14 oz (400g) can of European tomatoes (preferably pomodoro pelato S.Marzano dell'Agro Sarnese-Nocerino D.O.P) THIS IS THE MOST IMPORTANT INGREDIENT-do not use inferior quality tomatoes
3 Tbsp good quality extra virgin olive oil
1/2 tsp sea salt
a few pinches of dried oregano
2 or 3 leaves of fresh Italian basil, torn into small pieces
(optional: a clove of fresh garlic, minced) my Italian family uses garlic, but it's only used on one type of pizza in Naples

Steps:

  • Pour the can of tomatoes into a bowl. If it is pomodorini or whole tomatoes, crush them with your hands, or you can roughly cut them with kitchen shears.
  • Add the rest of the ingredients and mix well. Taste for salt and add if needed. (Don't add a lot of sauce to the pizza dough; you don't want to drown it.)

2 tbsp olive oil
1 small onion, finely chopped
1 fat garlic clove, crushed
2 x 400g cans chopped tomatoes
3 tbsp tomato purée
1 bay leaf
2 tbsp dried oregano
2 tsp brown sugar
1 small bunch basil, finely chopped

Steps:

  • Heat the oil in a saucepan over a low heat, then add the onion along with a generous pinch of salt. Fry gently for 12-15 mins or until the onion has softened and is turning translucent. Add the garlic and fry for a further min. Tip in the tomatoes and purée along with the bay, oregano and sugar. Bring to the boil and lower the heat. Simmer, uncovered, for 30-35 mins or until thickened and reduced. Season. For a really smooth sauce, blitz with a stick blender, otherwise leave as is.
  • Stir the basil into the sauce. The sauce will cover 4-6 large pizza bases. Keeps well in the fridge for 1 week or stored in a container in the freezer.

2 cans (15 ounces each) tomato sauce
1 can (12 ounces) tomato paste
1 tablespoon Italian seasoning
1 tablespoon dried oregano
1 to 2 teaspoons fennel seed, crushed
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients; mix well. Bring to a boil, stirring constantly. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Cool. , Pour into jars or freezer containers, leaving 1/2-in. headspace. Freeze up to 12 months. Thaw frozen sauce in refrigerator before serving.

Pizza dough -- homemade or store bough (see above for recipe!)
1 teaspoon canola oil for each pizza
Pizza sauce
Pizza toppings: meat (veggies, cheese as desired)

Steps:

  • Make your dough, or thaw your store bough dough. Spray pans with non-stick spray. Then preheat the oven to 425 degrees F and roll it out to fit your pizza pans. Brush with about 1 teaspoon oil and bake for 10-12 minutes. You want it baked about half way through. It will look dry on top but won't be browned.
  • Set aside and let cool to room temperature (15-30 minutes).
  • Spread your sauce on, top with your meat and cheese.
  • Wrap it in plastic wrap and then tin foil to protect from freezer burn.
  • Label it with the name and when it was made! Include the baking instructions: "Bake at 425 degrees F for 15-20 minutes or until golden brown."
  • Freeze it up to 3 months.
  • When ready to serve, heat oven to 425 degrees F and bake for 15-20 minutes or until golden brown and cheese is melted.
