- For the pizza base: Preheat the oven to 375 degrees F.
- Lay the rolls cut-side up on a large baking sheet. Top each half with marinara sauce (or pesto for the tomato basil pizzas), followed by the mozzarella. Then add your toppings of choice. See below for directions for assembling specific pizzas.
- Once the pizzas are assembled, put the baking sheet on the lowest rack for 8 to 10 minutes. Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! Cut the pizzas in half right across the middle so there are mini French bread pizzas for everyone.
- Pizza Varieties:
- For the Canadian bacon and pineapple pizzas: Top with the Canadian bacon slices and pineapple and bake according to the directions above.
- For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.
- While the pizzas are baking, toss together the olives, feta, tomatoes, cucumbers, parsley, the remaining 3 tablespoons olive oil and salt and pepper to taste in a medium bowl. Top the cooked pizzas with the chopped Greek salad.
- For the pepperoni and jalapeno pizzas: Top with the pepperoni and jalapeno slices and bake according to the directions above.
- For the tomato basil pizzas: Use pesto instead of the marinara sauce, and top with the tomato slices. Drizzle with the olive oil and sprinkle with salt and pepper. Bake according to the directions above. Top the cooked pizzas with basil leaves.
- For the hamburger pizzas: Heat the olive oil in a skillet over medium-high heat. Add the ground beef, red pepper flakes and salt and pepper and saute until the beef is no longer pink. Top the rolls with the sauteed ground beef and bake according to the directions above.
- For the hamburger taco pizzas: Top with the Cheddar and ground beef and bake according to the directions above. Top the cooked pizzas with the chopped lettuce and tomatoes.
FRENCH BREAD PIZZA
Steps:
- Preheat the oven to 375 degrees F with one rack positioned at the bottom of the oven and another at the top.
- Cook the sausage in a medium skillet over medium-high heat, breaking up any clumps with a wooden spoon, until some of the fat has rendered and the sausage is brown, 6 to 8 minutes. Add the onions and cook, stirring occasionally, until slightly softened, about 2 minutes.
- Meanwhile, add the pizza sauce, garlic and thyme to a small saucepan. Heat over medium heat to let the flavors infuse while the sausage and onions cook.
- Line a rimmed baking sheet with parchment and arrange the bread on top, cut-side up. Spread the tops evenly with the pizza sauce, then sprinkle with the mozzarella. Divide the sausage mixture among the bread pieces, then top off with the green and red bell peppers and Parmesan.
- Bake on the bottom rack of the oven until the bread is crisp and the cheese is melted, about 10 minutes. Increase the oven temperature to 450 degrees F and move the baking sheet to the top rack. Continue to bake until the cheese is bubbling and the peppers are browned in spots, about 7 minutes.
- Serve immediately with crushed red pepper flakes and granulated garlic on the side.
PISSALADIèRE (FRENCH PIZZA)
Pissaladière is the ultimate in French street food; crispy crust, caramelized onions, anchovies and salty, oil-cured olives. Because it is wonderful served both warm and at room temperature, it makes perfect picnic fare. La bonne vie is sitting on a blanket with a slice of Pissaladière and a glass of chilled, crisp white wine.

- Preheat your oven and a pizza stone to 500°F (or up to 550°F if your oven can go higher.)
- While the oven preheats, gently heat the olive oil in a heavy-bottomed skillet. Add the onions, thyme, bay leaf, garlic, salt and pepper, stirring to evenly coat with oil, and cook gently over medium low to low heat (lowering if necessary to prevent over-browning) for about 20 minutes, until the onions are softened and just lightly browning around the edges. Do not caramelize the onions completely or they will scorch in the oven giving a burned taste to the final product. Remove the bay leaf from the caramelized onions.
- Dust your work surface with flour and gently stretch your pizza dough into a circle. Use a floured rolling pin to stretch the dough out until it is about 1/8-inch thick. Generously cover a pizza peel with semolina or cornmeal.
- Spread the onion mixture (including the oil) to within 1/4-inch of the edges of the crust. Arrange the anchovies and olive halves over the top of the onions. If you're using the red bell pepper strips, arrange those artfully among the anchovies. Give the peel a gentle shake to be sure the dough isn't sticking. If it is, carefully lift that area and sprinkle more semolina or cornmeal underneath to fix it.
- Slide the dressed dough onto the hot stone and bake for between 8 and 15 minutes, depending on the heat of your oven, or until it is evenly browned and crisp underneath. Use the peel to transfer the Pissaladière to a cutting board.
- Cool for five minutes, cut into wedges and serve warm or at room temperature.

