FRIED (AND BAKED) MEATBALLS

Fried (and Baked) Meatballs image

This is not a low fat or calorie recipe. I'm putting it in to calculate the damage from eating 3 meatballs! (It is delicious, BTW!)

Categories     Beef/Pork     Italian     Italian Beef/Pork     Dinner     Beef/Pork Dinner

Yield 16

Number Of Ingredients 14

* Bread, wheat (including toast), 5 slice
* Milk, nonfat, 1 cup
* Ground beef, lean, 32 oz
* Garlic powder, 1 tsp
* *Onion powder, 1 tsp
* Salt, 1 tsp
* Pepper, black, .25 tsp
* Parsley, dried, 2 tbsp
* Parmesan Cheese, grated, 1 cup
* Egg, fresh, 2 large
* Bread crumbs, dry, grated, seasoned, 2 cup
* Egg, fresh, 2 large
* Water, tap, .25 cup (8 fl oz)
* *Canola Oil, 2 tbsp

Steps:

  • Heat oven to 450.
  • Soak bread (without crust) in milk. Squeeze out. In large bowl mix the soaked bread with the ground beef, garlic, parsley, parmesan, 2 eggs and seasonings. Form balls (1.5 inches or so). Add cooking oil to the frying pan.
  • Get the pan really hot before adding the meatballs. The oil should splatter when you pop a drop of water in it. Dip meatballs in 2 eggs beaten with 2-4 tbs water, let excess drain off, roll in bread crumbs and add to pan. Fry about 2 minutes on each side, until well browned. Move to rack on baking pan. Place in hot oven for 15 or 20 minutes until the fat drains from the meatballs.
