3 large eggs
1 1/2 cups whole milk
1 teaspoon ground cinnamon
2 Tablespoons sugar
2 teaspoons vanilla extract
Cooking spray
Maple syrup, for serving

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with foil and grease it generously with cooking spray.
  • Cut each slice of bread into three sticks widthwise.
  • In a large shallow dish or bowl, whisk together the eggs, milk, cinnamon, sugar and vanilla extract. Dip each stick of bread in the egg mixture, coating it on all sides, then shake off the excess and arrange it on the baking sheet. Repeat the dipping process, arranging the French toast sticks on the baking sheet so that they aren't touching.
  • Bake the French toast sticks for 12 minutes then flip them once, spray them lightly with cooking spray and return them to the oven for an additional 12 to 15 minutes or until cooked through.
  • Remove the French toast sticks from the oven and serve warm with maple syrup.

1 loaf texas toast
7 eggs
1 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla
1 teaspoon cinnamon
2 tablespoons sugar
salt, to taste
cooking spray

Steps:

  • Preheat oven to 350°F (180˚C).
  • Spray a large baking sheet with cooking spray.
  • Stack and slice the Texas toast into thirds.
  • In a large bowl, whisk together eggs, milk, butter, vanilla, cinnamon, salt, and sugar.
  • Dunk each strip of bread into the mixture, allow the excess to drip off, then place on prepared baking sheet. Repeat with remaining strips.
  • Bake for 15-20 minutes, flipping halfway.
  • Remove from oven and serve.
  • NOTE: To freeze, let the sticks cool slightly and transfer baking sheet to freezer. Once frozen, after 1-2 hours, transfer to a freezer bag for easy storage.
  • To reheat, preheat oven to 350°F (180˚C) and bake for 10-15 minutes until heated through. OR transfer frozen sticks to a plate and microwave 45-60 seconds.

6 large eggs
1/2 cup half-and-half
1 tablespoon vanilla extract
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 1/2 cups panko breadcrumbs
1 1/2 cups sweetened corn and oat cereal, such as Cap'n Crunch, crushed to fine crumbs
2 tablespoons salted butter, melted
12 slices Texas toast, each cut into 3 strips
Powdered sugar, for serving
Warm pancake syrup, for serving
Raspberries and blueberries, for serving

Steps:

  • Crack the eggs into a pie plate. Add the half-and-half, vanilla, 1/4 cup of the granulated sugar and 1/2 teaspoon of the cinnamon. Whisk lightly until combined; set aside.
  • In a separate pie plate, stir together the panko breadcrumbs, crushed cereal and remaining 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Use a fork to stir in the melted butter so that the crumbs are slightly moist. Crack up at the madness that is in this dish, then set it aside.
  • One by one, quickly dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning them over, sprinkling and pressing so the crumbs totally cover the surface. Place the sticks on a rack set in a baking sheet. Flash-freeze for 30 minutes to set the surface.
  • Transfer the sticks to zipper bags for storage in the freezer. I do smaller bags of 6 to 8 sticks each, but you can do larger batches if you prefer!
  • To bake them from frozen state, preheat the oven to 425 degrees F. Line a pan with frozen sticks and bake until golden brown around the edges, 15 to 18 minutes. Sprinkle with powdered sugar. Serve with warm pancake syrup for dipping and fruit to make you feel good about life!

1 cup 2% milk
