FRESH FRUIT WITH HONEY VANILLA YOGURT



Fresh Fruit with Honey Vanilla Yogurt image

2 cups plain yogurt
2 tablespoons good honey
1/2 teaspoon pure vanilla extract
Seeds scraped from 1/2 vanilla bean (optional)
1 pint fresh strawberries, hulled and cut in half
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 golden papaya, peeled, cut in half, seeds removed and diced
Sprig of mint, for garnish

Steps:

  • Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the berries and papaya and gently mix the fruit together. Place in a serving bowl and garnish with the mint. For serving, spoon the yogurt mixture over the fruit.

1 (11 ounce) can mandarin oranges, drained
1 large red apple, cubed
1 cup fresh strawberries, sliced
1 cup halved red seedless grapes
3 kiwi fruits, peeled and sliced
1 cup fresh blueberries
1 cup fresh dark sweet cherry, sliced
2 medium firm bananas, sliced

Steps:

  • In a large bowl, combine the first 6 ingrediants; cover and refridgerate overnight.
  • Just before serving, fold in the blueberries, cherries and bananas; gently toss.

This recipe came about due to our new found love of plantain. Have you ever tried it before? It's super delicious and we love to eat it fried with honey, so we began to experiment to find the perfect plantain fritter recipe, and here it is. Hope you enjoy it!

Number Of Ingredients 8

260 g plantains
20 g kale
50 g coconut flour
1 egg
1 garlic clove
1 tablespoon coconut oil
4 tablespoons Greek yogurt
1 tablespoon honey

Steps:

  • Peel the skin from the plantains then grate into a large bowl.
  • Add in the rest of the fritter ingredients (except for the coconut oil) and mix until well combined.
  • Divide into 12 equal parts, roll into balls, then flatten to form your fritters.
  • Heat the coconut oil in a frying pan. Once hot, add in the fritters and fry for 3 minutes on each side.
  • Mix the Greek yoghurt with the honey and use for dipping.
