HOMEMADE SNOW CONES RECIPE (MADE WITH REAL FRUIT)

Steps:
- In a medium saucepan combine the sugar and fruit.
- Simmer until the fruit has softened and the sugar dissolved, roughly 3-4 minutes.
- Transfer your fruit mixture to a food processor and blend the fruit into a smooth puree. If you don't have a processor try passing it through a fine sieve.
- Once pureed strain over a bowl to remove any seeds or bits from the fruit. If you find the syrup a bit too thick at this stage thin it out with some juice or a little water. Store the syrups in the fridge for up to 7 days.
- Place ice cubes in a blender and pulse to create fine shaved ice. Store in the freezer if you are not using it straight away.
- Scoop your shaved ice into serving dish of your choice and pack it tight together. Pour over your fruit syrup and enjoy immediately!
- To make a rainbow snow cone, pour your individual flavors into a squirt bottle or jug with a spout. Pour each flavor in a line across our scoop of ice, creating a rainbow effect. Enjoy Immediately!!!
SNO CONES
Steps:
- In a saucepan bring the water and 1/2 cup sugar to a boil. Let cool then pour into a shallow pan and freeze overnight. The next day, scrape the surface of the ice with a metal spoon to make shaved ice. Store in the freezer until ready to serve. To make the toppings, puree the raspberries with the remaining 2 tablespoons of sugar and strain to remove the seeds and set aside. Blend the grape juice concentrate with the mint leaves in a blender and strain and set aside. Whisk together the citrus juices and honey and set aside. Using a large ice cream scoop, scoop a ball of the shaved ice onto 4 cones. Drizzle with various syrups and serve immediately.

- Coarsely mash strawberries, raspberries and sugar in a bowl with a potato masher. Let berries stand, loosely covered, at room temperature, stirring occasionally, for 1 hour.
- Drain berry mixture in a fine sieve set over a bowl, pressing lightly on berries. Reserve crushed berries for another use.
- For each serving, spoon 2 1/2 tablespoons berry syrup over 3/4 cup lightly packed shaved ice.
- Serve immediately.

- Pour each of the fruit juices into separate saucepans. Add 50g (1/4 cup) of sugar to each. Stir and bring to the boil, then simmer on a medium heat until reduced by approximately two-thirds. This takes around 30-50 minutes, depending on the juice.
- Add a small blob of food colouring gel to the fruit juices if using. Use green for the apple flavour, red for the orange flavour and yellow for the pineapple flavour. Cherry juice shouldn't need any food colouring.
- Stir in until completely mixed, then leave the syrups to cool. They will thicken slightly when cool*.
- Spoon the shaved ice into cones, bowls or cups and pour 1-2 tbsp of the syrup of your choice on top of each cone. Serve immediately.
