FRAGRANT CHICKEN CURRY WITH CHICK PEAS



Fragrant chicken curry with chick peas image

A low-fat curry that's packed with full, fragrant flavour - you can make it in one pot, too

2 onions , quartered
3 fat garlic cloves
3cm/¼in piece fresh root ginger , peeled and roughly chopped
2 tbsp moglai (medium) curry powder
½ tsp turmeric
2 tsp paprika
1 fresh red chilli , seeded and roughly chopped
20g packet fresh coriander
1 chicken stock cube
425ml/¾ pint boiling water
4 skinless boneless chicken fillets (about 500g/1lb 2oz total weight), cubed
410g can chickpea , drained and rinsed
natural low-fat yogurt , basmati rice, naan bread or grilled poppadums, to serve

Steps:

  • Tip the onions, garlic, ginger, ground spices, chilli and half the coriander into a food processor. Add 1 teaspoon salt and blend to a purée. Tip the mixture into a medium saucepan and cook over a low heat for 10 minutes, stirring frequently.
  • Crumble in the stock cube, add the boiling water and return to the boil. Add the chicken, stir, then lower the heat and simmer for 20 minutes until the chicken is tender.
  • Chop the remaining coriander, reserve 2 tablespoons, then stir the remainder into the curry with the chickpeas. Heat through and divide between four bowls. Sprinkle with the reserved coriander and spoon over the yogurt, then serve with basmati rice, naan bread or poppadums.

1 small onion, coarsely chopped
2 jalapeno peppers, seeded and coarsely chopped
6 garlic cloves, minced

1/2 teaspoon cinnamon

1/2 teaspoon coriander
1/2 teaspoon pepper
1/4 teaspoon salt
3 tablespoons oil
1 medium onion, sliced and separated into rings
2 lbs chicken thighs, cut into 1-inch chunks
1 (14 ounce) can diced tomatoes, undrained
1 (10 ounce) package frozen peas, partially thawed
1/4 cup raisins, soaked in warm water and drained (regular or golden)
3 -4 cups warm cooked jasmine rice
1 cup Greek yogurt

Steps:

  • Coarsely process the 1st nine ingredients (onion through salt) with 2 Tbsp water in a blender or food processor.
  • In a 12-inch skillet or sauté pan, saute sliced onion in oil over medium high heat until onion turns golden.
  • Reduce heat to medium-low, add processed onion-seasonings mixture to pan and saute about 4 minutes, stirring constantly, scraping pan often to prevent from sticking and burning.
  • Add chicken to pan, tossing to coat thoroughly, then add tomatoes, peas and 1/3 cup water.
  • Increase heat to medium, cover pan, and let simmer 25 min; uncover and continue to cook until sauce is thickened and chicken is very tender.
  • Fold in raisins and continue to cook just long enough to heat through.
  • Spread a bed of rice on each of 4 plates or shallow bowls, pile chicken and sauce over rice, then spoon yogurt over the top.

1 teaspoon dark soy sauce

1 lb boneless skinless chicken breast, cut into 1-inch cubes

2 tablespoons chinese rice wine or 2 tablespoons dry sherry
1 tablespoon oyster sauce
1/2 teaspoon black bean garlic sauce
1 cup vegetable oil
6 garlic cloves, peeled
3 small shallots, peeled
1 teaspoon cornstarch, dissolved in
2 teaspoons water

Steps:

  • Make the marinade-combine all marinade ingredients in a bowl; mix well.
  • Add in the chicken; stir to coat; let stand 10 minutes.
  • Make the sauce-combine all the sauce ingredients in a small bowl; mix well; set aside.
  • Add oil to a small saucepan and place over high heat.
  • When the surface of the oil begins to shimmer, add the garlic and shallots; cook/stir until golden brown, about 1 minute.
  • Remove with a slotted spoon and drain on paper towels; remove oil from heat.
  • Place a stir-fry pan over high heat until hot; add 1 tablespoon garlic-shallot oil, swirling to coat the sides.
  • Add in the chicken; stir-fry until no longer pink, 3-4 minutes; add the browned shallots and garlic and the sauce; bring to a boil.
  • Add in the cornstarch solution and cook/stir, until the sauce boils and thickens, about 45 seconds.
  • Transfer to a serving plate.

2 tablespoons olive oil
1 Spanish onion, chopped
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
3/4 teaspoon ground turmeric
1/2 teaspoon sweet paprika
1/2 teaspoon ground ginger

1 pinch cayenne
2 tablespoons tomato paste
2 celery ribs, diced
1 turnip, peeled and diced
1 sweet potato, peeled and diced
1 quart chicken broth
1 3/4 lbs boneless skinless chicken thighs, cut into bite-size pieces
1 (15 ounce) can chickpeas, drained
1/2 cup cilantro, chopped
1 tablespoon fresh lemon juice
lemon wedge, for serving

Steps:

  • Heat oil in a large soup pot over high heat. Add onion and salt and sautéuntil limp, about 3 minutes. Add all spices and sauté until they release their fragrance, about 2 minutes. Add tomato paste and sauté for another minute, until darkened but not burned. (If tomato paste looks too dark too quickly, lower heat.).
  • Add celery, turnip and sweet potato and continue to sauté until celery starts to soften, about 10 minutes.
  • Return heat to high (if you lowered it), and add broth to pot. Bring to a simmer, then add chicken. Partially cover pot, lower heat to medium low and simmer for 15 minutes.
  • Add chickpeas and cilantro to pot and continue simmering until chicken is cooked through and vegetables are tender, about 10 minutes longer. Stir in the lemon juice and more salt if desired.
  • Garnish with chopped cilantro and lemon wedge and serve.

