Recipe video above. Classic French Onion Dip - made at home! The key to the amazing flavour base is to cook the onions slowly because they sweeten and caramelise.

3 tbsp butter
2 1/2 cups diced onions ((2 to 3 onions) (brown, yellow or white))
3/4 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder
1/4 tsp cayenne pepper
4 oz / 120 g cream cheese ((cold), cut into cubes)
1/4 cup whole egg mayonnaise
1/2 cup sour cream ((full fat is best, but you can use low fat or even yoghurt))

Steps:

  • Melt the butter in a fry pan over medium heat.
  • Add the onions, salt, pepper, onion powder and cayenne pepper. Cook for 5 minutes, stirring. Then reduce the heat to medium low and cook for 20 to 25 minutes, stirring occasionally. The onions should be sweet and golden. Remove from stove and allow to cool.
  • Place the cream cheese, sour cream and mayo in a bowl, mix until smooth (use microwave in 10 sec bursts if needed to assist)
  • Add the caramelised onions. Mix until just combined. Refrigerate at least 2 hours to allow flavours to develope, overnight is better!
  • Serve at room temperature, garnished with chopped chives if desired. Best served with crinkle cut plain potato chips!

1 tbsp. dried chopped onion
1 tsp. onion powder
1 pinch garlic powder
1/4 tsp. salt
1 tbsp. finely chopped fresh parsley, or 1 teaspoon dried parsley

Steps:

  • Place sour cream in a small bowl. Add dried onion, onion powder, garlic powder, salt, and parsley. Mix together very well until completely uniform. Taste with a chip and adjust seasonings if necessary.
  • Refrigerate for 1 hour to allow the flavors to meld and the dried onion to soften. Store in the refrigerator for 5-7 days.

Vegetable oil, for frying
1/2 cup all-purpose flour
Kosher salt and freshly ground black pepper
1 large egg
1 cup finely crushed garlic and herb pita chips (about 1 1/2 cups whole chips)
6 sticks string cheese, cut in half
1 1/2 cups marinara sauce
2 tablespoons heavy cream
2 tablespoons pesto

Steps:

  • Heat 1 inch of oil in a deep pan to 330 degrees F.
  • Place the flour in a shallow dish, season with salt and pepper then stir. Beat together the egg with salt and pepper in a second shallow dish. Place the finely crushed garlic and herb pita chips in a third shallow dish. Dip each cheese stick half in flour, shaking off the excess, then in the egg, then repeat the flour and egg. Lastly, dip each in the pita chips, pressing to coat. At this point, freeze for 15 minutes to firm the sticks before frying.
  • Combine the marinara, cream and pesto in a small sauce pot. Stir and heat through.
  • Fry the mozzarella sticks in the hot oil, turning, until golden brown on all sides, about 30 seconds. Remove to a paper towel-lined plate. Serve immediately with the dipping sauce.

1 1/2 cups Italian-style dried breadcrumbs
1 1/3 cups freshly grated Parmesan
1 teaspoon salt
2 (16-ounce) blocks pasteurized mozzarella cut into 4 by 1/2-inch sticks
4 large eggs, beaten to blend
1 1/2 cups vegetable oil
4 cups Marinara Sauce, recipe follows
1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
2 (32 ounce) cans crushed tomatoes
2 dried bay leaves

Steps:

  • Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
  • Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

2 tablespoons plain flour
1 teaspoon paprika
1 teaspoon onion salt
2 teaspoons dried chive, plus more for serving
2 eggs
6 sticks string cheese
oil, for frying

Steps:

  • Crush the crisps in a zip top bag with a rolling pin, or just blend them for a few seconds in a food processor. Add to a small bowl and set aside.
  • In another small bowl, combine flour, paprika, onion salt, and chives.
  • In one more separate bowl, beat 2 eggs.
  • Coat the string cheese in flour first, then egg, then crisps. Then go back into the egg, and again in the crisps for an extra crispy breading.
  • Heat a skillet with a bit of oil in the bottom and cook mozzarella sticks for 3 to 5 minutes, turning occasionally to brown all sides.
  • Sprinkle a pinch of salt and with more dried chives, and serve with sour cream dip!

  • In the same pan you used to cooked the bacon, add the diced onions. Cook for 5 minutes or until they start to soften. Add the mushrooms and salt and pepper. Allow to cook for another 5-8 minutes, stirring every 30ish seconds.
  • Pour in the chicken broth and bring to a soft boil. Add in the pasta making sure it is completely covered by the broth. Reduce heat, cover and let cook for 10 minutes or until pasta is al dente. Be sure to stir every minute or so to ensure the pasta doesn't stick to the bottom of the pan.
  • Once most of the chicken broth has been absorbed stir in the Fontina cheese and heavy cream. Let it simmer for a minute or two and then remove from the stove top.
  • Top with the shredded Parmesan and put it in the oven on broil for 2-3 minutes or until the cheese is melted and bubbly. Remove, add the bacon and basil (or parsley) and allow to cool.
