ROASTED RED PEPPER TOMATO BISQUE
A creamy roasted red pepper and tomato bisque garnished with croutons and blue cheese crumbles.

Steps:
- Melt the butter in a large pot over medium heat. Add the chopped onion, carrot, and celery. Cook the vegetables until they start to soften about 5-10 minutes. Add the flour to the vegetables and stir. Add the red peppers, tomatoes, and herbs. Break up the tomatoes with a spatula and let it all cook together for 2 to 3 minutes. Add the stock and bring the pot to a simmer. Simmer the soup for 30 minutes, stirring occasionally.
- In a separate pan, heat the olive oil over medium heat. Add in the smashed garlic and let it cook for a few minutes in the oil (keep it moving around the pan). After a couple of minutes, transfer the garlic to the other pot with the soup, reserving the oil.
- Add the bread cubes to the pan and toss to coat them in the oil. Season them with a few pinches of salt and pepper. Toast the cubes in the pan for just a few minutes. Keep a close eye on them because they can burn easily. Once toasted, remove the croutons from the pan and set aside.
- Once the soup has simmered for 30 minutes, remove the parsley, thyme stems, and bay leaf. Puree the soup using an immersion blender or stand blender. Wipe out the stockpot and pour the soup back into the pot through a fine mesh strainer. Discard the solids. Reheat the soup over medium heat. Once warmed, add the cream.
- Top each serving with the croutons, blue cheese crumbles, and chopped parsley.

FRESH TOMATO AND PEPPER BISQUE
I basically came up with this at the end of summer and picked all my tomatoes, bell and banana peppers and did not know what to do with them all! Threw everything in a pot and used the imagination. I served it with a dollop of sour cream and chips. Try topping with grilled cheese croutons. Make it your own!

- Preheat the oven to 450 degrees F (230 degrees C).
- Place tomatoes and onion on a rimmed baking sheet; drizzle with about 1/4 cup olive oil. Season with salt and pepper.
- Roast in the preheated oven until well browned and softened, about 15 minutes. Let cool until ready to use.
- Heat remaining olive oil and tomato juice in a saucepan over medium-low heat. Add garlic and the roasted onion; cook until softened, about 10 minutes.
- Chop the roasted tomatoes and add to the soup. Add bell peppers, banana peppers, chicken broth, sugar, and butter. Simmer until vegetables are very tender, about 20 minutes. Remove from heat and puree until smooth in a blender or using an immersion blender.
- Return bisque to the pan and add cream. Simmer over low heat until heated through, about 15 minutes. Garnish with basil.

FRESH TOMATO BISQUE
Steps:
- Gather the ingredients.
- Melt the butter in a large saucepan .
- Add the onion and toss to coat. Stir over medium heat until the onion is tender.
- Sprinkle on the flour and continue stirring over medium heat until the mixture foams.
- Stir in the water and bring to a boil.
- Measure 3/4 cup of the tomato pieces and set aside. Add the remaining tomato pieces to the boiling mixture.
- Stir in the brown sugar and cloves .
- Reduce the heat and cook, uncovered, at a gentle bubble for 30 minutes.
- Transfer to a food mill and force the mixture through.
- Return to the saucepan and stir in the reserved tomato pieces.
- Mix in the salt, pepper , and cream.
- Gently warm the soup over medium heat, but do not boil.
- Serve and enjoy!

TOMATO BISQUE

- Heat the butter in a large soup pot over medium-high heat. Add the bacon and cook, stirring, until crisp and most of the fat has rendered, about 1 minute. Using a slotted spoon, transfer the bacon to a paper towel-lined plate and set aside. Lower the heat to medium, add the onion, carrots, celery, and garlic and cook, covered, stirring occasionally, until soft and fragrant, about 8 minutes.
- Stir in the flour and cook, stirring, for 3 minutes. Pour in the broth and tomatoes and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the pot. Lower the heat and simmer for 30 minutes. Remove from the heat and allow to cool.
- When the soup base is cool, remove and discard the herb bundle. Working in batches, transfer the mixture to a blender and puree until smooth. Using a sieve over a large bowl, strain the tomato puree. Return the puree to the pot and reheat over medium heat.
- Whisk the heavy cream and salt into the soup and season with pepper to taste. Divide among warm soup bowls, garnish with the crispy bacon, and serve immediately.

