Fresh garden vegetables - onion, zucchini, potato and bell pepper - enhance this savory custard

1 frozen pie crust (9-inch), thawed
PAM® Original No-Stick Cooking Spray
2/3 cup chopped onion
2/3 cup thinly sliced zucchini
1/2 cup finely chopped green or red bell pepper
1 cup diced leftover baked potato
1 cup Egg Beaters® Original
1 cup fat free milk
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
Freshly ground black pepper, optional

Steps:

  • Preheat oven to 450 degrees F. Lightly prick side of pie crust with fork. Bake 5 minutes or until lightly browned; set aside. Reduce oven to 350 degrees F.
  • Spray medium skillet with cooking spray; heat over medium heat. Add onion, zucchini and bell pepper; cook and stir 5 to 8 minutes, or until crisp-tender. Drain; pat dry with paper towel. Add potato to vegetables; spoon vegetable mixture into crust.
  • Combine Egg Beaters, milk, oregano and basil. Season with black pepper, if desired. Pour over vegetable mixture. Cover edge of crust with aluminum foil to prevent overbrowning.
  • Bake 45 to 50 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting into 6 slices.

SPINACH MUSHROOM QUICHE

2 tablespoons olive oil
8 ounces sliced button mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
1 store-bought pie crust
One 10-ounce box frozen chopped spinach, thawed, drained and pressed to remove any water
6 ounces Gruyere, grated
1 1/2 cups half-and-half
8 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large skillet over medium heat. When the oil is hot, add the mushrooms, garlic and thyme. Cook, stirring occasionally, until the mushrooms have browned, 5 to 6 minutes. Season with a pinch of salt and pepper. Remove the skillet from the heat.
  • Press the pie crust into a deep, 9-inch tart pan with a removeable bottom (or a deep-dish pie pan). Layer the mushrooms and spinach into the crust and top with the cheese.
  • Whisk together the half-and-half, eggs and a good pinch of salt and pepper in a large bowl. Pour the egg mixture into the crust.
  • Place the pan on a rimmed baking sheet. Lightly cover the pan with aluminum foil and bake for 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, another 10 to 15 minutes. Let the quiche sit for 10 to 15 minutes, then remove from the pan, slice and serve.

1 green bell pepper, diced
2 cups cheddar cheese, shredded
2 tablespoons flour
4 large mushrooms
4 eggs
1 1/2 cups milk
1/2 teaspoon salt
1 dash cayenne

Steps:

  • Start preheating oven to 375. While that is happening --
  • Saute onions, peppers, and mushrooms in one tbsp butter or margarine over medium heat for 10 minutes.
  • While vegetables are cooking, toss cheese and flour together.
  • Combine eggs, milk and seasoning and mix together.
  • Add cheese and vegetables to egg mixture and mix well.
  • Pour into greased pie dish and bake at 375 degrees for 45 minutes.
  • Let stand 30-45 minutes before serving.
  • Serve with orange slices and toast.

½ large green bell pepper, chopped

1 cup buttermilk baking mix
½ cup shredded sharp Cheddar cheese
¼ cup vegetable oil

½ teaspoon paprika

½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Heat 1 teaspoon vegetable oil in a skillet over medium heat; cook and stir onion, bell pepper, and garlic in hot oil until just tender, about 5 minutes. Transfer mixture to a large bowl.
  • Mix eggs, zucchini, yellow squash, carrot, green onion, baking mix, 1/2 cup Cheddar cheese, 1/4 cup vegetable oil, salt, Italian seasoning, paprika, red pepper flakes, and black pepper into onion mixture. Spread vegetable mixture into prepared baking dish and sprinkle with remaining 1/2 cup Cheddar cheese.
  • Bake in preheated oven until lightly browned, about 35 minutes.

1 small yellow onion, chopped

Steps:

  • Preheat the oven to 375° with a baking sheet on the center rack. Fit the pie crust into a 9-inch pie plate (about 1-inch deep). Fold the edges of the crust under and crimp as desired. Chill in the refrigerator while preparing the filling.
  • Melt the butter over medium heat in a medium skillet. Add the onion and bell pepper. Cook, stirring now and then, until softened, about 10 minutes. Add the garlic and cook, stirring often, until fragrant, about 2 minute. Remove from heat.
  • Whisk together the eggs, half-and-half, sour cream, salt, pepper, and nutmeg in a large bowl. Stir in the spinach, cheddar cheese, parmesan cheese, and bell pepper mixture. Pour into the prepared crust.
  • Place the quiche on the preheated baking sheet and bake until it has puffed in the center, is just set and the crust is golden, 40 to 50 minutes. Transfer the quiche to a wire rack to cool. Serve warm or room temperature.

1 pie crust
1 red bell pepper, chopped
1/2 red onion, chopped
2 garlic cloves, minced
2 tablespoons basil, fresh chopped
3 plum tomatoes, sliced
2 tablespoons olive oil
1 cup half-and-half cream
4 eggs
2 cups mozzarella cheese, fresh & chopped into cubes
1/2 cup parmesan cheese, fresh grated
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Heat the Olive Oil in a skillet at medium-high heat. Add onion and red bell pepper. Season with salt and pepper. Cook for about 2-3 minutes or until onions are translucent. Remove from heat.
  • Press crust into a 9" pie plate. Bake at 425 degrees for about 10 minutes. You want it cooked but the edges should not be brown. They will get brown later. Cool the pie crust.
  • Whisk together the eggs and half & half. Season with about 1 teaspoon of salt and 1/2 teaspoon pepper.
  • In the bottom of the pie crust layer the tomatoes, cheese, basil, and vegetables. Pour egg mixture on top.
  • Place in a 350 degree oven for about 30-40 minutes or until the egg custard is set. Check on it frequently to ensure crust edges do not get too brown. Cover the edges with strips of foil if they do.

1 tablespoon tarragon, fesh and finely sliced
4 eggs
1/2 cup heavy cream
1 cup half-and-half
1/3 lb low-fat cheddar cheese, grated
4 slices bacon

Steps:

  • Preheat oven to 350 degrees.
  • Heat the olive oil in a pan.
  • Saute the begetables (onions first if you use them) until they become tender.
  • Season with salt and pepper.
  • Remove from heat, mix in tarragon and set aside.
  • Beat the eggs, cream and half and half together until well mixed.
  • Place the piecrust in a pie dish.
  • Sprinkle half the cheese onto the piecrust, follwed by the vegetables and the remainder of the cheese.
  • Pour egg mixture over filling.
  • Place quice on a cookie sheet on your oven's middle rack.
  • Bake for 35 to 45 minutes until the center of the quice no longer jiggles.
  • Remove the quiche from the oven and let it cool for 5 minutes before you slice it.
  • Tip: If the quiche is watery, it is overcooked; adjust your cooking time.
