemon juice. I use Cameos for this recipe, as they are naturally sweet and hold their shape well, but if you're using a tarter variety, you may wish to increase the brown sugar and omit the lemon juice. Golden rum can substitute for the bourbon.

- Combine water, butter, and Bourbon in a large skillet over medium heat; stir until butter melts. Add apples, raisins, brown sugar, and cinnamon; stir to coat. Bring to a boil, reduce heat to low, and simmer, stirring frequently, until apples have softened and liquid has reduced to a syrup, about 10 minutes. Stir lemon juice into apples and serve warm.

- Heat the butter over high in a 12 inch skillet until frothy. Add the apples. Cover and cook, stirring occasionally, until soft, about 3 minutes. Stir in water, brown sugar, and cinnamon. Cook covered, stirring occasionally, for about 5 minutes. Syrup will become thick, apples soft, and pan almost dry. Add the cream and cook, uncovered, until juice is syrupy, 1-2 minutes. Turn off heat and stir in bourbon. Let stand another minute to allow alcohol to evaporate.

- In a 12-inch skillet, heat the butter over medium-high heat until frothy. Add the apples, cover and cook, stirring occasionally, until the apples have begun to soften, about 3 minutes.
- Stir in the water, brown sugar and cinnamon and cook, stirring occasionally, for about 5 minutes, until the syrup is thick, the apples are soft and the pan is almost dry.
- Add the cream and cook, uncovered, until the juice is syrupy, 1 to 2 minutes. Turn off the heat, Stir in the bourbon and let stand for another minute to let the alcohol evaporate.
- Spoon the apples over pound cake or serve in bowls, wit ha scoop of ice cream or a dollop of whipped cream on top.
- Note: If your syrup isn't getting syrupy enough and your apples are already soft, remove the apples with a slotted spoon, crank up the heat a bit and really let your sauce caramelize, then put the apples back in and add the bourbon.

- Bourbon Crème Anglaise:.
- In small bowl, whisk egg yolks with sugar; set aside. If using vanilla bean, use tip of knife to scrape seeds into saucepan. Add pod and cream; heat over medium heat just until bubbles form around edge. Discard pod.
- Gradually whisk cream into egg mixture. Return to saucepan and cook over medium-low heat, stirring and being careful not to boil, until thick enough to coat back of wooden spoon, 3 to 5 minutes. Strain into pitcher.
- Stir in vanilla (if using) and bourbon.
- Pre-heat oven to 400.
- In large bowl, whisk maple syrup, orange rind and juice, cranberries and cinnamon. Cut each apple into 8 wedges; add to bowl along with pecans and toss gently.
- Arrange in 13- x 9-inch (3 L) glass baking dish. Cover and roast in 400°F (200°C) oven, basting and stirring twice, until apples are tender, about 30 minutes. Uncover and roast until very tender and sauce is thickened, about 20 minutes.
- Pool some of the crème anglaise on 6 dessert plates. Top with apples; drizzle with remaining crème anglaise.

- Preheat oven to 375°F Grease a baking pan just large enough to hold the apples.
- With a small knife, cut at an angle to enlarge the core opening at the stem end of each apple to about 1 inch diameter. (The opening should look like a funnel shape.).
- Arrange the apples in the prepared pan, stem end up.
- In a small saucepan, combine 3/4 cup water with brown sugar, nutmeg and pepper. Bring the mixture to a boil, stirring. Boil for 6 minutes.
- Combine the walnuts and raisins. Spoon some of the walnut/raisin mixture into opening of each apple.
- Top each apple with some of the diced butter.
- Spoon the brown sugar sauce over and around the apples. Bake, basting occasionally with the sauce, until the apples are just tender, 45-50 minutes. Transfer the apples to a serving dish, reserving the brown sugar sauce in the baking pan. Keep the apples warm.
- For the caramel sauce, mix the butter, cream and reserved brown sugar sauce in a saucepan. Bring to a boil, stirring occasionally, and simmer until thickened, about 2 minutes. Let the sauce cool slightly before serving.

This is easy and a great dessert or afternoon treat just for you! I like Fujis so I use those, but I'm sure that your favorite will work too. If Bourbon isn't for you, or these are for the kiddies, try using one of Torani's wonderful flavored syrups (Non-alcohol, or even a little maple syrup would do the trick! Depending on the size of the apples that you use, the time is approx.

- Mix the brown sugar, butter and cinnamon to form a paste. Stuff the paste into the cored apple, then wrap the apple with the pastry. Use remaining pastry to add a decorative touch. Bake for 20 minutes at 375°F.

- Place the sugar in a pan with 3 to 4 tablespoons of water. Allow this to boil until it turns a rich amber color (232°F) on a candy thermometer).
