RHUBARB CREAM SQUARES
These are one of my favorite ways to eat rhubarb. The custard balances out the tartness of the rhubarb. Even better with a dollop of whipped cream. My grandmother was a great baker and this recipe comes from her.

Steps:
- Mix first four ingredients well and press into 9" x 13" pan; bake at 350°F for 5-10 minutes.
- Mix together remaining ingredients and pour over crust; bake at 350°F for 40 minutes or until set.

- 1. Heat oven to 350^. Press cookie dough evenly into bottom only of an ungreased 13x9-inch pan.(If dough is sticky, use floured fingers or bottom of a glass). In medium bowl, beat cream cheese, sugar and 3/4 cup of the strawberry topping with electric mixer on medium-high speed about 1 minute or until well blended. Add eggs; beat about 2minutess or until well blended and creamy. Spread evenly over crust in pan. Bake 30-35 minutes or until center is set. Cool 1 hour. Center will sink slightly as it cools -so don't think you did something wrong.lol In a medium bowl, mix whipped topping, food color and remaining 1/4 cup strawberry topping. Spread mixture over cooled cream cheese layer. Refrigerate about 2 hours or until set. --- To serve, cut into 6 rows by 3 rows. Garnish each serving with fresh berries. Cover and chill any remaining dessert. LOL. --- Note: I have use other ice cream toppings and some pancake syrups with pretty good results too- like blueberry,raspberry, etc. and fresh fruit.
CREAMY STRAWBERRY DESSERT SQUARES
Easy dessert squares. They can be made with any fruit topping but strawberries and cream can't be beat!

- Preheat oven to 350 degrees F (175 degrees C). Spray the inside bottom of a jelly roll pan with cooking spray.
- Mix sugar cookie mix, butter, and egg together in a large bowl until a soft dough forms; press evenly into prepared pan.
- Bake in the preheated oven until crust is light golden brown, 10 to 15 minutes. Cool completely, about 30 minutes.
- Beat cream cheese using an electric mixer on medium speed in a bowl until smooth. Add whipped topping and stir until smooth; spread over crust. Refrigerate.
- Mix sugar and cornstarch together in a 2-quart saucepan; add 1 cup strawberries, water, and vanilla extract. Cook and stir strawberry mixture, mashing strawberries with spoon while cooking, over medium heat until strawberries are softened and mixture is thickened, 10 to 15 minutes.
- Stir food coloring into strawberry mixture and remove from heat; cool for 10 minutes. Gently stir remaining 3 cups strawberries into strawberry mixture; spoon over cream cheese filling. Refrigerate until set, about 1 hour. Serve within 4 hours.

STRAWBERRY CREAM SQUARES
A cool simple jello dessert. My Aunt Barb passed this recipe on to me when I was little. It contains my favorite combination: strawberries and sour cream. Cooking time is chill time.

- In large bowl dissolve jello in boiling water.
- Add frozen berries and stir until thawed.
- Stir in remaining fruit.
- Pour 1/2 of the mixture in 9x13 pan and chill.
- When firm, spread sour cream on first layer and then pour remaining jello-fruit mix on top and chill until firm.
- Note: To save time you could just put the sour cream on top.

- In a large bowl, combine flour and confectioners' sugar. Cut in the butter until crumbly. Press into a greased 15x10x1-in. baking pan. Bake at 350° for 16-19 minutes or until golden brown. Cool on a wire rack., In a small saucepan, combine the sugar and cornstarch. Stir in water until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in orange extract. Cool completely., In a large bowl, beat the cream cheese, sugar and orange extract until smooth. Spread over crust. Cover and refrigerate for 45 minutes. Cut into 28 squares., Cut each kiwi into seven slices. Place a kiwi slice in the middle of each square; top each with a strawberry half. Brush with glaze; refrigerate until set.

MAPLE WALNUT CREAM SQUARES
I have made these for church fellowship gatherings and they always go over very well. This is a no bake recipe. The cook time is the 5 minutes cooking on top of the stove.

Steps:
- Line an 8 inch square pan with foil.
- Place 10 wafers in a single layer in bottom of pan, cutting to fit. Save other 10 for top
- Set aside.
- Crush another 10 wafers for filling. Or use about 3/4 cup graham cracker crumbs
- In saucepan, mix brown sugar, butter, milk and syrup.
- Bring to boil and simmer 5 minutes, stirring constantly.
- Remove from heat.
- Stir in crushed wafers, coconut and walnuts.
- Spread over wafers in pan.
- Top with remaining wafers, cutting to fit.
- FROSTING.
- Mix all frosting ingredients until smooth.
- Spread over top while warm.
- Sprinkle with additional nuts if desired.
- Refrigerate until firm.
