ORANGE CHICKEN CURRY

This is a different take on chicken curry that I got from a friend... Even kids find this one absolutely scrumptious! Serve with basmati or jasmine rice.

4 boneless chicken breasts, cut into bite-size pieces
cooking oil
4 tablespoons curry powder
1/2 tablespoon of chili powder 1/2 cup all-purpose flour
1/2 an onion, chopped
1/2 cup chicken broth
1/2 cup orange juice
1/3 cup of chopped cilantro
1/3 cup with toasted almond (optional)
salt

Steps:

  • Toss together chicken, flour, curry powder and chili powder until chicken is well coated.
  • Heat oil over medium heat in a heavy bottomed pot.
  • Cook chicken until browned all over, about 6-7 minutes.
  • Remove from pot.
  • Stir-fry onions till translucent
  • Add broth and orange juice and bring to boil.
  • Return chicken to pot and cook until sauce begins to thicken.
  • If needed add a teaspoon of flour if sauce is not thick to your liking.
  • Add salt as desired.
  • Let simmer for 15 minutes.
  • Mix in cilantro and almonds.
  • Serve over rice and enjoy!

1/3 cup orange marmalade
1 teaspoon curry powder
1/2 teaspoon salt

Steps:

  • Place carrots and 3 tablespoons water in a microwave-safe bowl. Cover bowl tightly with plastic wrap; fold back a small edge to allow steam to escape.
  • Microwave at HIGH 5 minutes or until tender. Drain.
  • Stir together orange marmalade, curry powder, and salt. Toss gently with hot carrots.

  • Heat ghee or butter in a medium pot over low heat. Add spices and stir until fragrant.

I came up with this tasty swai recipe when I was craving something vaguely Indian, but also wanted to keep it simple and light and use the ingredients I had on hand. I serve it with white rice and a side of stir-fried Asian veggies such as bok choy with garlic, oyster sauce, and cashews.

2 (8 ounce) fillets swai fish
2 teaspoons ground black pepper, or to taste
1 teaspoon curry powder
2 tablespoons soy sauce
1 tablespoon olive oil
1 (1 1/2 inch) piece fresh ginger, grated
2 cloves garlic, crushed, or more to taste
1 cup orange juice
1 tablespoon sambal oelek

Steps:

  • Lay fish in a glass dish; season both sides with black pepper and curry powder. Pour soy sauce on top, making sure to coat both sides. Marinate for at least 20 minutes.
  • Heat olive oil in a sauce pan on medium-high heat. Place fish in hot oil and cook until browned, about 3 minutes per side. Add ginger and ginger into the open spaces of the pan; cook until fragrant, about 1 minute. Stir frequently to prevent burning.
  • Reduce heat to medium-low. Pour any remaining marinade into the pan, along with the orange juice.
  • Cook until fish flakes easily, about 10 minutes. Remove fish from the pan and set aside. Stir sambal oelek into the pan. Cook sauce until reduced and thickened, about 5 minutes. Pour over fish and serve.

4 -5 cups fresh carrots, peeled and sliced on a slant-not too thin
1 cup orange juice, freshly squeezed
water, to cover
1 teaspoon salt
2 -4 tablespoons ghee or 2 -4 tablespoons olive oil
4 -5 cardamom pods, seeds only
1 1/2 teaspoons turmeric
1 1/2 teaspoons mustard seeds
4 whole cloves
1 tablespoon cumin seed
1/4 teaspoon cayenne pepper
1/2-1 teaspoon curry powder (optional)
3 tablespoons raisins
1 ripe banana, sliced very thin
1 1/2 tablespoons cornstarch (optional)

Steps:

  • Place carrots, orange juice, and salt in a medium pot with enough water to cover the carrots. Bring to a boil and turn down heat, simmer for 5 minutes.
  • In the meantime, in a large skillet, heat the butter and stir in all of the spices, stir until fragrant.
  • Stir in carrots and their liquid, raisins, and banana. Simmer slowly over low heat for about 30 minutes.
  • If the liquid seems too thin, take some out and whisk the cornstarch into it, then slowly stir it into the curry, heat a few minutes more until thick and it is ready to serve.

