4 teaspoon olive oil
1.5 cup coarsely chopped, unpeeled eggplant
0.5 cup chopped red onion (1 medium)
4 0.5 inch thick boneless pork loin chops
1 teaspoon Greek seasoning
1.25 cup reduced-sodium chicken broth
0.25 cup oil-packed dried tomatoes, drained and chopped
0.75 cup whole wheat couscous
1 teaspoon finely shredded lemon peel
1 tablespoon lemon juice
0.5 teaspoon bottled minced roasted garlic
0.25 teaspoon salt
1 cup coarsely chopped fresh spinach

Steps:

  • In a large saucepan heat 2 teaspoons of the oil over medium heat. Add eggplant and red onion; cook about 5 minutes or until vegetables are tender, stirring occasionally.
  • Meanwhile, trim fat from chops. Sprinkle chops with Greek seasoning. In a large skillet heat the remaining 2 teaspoons oil over medium-high heat. Add chops; reduce heat to medium. Cook for 5 to 6 minutes or until just pink in center (145°F), turning once. Remove from heat; let stand for 3 minutes.
  • Add broth and dried tomatoes to eggplant mixture. Bring to boiling. Stir in couscous, lemon peel, lemon juice, roasted garlic, and salt; remove from heat. Let stand, covered, for 5 minutes. Stir in spinach. Divide couscous mixture among serving plates. Top with chops.

Extra-virgin olive oil
1 small red onion, small dice
1/4 cup dried apricots, coarsely chopped
1/4 cup whole almonds toasted, coarsely chopped
1 cup couscous
1 1/2 cups chicken stock, warm
1/2 teaspoon lemon zest
2 scallions green parts only
1/4 cup fresh mint leaves, roughly chopped
1/2 bunch fresh cilantro leaves, roughly chopped plus leaves for garnish
Kosher salt and freshly ground black pepper

Steps:

  • In a medium saucepan add a 2 count of extra-virgin olive oil. Add the red onion, apricots and almonds and saute gently over low heat until translucent and slightly fragrant. Add the couscous then dump in the warm chicken broth. Stir with a fork to combine, add lemon zest and cover. Let sit for 10 minutes, then uncover and add the scallions, mint, and cilantro. Fluff again with a fork. Season, to taste, with salt and pepper. Toss gently to combine.
  • Serve family-style on a large platter and garnish with fresh cilantro.

Vegetable oil cooking spray
Flour, for dusting
Two 9-inch unroll-and-bake store-bought pie crusts, such as Pillsbury
1/3 cup low-sodium chicken broth
Zest of 1/4 large orange
Juice of 1/2 large orange (about 3 tablespoons fresh orange juice)
3/4 teaspoon ground cumin
1/3 cup couscous
One 11-ounce can mandarin oranges in light syrup, drained and coarsely chopped
1/4 cup slivered almonds, toasted and coarsely chopped
2 tablespoons chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1 tablespoon fresh orange juice
1 tablespoon red wine vinegar
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Cook's Note: To toast the almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
  • Special equipment: 24-count nonstick mini-muffin pan; 2 1/2-inch round cookie cutter
  • For the pastry cups: Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a 24-count nonstick mini-muffin pan with vegetable oil cooking spray. Unroll the pie crusts on a lightly floured work surface. Using a 2 1/2-inch round cookie cutter, cut 12 circles of dough from each crust. Press the dough into the prepared muffin cups. Bake until light golden, 10 minutes. Cool completely before filling, 15 minutes.
  • For the salad: Bring the broth, orange zest, orange juice and cumin to a boil in a small saucepan over medium-high heat. Stir in the couscous and remove the pan from the heat. Cover the pan until the liquid had been absorbed and the couscous is tender, 5 to 6 minutes. Fluff the couscous and break up any lumps, using a fork. Toss together the couscous, mandarin oranges, almonds and parsley in a medium bowl. Season with salt and pepper.
  • For the dressing: Whisk together the oil, orange juice, vinegar, salt and pepper in a small bowl until smooth.
  • To assemble: Pour the dressing over the salad and toss until coated. Spoon the mixture into the cooled pastry cups and serve.