- In a large stock pot, melt 3 tbsp of butter. Add onion, celery, and garlic. Over medium heat, cook till soft and translucent.
- Add tomatoes (in juice)and roasted red pepper, bring to boil, reduce heat to low.
- Simmer for 20-30 minutes, stirring occasionally.(If too much liquid is absorbed, add 1/2 cup of chicken stock.).
- Add stock and whipping cream, stir to combine.
- In small increments, puree till mostly smooth. In another pot, place pureed soup and heat on low till all of the mixture has been pureed. Or, if you want to keep it to one dish, place pureed soup in original pot.
- Enjoy! This soup freezes well, so feel free to double the recipe for another night! We like to top with croutons!

ROASTED TOMATO BISQUE

- Preheat the oven to 400 degrees F.
- In a mixing bowl, combine the drained whole tomatoes, olive oil, light brown sugar, carrots and shallots, and toss to coat. Season the vegetables with salt and pepper. Place the vegetables on a silicone or parchment-lined baking sheet and roast until caramelized, about 30 minutes.
- Heat a soup pot over medium heat. Add the butter and cook until foaming. Add the crushed red pepper and garlic and saute for 1 minute. Add the tomato paste and cook for 1 to 2 minutes. Then add the sherry. Cook until all the liquid has evaporated and the alcohol has cooked off, 1 to 2 minutes. Add the roasted vegetables, crushed tomatoes and 1 cup chicken stock. Season with salt and pepper and bring to a simmer. Let simmer for 15 minutes.
- Add the heavy cream and, using an immersion blender, puree the soup until uniform in texture. Add more chicken stock to adjust the consistency to how you like it.
TOMATO BISQUE II
I can this soup mixture (before adding the butter, flour and milk) about every other year. You determine how much you do at one time. I usually put up about 80 jars at a time, mostly in October when the weather has cooled down.

- Run the tomatoes through a food mill to remove the seeds and skins, and place in a large pot over medium heat. Stir in the bouillon, sugar, salt, bay leaf, basil and pepper. Bring to a boil, then reduce heat, and simmer 30 minutes. (If you're going to can this mixture, process it now.)

ROASTED YELLOW PEAR TOMATO, YELLOW PEPPER AND BASIL BISQUE
I realize not everyone can get those little yellow cherry or pear tomatoes. But if you can ... they are wonderful. - Tomatoes and Peppers -- Add the tomatoes and peppers to a baking sheet lined with parchment paper or just sprayed with non stick spray like Pam. Drizzle with the olive oil, salt, pepper, and oregano and toss lightly. Bake in a 400 degree oven until the peppers soften and to start to brown and the tomatoes just begin to pop. About 15-20 minutes.
- Broth Base -- As you roast the vegetables, start the base for the soup. In a large pot, add the olive oil, garlic and onion and saute on medium heat.
- Vegetables -- Add all the tomatoes to the onion mixture and add in 2 cups of the broth, and sherry wine. The peppers, you want to put in a small bowl and cover with plastic wrap. After 10 minutes, the skin should peel right off. Rough chop and add to the rest of the soup.
- Puree and Finish -- Use your immersion blender, or you can use a regular blender, and puree until smooth. I like to leave a little texture to mine. Return to the pot if using a regular blender. Season with salt and pepper, then add any additional broth if desired, and the cream. Bring to medium heat. Right before serving, check for seasoning one more time, and add in the fresh basil. I like lots of fresh ground pepper in mine.
- Enjoy this beautiful creamy pale yellow soup. It is sweet and fresh tasting, and it absolutely delish! I garnish mine with a toasted baguette slice with goat cheese.
