BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

BAKED FRENCH FRIES
If every baked French fry you've ever eaten has been a soggy disappointment, then this recipe is for you. The key to achieving perfectly crisp "fries" is heating your sheet pan in a 500-degree oven for a good 10 minutes. When you toss the potatoes onto the blisteringly hot pan, magic happens: The potatoes sear and develop a truly crunchy crust. In terms of seasoning, we keep it simple with just salt and pepper, but feel free to experiment with adding a bit of chili or garlic powder, smoked paprika or cayenne to the mix.

- Arrange one oven rack at the lowest point. Place a large rimmed baking sheet there and heat oven to 500 degrees.
- In a large bowl, toss together potatoes, the oil, salt, pepper and any additional seasonings. Carefully spread potatoes out on the preheated baking sheet and return to oven's lower rack. Roast until slightly golden and crispy, tossing after 15 minutes.
- Reduce oven temperature to 425 degrees and bake 10 to 15 minutes more.

CRISPY BAKED FRENCH FRIES - FRESH OR FROZEN
Steps:
- Start with a couple of medium russet potatoes (about one pound). That will make four servings. Preheat oven to 425° convection. If you don't have convection, you can use 450° or stay at 425°, and it will take a bit longer.
- Scrub the potatoes and if using russet potatoes, peel the potatoes. Cut your fries 1/4 to 3/8 inch thick. I suggest a mandoline, but a knife will do.
- Place in cold water in a large bowl and soak for 20 to 30 minutes.
- Drain, rinse the fries with cold water several times, place them on a paper towel and dry well.
- Dry the bowl, put fries back in, and stir with about a tablespoon of oil.
- Prepare a baking sheet with aluminum foil and a rack. Spray with PAM. Spread the fries on a prepared rack. Do not overlap, but they may touch a little. Give a light sprinkle of coarse salt.
- Bake until golden brown-about 30 minutes. Season again while still hot.
