CHINESE FRIED RICE WITH ONLY SIX INGREDIENTS



Chinese fried rice with only six ingredients image

This is the recipe of the basic Chinese fried rice.

500 g rice
3 medium size eggs
2 tablespoons chopped garlic
2 tablespoons scallions
½ teaspoon of salt
¼ teaspoon ground white pepper
2 tablespoons of premium grade light soy sauce
3 tablespoons vegetable oil

Steps:

  • Cut the scallion into thin rings. Soak a quarter of it in cold water for ten minutes, Remove and drained. Use the other three-quarters for frying the rice.
  • Mix the beaten eggs with the cooked rice.
  • Heat up the vegetable oil over low heat in the wok.
  • Saute the chopped garlic slowly. Once it starts to turn sticky and become light brown, remove it immediately from the oil. Set aside. Leave the garlic oil in the wok.
  • Add the rice to the oil. Stir-fry the rice over low heat slowly until the egg is cooked and form a thin layer on each grain of rice.
  • Add the fried garlic, the unsoaked scallions, salt, and pepper to the rice, stir-fry over high heat for about one minute.
  • Change to low heat, add the premium soy sauce, mix well and dish out.
  • Sprinkle the soaked, drained scallion on the fried rice. Serve.

Fresh Chinese Fried Rice image

I never have day old white rice in my fridge unless we had ordered Chinese the night before. So I had to come up with something for fresh rice. This comes out nicely with out the sticky rice I have got with other recipes when using attempting to fry fresh cooked rice. You can add cooked chicken or pork and make it a one-dish meal.

2 cups dry white rice
4 cups water
1/4 cup soy sauce
1 pinch ground ginger (optional)
1 tablespoon margarine or 1 tablespoon oil
3/4 medium onion, diced
16 ounces frozen peas and carrots, half a bag
1 tablespoon margarine or 1 tablespoon oil
3 eggs

Steps:

  • Bring water, soy sauce, and ground ginger to a boil. (Go easy on the ginger!).
  • Throw in rice. Return to boil, reduce to medium heat and cover for 15 minutes. Don't over cook -- you will end up with rice mush if you do.
  • Uncover and let cool for 15 minutes occasionally fluffing with a fork.
  • Mean while in oil saute your onions, peas & carrots until the carrots a heated thoroughly. Gently toss into the rice.
  • Fry up your eggs scrambled style. Gently toss into rice mixture.

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce (add more if you like)

Steps:

  • Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
  • Allow wok to cool slightly.
  • Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
  • Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
  • Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
  • Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
  • Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
  • Set out additional soy sauce on the table, if desired.

2 tablespoons cooking oil
80 g chicken, cut into small pieces
3 eggs, beaten
8 garlic cloves, crushed
20 g mixed vegetables
4 cups cooked rice
2 teaspoons light soy sauce
1 teaspoon white pepper
1 teaspoon sesame oil
salt (garlic salt can be used instead for an extra zest of flavor)

Steps:

  • Rub the pieces of chicken with some salt.
  • Heat the oil in a wok and fry the chicken when oil is hot.
  • Toss chicken and set aside, keep the wok hot.
  • Scramble the beaten eggs until done and broken into small pieces and add the garlic (you might need to add a bit more oil).
  • Fry until a bit browned.