1 pound mushrooms
4 ounces whole onion or 3 ounces ready-cut onion (1 cup)
1 teaspoon olive oil
6 ounces pork tenderloin
1 tablespoon cumin
Cayenne pepper to taste
1 tablespoon lemon rind
1 tablespoon orange rind
1/3 cup dried apricots
1 cup whole-wheat couscous
1/2 cup chopped parsley
1/2 cup chopped mint
1 large tomato
1/4 teaspoon salt

Steps:

  • Preheat broiler, or prepare top-of-the-stove grill.
  • Wash, dry, trim and slice the mushrooms; chop the whole onion.
  • Heat oil in large nonstick pot, and saute mushrooms and onions in hot oil to soften.
  • Cut tenderloin into 1/4-inch-thick pieces, and rub each side with 2 teaspoons of the cumin and a sprinkling of the cayenne. Broil or grill until brown on both sides, about 5 minutes.
  • Meanwhile, grate lemon and orange rind; chop apricots.
  • Follow package directions for making couscous. Add water to onions and mushrooms; bring to boil. Stir in couscous, lemon and orange rind, apricots, remaining cumin and cayenne; cover, and turn off heat.
  • Cut cooked pork into bite-size pieces, and stir into couscous.
  • Wash, dry and chop parsley and mint; wash, trim and chop tomato. When cosucous is done, add parsley, mint and tomato. Season with salt and serve.

1 whole duck
1 tablespoon five-spice blackening powder
2 tablespoons sugar
1 cup lemongrass tea, strained and cooled
Vegetable oil, for grilling
Salt, for seasoning
Citrus sauce, recipe follows
Couscous, recipe follows
baby spinach
and mango slices
1 lime, juiced
1 lemon, juiced
1 orange, zested and juiced
1 tablespoon sugar
2 teaspoons Dijon mustard
2 eggs
1 1/2 cups vegetable oil
Salt and freshly ground pepper
1/4 pound trail mix
1 pound plain couscous
1 cup chicken stock
1 cup duck stock, recipe follows
Bones of 1 whole duck
Salt and freshly ground pepper

Steps:

  • De-bone the duck and cut it into 4 pieces, reserving the bones for later use. In a large bowl, combine the five-spice blackening powder, sugar, and tea. Place the duck pieces in the bowl, and let the meat marinate for 1 hour. Heat a grill pan or large skillet over medium-high heat. Add enough oil to coat the surface of the pan, and let the oil heat. Season the duck pieces with salt, if desired. Carefully add the duck pieces to the pan and reduce the heat to medium. Grill until cooked to desired degree of doneness, turning each piece with tongs halfway through cooking. Serve with Citrus Sauce, Couscous, baby spinach and mango slices, if desired.
  • Combine the citrus juices and zest, sugar, mustard, and eggs, and whisk well. Slowly drizzle in the oil, whisking constantly until the mixture becomes thick. Season, to taste, with salt and pepper. Drizzle sauce over duck.
  • Toast the trail mix in a dry medium skillet over medium-low heat until fragrant and golden brown, about 3 to 5 minutes. Add the dry couscous to the skillet and continue to toast the mixture for an additional 2 to 3 minutes, stirring with a wooden spoon. Remove pan from heat. In a large saucepot, combine the chicken stock and the duck stock and bring to a boil over medium-high heat. Add the toasted trail mix and couscous mixture to the pot. Stir until incorporated and then cover the pot with a lid. Lower the heat to medium-low and allow the couscous to simmer until it absorbs the liquid. Fluff couscous with a fork and serve.
  • Place the duck bones in a large pot and add enough water to cover bones. Bring to a boil over medium-high heat and then reduce the heat to a simmer, stirring occasionally. Let simmer for 2 hours. Season, to taste, with salt and pepper.

1/2 teaspoon ground ginger
1 clove garlic
8 ounces pork tenderloin
No-salt added beef stock or broth
1 cup whole-wheat couscous
1 teaspoon olive oil
4 ripe plum tomatoes
8 Italian, French or Greek black olives
2 scallions
1 tablespoon lemon juice
A few sprigs cilantro to yield 1 tablespoon chopped
A sprig fresh mint to yield 1 teaspoon chopped
Salt and freshly ground black pepper to taste

Steps:

  • Combine cumin and ginger. Crush garlic, and add to spices. Wash and dry pork, and cut into 3/4-inch cubes. Roll the pork in the spice mixture, and set aside.
  • Following the package directions, bring the beef stock to a boil. Add the couscous, cover and remove from heat. Allow to sit for 5 minutes, until the couscous has absorbed the liquid.
  • Heat nonstick skillet until it is very hot; reduce heat to medium high, and add oil. Saute pork cubes until they are brown on all sides and slightly pink in the center, about 5 minutes.
  • Meanwhile, wash, trim and coarsely chop tomatoes. Pit and chop olives. Wash, trim and cut the scallions into thin rounds. Wash and chop cilantro and mint. Add tomatoes, olives, scallions and lemon juice to couscous. When pork cubes are cooked, stir into mixture. Stir in the cilantro and mint. Season with salt and pepper.

1 bone-in pork rib chop (6 to 8 ounces)

1/2 cup frozen chopped broccoli, thawed

Steps:
