Growing up, I hated okra. As I kid, I thought it was slimy and terrible. My first taste of okra fries didn't do much to dispel my childhood aversion. But I kept thinking, "How can I make okra fries good? You never get crispy okra fries." The key here was using cornstarch and rice flour. Cutting the okra in half from top to bottom, the seeds cling to the rice flour and cornstarch so the batter isn't going anywhere. Mariah Carey sampled these okra fries and said they were the best she'd ever had. The secret to this dish is letting the halved okra pods soak in eggs. Whatever you do, don't skip that part.

Vegetable oil, for deep-frying
1 pound okra, pods halved lengthwise
1 medium egg, beaten
3/4 cup rice flour
3/4 cup cornstarch
1 teaspoon smoked paprika
Kosher salt

Steps:

  • Pour a few inches of vegetable oil into a heavy-bottomed pot, preferably cast iron. Heat the oil to 350 degrees F.
  • Meanwhile, put the okra in a large bowl and toss with the beaten egg. Let the okra stand for 5 minutes to absorb the egg.
  • In a separate medium bowl, whisk the rice flour, cornstarch, paprika, and 1/4 teaspoon salt. Remove the okra from the large bowl, allowing excess egg to drip back into the bowl, then transfer the okra to the flour mixture. Toss the okra to dredge evenly. Lift from the flour and shake off the excess.
  • Cook the okra in batches in the hot oil until golden and crunchy, 3 to 5 minutes, depending on size.
  • Remove with a slotted spoon and place on a paper towel-lined plate. Season with salt immediately. Repeat with the remaining okra.

With only a few ingredients and about 10 minutes, you can enjoy light, crispy okra anytime. I prefer okra with a light flour coating versus corn meal. I want to taste the okra -- not the breading! Fried okra, a country staple, is best served hot alongside thick-sliced summer tomatoes.

1 lb sliced frozen okra
1/2 cup all-purpose flour
1 egg
oil, to cover bottom of skillet
salt and pepper

Steps:

  • Slightly beat egg with fork in medium-sized bowl.
  • Pour okra into bowl and mix until coated well with egg.
  • Add flour and mix well.
  • Preheat skillet on medium-high until hot then add enough oil to coat bottom of pan.
  • Shake off excess flour from okra then carefully add to skillet. Flip over okra every few minutes, watching carefully so it does not burn on the bottom.
  • When golden brown, drain okra on paper towels. Immediately sprinkle with salt and freshly-ground pepper.
  • Enjoy!

One 6-ounce can tomato paste
1 large clove garlic, minced (about 1 tablespoon)
1 tablespoon extra-virgin olive oil
Kosher salt
2 cups fine yellow cornmeal
1 cup all-purpose flour
1 tablespoon dried basil
1 tablespoon garlic powder
1 tablespoon dried mustard
2 teaspoons cayenne pepper
1 teaspoon dried thyme
1 1/2 pounds okra (about 26 pieces)
Vegetable oil, for frying
Lemon wedges, for serving, optional

Steps:

  • Add the tomato paste, garlic, olive oil, 1/2 teaspoon salt and 5 ounces of water to a medium saucepan. Stir to combine. Place the saucepan over medium heat and cook, stirring, until fragrant and just starting to boil, 3 to 5 minutes. Remove from the heat and set aside to cool.
  • Combine the cornmeal, flour, dried basil, garlic powder, dried mustard, cayenne pepper and dried thyme in a medium mixing bowl. Set aside.
  • Add 2 cups water to a medium pot over medium-high heat. Place a 10-inch bamboo steamer over the pot. Working in batches, add the okra, cover and steam until crisp-tender, about 4 minutes.
  • Pour enough vegetable oil into a medium, heavy-bottomed pot to reach 3 inches deep. Heat over medium-high heat until the oil reaches a temperature of 365 degrees F.
  • Dip each piece of okra into the tomato paste mixture and then roll in the cornmeal mixture. Working in batches, fry the okra until golden brown and crispy, 3 to 5 minutes. Transfer to a paper-towel-lined plate to drain. Season the fried okra with 1 teaspoon of salt. Place on a serving platter with lemon wedges if using.

10 pods okra, sliced in 1/4 inch pieces
1 egg, beaten
1 cup cornmeal
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup vegetable oil

Steps:

  • In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine cornmeal, salt, and pepper.
  • Heat oil in a large skillet over medium-high heat. Dredge okra in the cornmeal mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on paper towels.

This is another recipe I grew up with. This is passed down from word of mouth, no one has ever written it down before! Fresh, fried okra is soo simple to fix and soo good!

1 lb fresh okra, cut into pieces (don't use the top of the stem but the bottom is wonderful to eat)
2 -3 cups cornmeal
1 egg
2 cups buttermilk (regular or lowfat milk is fine, too)
salt and pepper
oil

Steps:

  • In a big bowl beat egg with a fork, pour milk in and combine. Pour the cornmeal in another big bowl.
  • Pour enough oil in a big skillet, halfway up, or you can use a deep fryer. Set heat to Medium-high.
  • Put some okra pieces in milk mixture and then coat in cornmeal batter. Fry in skillet 10-15 min, occasionally turning/stirring them around. They are done when crispy and golden brown but not black!
  • Drain on paper towel lined plate. Sprinkle with salt and pepper (i don't use pepper but some people prefer it).
  • Repeat with rest of okra till all gone. Enjoy!

1 lb fresh okra
1 egg
1/4 cup buttermilk
2/3 cup cornmeal
1/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon vegetable oil
vegetable oil cooking spray

Steps:

  • Wash okra and drain. Remove tips and stem ends. Cut okra crosswise into 1/2 inch slices.
  • Combine egg and buttermilk. Add okra, stirring to coat well. Let stand 10 minutes.
  • Combine cornmeal, flour, baking powder and salt in a zip-top plastic bag.
  • Drain okra. With small portions at a time, using a slotted spoon, place okra in bag with cornmeal mixture, shaking gently to coat.
  • Brush oil on a 15x10x1 inch jellyroll pan; add okra in a single layer.
  • Coat okra with cooking spray and bake in a 450 degree oven for 8 minutes. Stir well and spray with cooking spray again; baking 8 additional minutes. After last baking, broil 4 inches from heat (with electric oven door partially opened) 5 minutes or until browned, stirring occasionally.
