3 eggs
1 teaspoon milk
3 teaspoons butter or 3 teaspoons margarine
4 slices bread (I like white for this sandwich)
4 slices deli ham, thin slices
4 slices swiss cheese
grape jelly (optional)
maple syrup (optional)

Steps:

  • In a nonstick skillet scramble 2 eggs in 1 tsp butter till done to your liking.
  • Remove eggs and set aside and wipe out skillet.
  • Assemble the sandwiches with one slice of swiss cheese, 2 slices of ham, 1 scrambled egg, top with another slice of cheese.
  • Break remaining egg into a bowl with 1 tsp milk and mix well.
  • Brush the sandwiches liberally with the egg wash with a pastry brush (but don't saturate the bread) and grill over medium/medium high heat in a nonstick skillet in 1 tsp of butter till golden brown. (grill the egg side down first and the melted cheese will help hold the sandwich together when it is time to flip it)Add another tsp butter and flip carefully to grill other side until golden.
  • Serve with grape jelly or maple syrup on the side.

3/4 cup granulated sugar
1/2 cup evaporated milk
1/3 cup maple-flavored pancake syrup
1 teaspoon vanilla extract
2 tablespoons butter
6 large eggs
1 cup evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
3 tablespoons butter, divided
12 slices whole wheat bread or 12 slices white bread, divided

Steps:

  • FOR Creamy Maple Syrup: Combine sugar, 1/2 cup evaporated milk, syrup and 1 teaspoon vanilla extract in small saucepan.
  • Cook over medium heat, stirring constantly, until sugar is dissolved.
  • Remove from heat; stir in 2 tablespoons butter. Makes 1 1/2 cups.
  • FOR FRENCH TOAST: whisk together eggs, remaining 1 cup evaporated milk, vanilla extract and cinnamon in medium bowl.
  • Melt 1 tablespoon butter in large, nonstick skillet over medium heat.
  • Dip 4 slices bread in milk mixture and then place in skillet.
  • Cook about 2 minutes per side or until golden. Repeat 2 more times with with 2 tablespoons butter and remaining bread.
  • Keep warm in oven.
  • Serve with warm Creamy Maple Syrup.
  • Refrigerate any leftover syrup for another use.
  • Tip: One 12 fl. oz. can is all the evaporated milk you will need for this recipe.

1 loaf French bread (13 to 16 oz)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons sugar
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 dash salt
1 cup butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • Slice French bread into 20 slices, 1 inch thick.
  • Arrange slices in a generously buttered 9x13-inch baking dish in 2 rows, overlapping slices.
  • In a large bowl, combine the eggs, half and half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with wire whisk until well blended.
  • Pour mixture over bread slices, making sure all are covered evenly with egg mixture.
  • Spoon some of the mixture in between the slices.
  • Cover with foil and refrigerate overnight.
  • The next morning, preheat oven to 350°F.
  • Spread praline topping evenly over bread and bake for 40 minutes, until puffed up and lightly golden brown.
  • Serve with maple syrup.

4 slices bakery white bread, sliced to 1 inch thickness
2 large eggs
1/8 cup real maple syrup
1 cup whole milk
1 teaspoon vanilla extract
1/8 teaspoon fresh-grated nutmeg
1 pinch salt
3 tablespoons unsalted butter, for cooking
fresh berries, for serving
confectioners' sugar, for dusting

Steps:

  • First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.
  • In a wide bowl, beat your eggs with your maple syrup until the mixture is slightly thickened.
  • Beat in the milk, vanilla, nutmeg and salt.
  • Place your bread slices in the mixture and allow them to soak in the mixture for approximately 5 minutes until saturated well.
  • Next you will want to preheat your skillet over medium heat and add 2 Tablespoons of butter.
  • Once your butter has melted reduce your heat to medium-low and saute bread slices for about 5-6 minutes per side, making sure that you flip each slice over every 2 minutes or so to make sure that they brown evenly.
  • You may have to cook in 2 batches if you use a smaller skillet.
  • Sprinkle with confectioners' sugar, and place random berries around the plate for a nice look and tasty meal.

1 1/4 cups pitted tart red cherries, drained (canned or frozen)
6 ounces cream cheese or 6 ounces mascarpone cheese, softened
1/4 cup whipping cream
2 tablespoons sifted powdered sugar (optional)
6 beaten eggs
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 -2 tablespoon butter or 1 -2 tablespoon margarine
1 cup maple syrup
1/4 cup clover honey
1/2 cup chopped pecans, toasted
1/2 teaspoon ground cinnamon
2 tablespoons butter (optional) or 2 tablespoons margarine (optional)
grains salt (a few)
apple, sliced into thin wedges (optional)
1 sprig mint (optional)

Steps:

  • FRENCH TOAST:.
  • Trim ends from the loaf of bread and cut the bread into six 1-1/2" thick slices.
  • To make a pocket in each slice, beginning at the top, cut lengthwise in half to within 1" of the bottom.
  • Set aside.
  • In a small bowl, beat 3/4 cup of cherries, cream cheese or mascarpone, whipping cream and 2 tablespoons powdered sugar.
  • If you like, with an electric mixer until well combined.
  • Spread about 1/4 cup of the mixture into pocket of each slice of bread.
  • Gently press pieces of bread together, distributing filling evenly inside pocket.
  • Combine eggs, cinnamon and vanilla in a shallow dish.
  • Dip bread into egg mixture to coat all sides.
  • On a griddle or in a skillet, cook bread in hot butter or margarine over medium heat for 2-3 minutes on each side or until golden brown.
  • Add more butter or margarine, if needed.
  • Remove from heat and cut French toast in half diagonally, forming two triangles.
  • Place three triangles for each serving on warm plates.
  • Sprinkle with additional powdered sugar and remaining cherries.
  • MAPLE-PECAN SYRUP:.
  • Melt butter or margarine, add nuts; brown lightly: remove nuts.
  • Add maple syrup, honey, cinnamon and salt to butter in saucepan over medium heat, stirring often, until slightly thickened, about 10 minutes.
  • Remove from heat and stir in pecans and cinnamon.
  • Let cool; mixture will thicken as it cools.
  • Serve the french toast with warm syrup and slices of apple on to, or with powdered sugar.

1 crusty baguette, sliced on the bias 1 1/2 inch thick
1 1/2 cups whole milk
2 large eggs
1/4 cup unsweetened cocoa powder
3 tablespoons granulated sugar
2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
6 to 8 tablespoons unsalted butter
1 1/2 cups pure maple syrup
3 cinnamon sticks
Crème fraîche or whipped cream
One 3-ounce bar dark or milk chocolate, coarsely chopped

Steps:

  • Start the French toast: Preheat the oven to 300 degrees F. Arrange the baguette slices on a baking sheet and bake until fully toasted, about 10 minutes.
  • Meanwhile, make the syrup: Combine the maple syrup and cinnamon sticks in a small saucepan over medium-high heat and bring to a boil. Remove from the heat and keep warm while you finish making the French toast.
  • Continue with the French toast: Whisk together the milk, eggs, cocoa, sugar, vanilla and salt in a medium bowl until evenly combined and frothy.