2 tbsp sweet chilli sauce
grated zest 1 orange , plus 2 tbsp juice
1 garlic clove , crushed
1 tbsp good-quality Thai red curry paste
8 chicken drumsticks , skin removed, the flesh slashed

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a baking tray with foil. Mix the chilli sauce with the orange zest and juice, garlic, curry paste and ¼ tsp salt. Add the chicken and coat really well.
  • Arrange the drumsticks on the foil, spaced apart. Coat the chicken with any marinade left in the bowl, then roast for 35-40 mins until tender. Wrap in foil or pack into a food container.

1 Spanish onion, chopped
2 tablespoons grated fresh ginger
2 garlic cloves, crushed
2 tablespoons light oil
2 tablespoons good-quality curry powder
1/2 teaspoon ground turmeric
1 cinnamon stick
10 fresh curry leaves
425 g diced tomatoes
8 hard-boiled eggs
1/3 cup red lentil
1 cup peas (frozen are fine)
2 tablespoons chopped fresh coriander
cooked rice, to serve

Steps:

  • Place onion, ginger and garlic in a food processor and process to form a paste.
  • Heat the oil in a heavy-based saucepan, add the paste and cook over low heat for 2-3 minutes. Add the spices and cook for 1 minute, stirring to release the flavours. Add the tomatoes and 500ml (2 cups) water and bring to the boil. Reduce heat to medium and simmer for 15 minutes.
  • Meanwhile, shell and halve the eggs and add to the pan with the lentils and peas - if mixture is too thick add an extra 125ml (1/2 cup water). Cook over low heat for 15 minutes or until lentils are soft. Stir in the coriander and serve with cooked rice.

3 cups white sugar
⅔ cup heavy cream
¾ cup butter
1 (7 ounce) jar marshmallow creme
1 (11 ounce) package white chocolate chips
3 teaspoons orange extract
12 drops yellow food coloring
9 drops red food coloring

Steps:

  • Grease a 9 x 13 inch pan.
  • In a medium saucepan over medium heat, combine sugar, cream and butter. Heat to soft ball stage, 234 degrees F (112 degrees C). Remove from heat and stir in marshmallow creme and white chocolate chips; mix well until the chips melt. Reserve 1 cup of mixture and set aside.
  • To the remaining mixture add orange flavoring, yellow and red food coloring. Stir well and pour into prepared pan. Pour reserved cream mixture on top. Using a knife, swirl layers for decorative effect.
  • Chill for 2 hours, or until firm, and cut into squares.

2 garlic cloves, minced
1/2 teaspoon ginger
1/2 teaspoon salt

1/2 teaspoon mustard seeds
1/2 teaspoon cumin seed
2 lbs cauliflower, broken into small florets (about 2 medium heads)
1/2 cup water
1 1/2 cups fresh peas or 1 1/2 cups frozen peas
2 tablespoons cilantro, chopped or 2 tablespoons Italian parsley
2 tomatoes, diced

Steps:

  • Heat butter in a large skillet over medium heat. Add garlic, ginger and all spices, stir until spices are fragrant.
  • Add cauliflower and water, stir and cover tightly. Steam until it is almost tender.
  • Add peas and cilantro and cook another 5-7 minutes, stirring gently from time to time.

3 tablespoons oil
2 1/4 lbs stewing beef, cut into chunks and seasoned with salt and pepper
1 onion, sliced
2 red chili peppers, sliced
1 1/2 tablespoons red curry paste (thai)
1 3/4 cups coconut milk
7/8 cup beef broth
2 sweet potatoes, peeled and cut into chunks
2 teaspoons fish sauce
2 teaspoons soy sauce
2 ounces cashew nuts, toasted
1 ounce cilantro, chopped

Steps:

  • Heat 2 tablespooons of the oil in a large casserole dish and brown the beef on all sides. Set aside, add 1 1/4 cups cold water to the dih and scrape the bottom of the pan with a wooden spoon. Retain these juices.
  • Heat the remaining oil and cook the onion and chili peppers for 5 mins until soft.
  • Add the curry paste and turn up the heat for 2 mins or until the onion is going a light brown in colour.
  • Return the beef to the pan along with the beef juices, coconut milk and broth.
  • Cook, uncovered, over a very gentle heat for 1 1/2 hours so that it is barely simmering and the beef becomes tender.
  • If the coconut milk boils it will split so keep an eye on it.
  • Once the beef is quite tender, add the sweet potatoes and cook for 20 mins or until they are soft.
  • Season with the fish sauce and soy sauce.
  • Sprinkle with cashew nuts and cilantro and serve with a bowl of rice on the side.