- Add sugar to water. Dissolve yeast in water.
- Add 4 cups flour and salt.
- Beat well with wooden spoon.
- Add the rest of the flour one cup at a time.
- When dough starts to pull away from the side of the bowl, turn out on floured board and knead until smooth.
- Place dough in a bowl that has been oiled w/ olive oil.
- Cover and let rise until doubled in bulk.
- Cut into two portions and let rest for 15 minutes.
- Pat or roll out in pans.
- I use 15 1/2 by 10 1/2 jelly roll pans.
- Sprinkle edges of crust with cornmeal if you like.
- Spread with your favorite sauce, cheeses and topping.
- Most pizza is cooked on high heat 500°F+ for 15-20 minutes until cheese in the middle is bubbly and the bottom of the crust is browned.
- A hint-- Pizza cooks from the outside in so don't overload the middle of the pizza too much-- and have the cheese,sauce and toppings go right to the edge.

THE INCREDIBLE FRENCH TOAST PIZZA BAKE
I had french toast the first time when I was 10 years old and my aunt from America came over to Malta for a holiday. She Cooked the french toast for her children and me and served it with ketchup. This has nothing to do with her version of french toast which was the regular kind, but rather a quick meal in itself that can be prepared well ahead of time and baked at the last minute. This dish looks like pizza but without the effort. I always have toast bread in the house and this is perfect to use up the bread especially when it isnt so fresh anymore. feel free to change the toppings according to what you have at home, such as ham and cheese, olives, salami and cheese etc. Please do try this recipe and tell me what you think.

- Line a rectangular dish with baking paper.
- Saute the onions and peppers, until soft.
- Trim the crust from the bread and cover the bottom of the pan neatly with the bread slices. You might need to cut some so that no space remains.
- Mix the milk and eggs with the salt and pour over the bread slices, covering as much as possible. You might need to make up some more of the egg mixture depending in how thick the bread is or how many extra slices you have put in.( 1/4 cup milk per egg).
- arrange the sliced tomatoes on top, then the sauted peppers and onions. Cut each cheese slice into 4 strips and arrange on top.
- Season with salt and pepper and sprinkle with oregano.
- Preheat oven to 300F/ 150C, in the meantime the egg mixture will get absorbed into the bread.
- bake for about 30-40 minutes or until the bread feels like french toast and the cheese is melted.
- Brown the top lightly under a grill to toast slightly. serve warm or cold cut into squares.
- I use cold leftovers for my kids school lunch the next day.

- Preheat oven to 400°F.
- Line a large baking sheet with aluminum foil and coat lightly with oil.
- Grind fennel seed, oregano and basil into a powder using a spice mill or mortar and pestle.
- Wash, peel and slice potatoes into thin french fry shapes.
- Combine ground spices, tomato paste, garlic powder, salt, sugar and oil in a small bowl until smooth.
- Place potatoes and seasoning paste in a large ziplock or plastic bag.
- Using your hands, move the potatoes around in the bag until they are evenly coated with the seasoning paste.
- Place potatoes in a single layer on the baking sheet.
- Bake for 25 minutes at 400°F.
- Using a spatula, turn potatoes over and sprinkle with parmesan cheese (if using).
- Bake for 10-20 minutes more or until fries become golden and start to crisp (time may vary with size of fries).
- Serve with marinara sauce or ketchup, if desired.

- Saute garlic and onion in oil until onion is transparent and set aside. Cut tomatoes into chunks and combine with olives, parsley, basil, and peppercorn and set aside.

- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Combine ground beef, onion, green bell pepper, and minced garlic in a large skillet over medium heat; cook and stir until beef is no longer pink, 5 to 8 minutes.