1 (1 5/8 kg) whole chickens
2 white onions, finely sliced
5 cm knob fresh ginger, peeled and sliced
2 cinnamon sticks
6 cardamom pods, crushed
3 star anise
1 tablespoon brown sugar
1 teaspoon salt
2 tablespoons fish sauce
4 tablespoons crisp-fried shallots
300 g fresh rice noodles
3 spring onions, finely sliced
200 g bean sprouts, rinsed
1 red chili pepper, finely chopped
1 bunch vietnamese mint
1 bunch fresh Asian basil
1 bunch coriander
1 lime, cut into wedges

Steps:

  • Rinse the chicken, place in a large pot with enough cold water to cover and bring to the boil, skimming.
  • Add the onions, ginger, cinnamon, cardamom, star anise, sugar and salt. Simmer for 30 minutes, remove chicken, carve off breasts, and set aside. Return the chicken to the broth and simmer for a further 30 minutes.
  • Strain the broth and finely slice the chicken breast and leg meat. Gently reheat the broth with the fish sauce, and 2 tbsp fried shallots.
  • Cover the noodles with hot water, gently separate using chopsticks, and drain.
  • Divide the noodles between four deep, warmed soup bowls.
  • Arrange the chicken meat on top; ladle the hot broth into each bowl, and scatter with remaining fried shallots, spring onions, bean shoots, chilli, mint, basil and coriander. Guests squeeze lime wedges into broth to taste.

I have no idea how authentic this is, but it tastes good! I served with naan and steamed basmati rice. Next time, I will do some of the accompaniments. Make sure you have all of your ingredients ready to go before you start, this goes together quickly.

2 tablespoons curry powder
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon cayenne pepper
2 tablespoons vegetable oil
1 large onion, halved and thinly sliced
3 garlic cloves, minced
2 large boneless skinless chicken breasts, cooked, meat pulled into large chunks
1 (13 1/2 ounce) can light coconut milk
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can chicken broth

Steps:

  • Mix spices in small bowl.
  • Heat oil in Dutch oven over medium-high heat.
  • Add onion and saute until golden.
  • Add garlic, saute about 30 seconds.
  • Add spices, toast until fragrant, about 1 minute.
  • Add chicken, stir until completely coated with spices.
  • Add coconut milk, tomatoes and broth. Bring to a simmer and cook uncovered until flavors blend and stew is thickened, about 20 minutes or so.
  • Remove from heat.
  • Serve with basmati rice. I added a chopped apple.

1 large chicken , about 1.8kg/4lb
2 lemons , halved
2 heads of garlic , halved across the middle, plus 2 garlic cloves, crushed
50g butter , softened
2 tsp Ras-el-hanout spice mix
1 tsp smoked paprika , optional
200g pot Greek yogurt

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Put ½ a lemon and ½ a garlic head into the chicken's cavity, then put into a roasting tray. Mix butter, garlic and half the spices and spread over chicken breast and legs. Season well. Can be prepared up to a day ahead and kept covered in the fridge. Put the remaining garlic into the tray and roast chicken for 1 hr. Mix remaining spices into yogurt and season.
  • Remove chicken from oven and smother with yogurt. Spoon some of the juices over, add the remaining lemon to the tray, then roast for 15 mins or until the yogurt is golden and set and the juices run clear. Lift chicken onto a board, cover and rest for 10 mins before carving. Serve hot or cold.

400ml can coconut milk
small bunch coriander
6 large garlic cloves
small piece fresh root ginger , quartered
1-2 thin green chillies
2 tbsp vegetable oil
8 skinless chicken thighs or drumsticks
1 medium onion , finely chopped
3 cloves
thumb-size piece cinnamon stick
1½ tsp cumin powder
1½ tsp coriander powder
1 tsp garam masala
1 tsp tamarind paste
400ml can coconut milk
small bunch coriander
6 large garlic cloves
small piece fresh root ginger , quartered

2 tbsp vegetable oil

Bring to a boil, cover the pan, then cook for 40-50 mins, removing the lid halfway through cooking so the sauce can thicken.   • 1. Season the chicken all over with salt, pepper and cumin. Heat 2 tablespoons of the oil in a large frying pan (skillet) with a tightfitting lid over a medium-high heat until very hot – less of a gentle, wavy shimmer and more like aggressive lava when you move the pan. Add the chicken, skin-side down, and cook without moving until it easily releases from the pan, and skin is crispy and well browned, about 4–7 minutes. (Test the chicken at 4 minutes to check its resistance.) Use tongs to flip and brown the other side, about 3–6 minutes longer. Transfer chicken to a plate and set aside.
  • 2. Meanwhile, in the bottom of a small metal or sturdy bowl, grind the saffron and mix with hot water until dissolved.
  • 3. Reduce the heat to medium and add the chicken stock to the same pan, scraping up anything stuck to the bottom with a wooden spoon. Add the rice, juice of 1 lemon and saffron water then season with salt and stir to combine. There will probably be a little fat in the pan, which is great. If it’s charred or black though, rinse it out quickly and add 1 tablespoon of the oil to the rice/stock mixture.
  • 4. Cover with the lid, bring the liquid to an active boil and then lower the heat to maintain an active simmer. Remove the lid and lay the chicken, skin-side up, carefully on top. Cover and cook until the rice is tender, most of the liquid is absorbed and the chicken has finished cooking, about 15–20 minutes. Use this time to clean up, set the table and make sure your pepper mill is stocked.
